OVERNIGHT SALAD (SEVEN LAYER SALAD)

A perfect combination of layers dressed with a delicious homemade dressing makes for a gorgeous salad!

Ingredients

1 head iceberg lettuce (chopped)
2 cups tomatoes (diced, or sliced cherry tomatoes)
2 cups frozen peas (defrosted (uncooked))
½ cup green onions (or red onions, sliced)
8 hard boiled eggs (cooled, peeled and chopped)
2 cups cheddar cheese (shredded)
8 slices bacon (cooked crisp and crumbled)
¾ cup sour cream
1 cup mayonnaise
2 tablespoons sugar
1 teaspoon seasoned salt

Steps:

Combine all dressing ingredients in a small bowl and mix well.
Place lettuce in the bottom of a large bowl (or 9x13 pan).
Top with tomatoes, peas, onions and boiled eggs. Spread dressing overtop to seal the edges. Top with cheese.
Cover salad and refrigerate at least 4 hours or overnight.
Top with bacon before serving.

Ingredients

1 head iceberg lettuce, torn up
6 eggs, boiled, peeled and chunky diced
1 cup celery, diced
1 cup onion, diced
1 lb bacon, crumbled
1 (16 ounce) can peas, Leisure brand works best
1 1/2 cups Miracle Whip
cheese, shredded

Steps:

In a 9x13-inch pan, start with a layer of lettuce, then hard boiled egg, celery, onion and bacon. Note: We buy the bacon already crumbled and use about 1 lb of that.
Drain peas and layer on top of bacon.
Spread Miracle Whip salad dressing over peas.
Top with shredded cheese.
Refrigerate at least 2 hours before serving.
Note: Very forgiving recipe. We always add more bacon and sometimes substitute Ranch dressing for the Miracle Whip.

Wash the chopped lettuce and thoroughly dry. Running through a salad spinner and then laying on a dish towel to soak up excess water is recommended. Meanwhile, soak red onion in a small bowl of cold water for 5 minutes to mellow flavor. Drain and pat dry.
Layer half the lettuce on the bottom of a trifle bowl or glass bowl. Sprinkle with 1/2 teaspoon of salt. Layer red onion on top.
Slice 3 eggs and place, standing up, around the edge of the bowl, sitting on top of the onion. Chop the remaining eggs and sprinkle on top of onion. Alternatively, chop all the eggs and layer on top.
Layer frozen peas, bell pepper, and cucumber on top. Add remaining lettuce to bowl and sprinkle with remaining 1/2 teaspoon of salt.
