BEEF AND MACARONI SOUP

Steps:
- In a large soup pot brown beef and onion until no pink remains. Drain any fat.
- Add broth, tomatoes, tomato paste, Worcestershire sauce, and seasonings. Bring to a boil. Simmer 5 minutes.
- Stir in macaroni noodles and vegetables, simmer an additional 8 minutes or until macaroni is tender. Season with salt & pepper to taste.
- Serve with shredded cheese if desired.

- Cook macaroni according to package directions. Meanwhile, in a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. , Stir in the tomatoes, soup, tomato sauce and taco seasoning. Bring to a boil. This Taco Mac is an easy one pot meal made in 30 minutes! With ground beef, macaroni, taco seasoning, and loads of cheddar cheese, it's an instant favorite!

- Heat a large skillet over medium heat. Add oil, peppers and onions and cook, stirring often, until softened.
- Stir in ground beef (cooked or raw), taco seasoning and salt. If you have some Big Batch Beef prepped, you can just cook and stir 1 minute. If you are starting with raw ground beef, cook and stir until browned.
- Add milk, tomatoes and beef broth and bring to a simmer over medium-high heat. Stir in dry macaroni.
- Cover and cook, stirring often, until pasta is cooked through -- about 10 minutes.
- Stir in cheese (you can add a splash of broth or milk if you need to make the sauce come together) and let melt, reserving 1 cup to sprinkle over top if desired. Serve.

TACO SOUP

- Heat the olive oil in a large Dutch oven over medium heat. When the oil is hot, add the onion and garlic and cook until they have started to soften, about 1 minute. Add the beef and sprinkle with a pinch of salt and pepper. Cook the beef, breaking it up with a spatula, until it is cooked through and browned, about 8 minutes. Add the tomato paste and taco seasoning, then stir to combine.
- Stir in the black beans, corn, tomatoes with green chiles and vegetable stock. Add a few dashes of hot sauce, then stir well and bring to a simmer. Simmer to allow the flavors to come together and the liquid to slightly thicken, 10 to 15 minutes. Taste and adjust the seasoning as needed.
- Serve in bowls, garnished with the Cheddar, sour cream, cilantro and more hot sauce to taste. Crumble over the corn chips.

TACO MACARONI SOUP
My husband and I just through this soup together with ingredients we had in our refrigerator and pantry. It ended up being a delicious soup. Note: The next time I make this soup, I'm going to add some diced green bell peppers.

- 1. In a large stockpot over medium to medium-high heat, add the canola oil and diced onion. Sauté for about 10 minutes, or until the onion is cooked through.
- 2. Add the jarred minced garlic, stir and cook for about 30 seconds more. Then add the ground venison or lean ground beef. Use a fork to break up the meat as it's being cooked.
- 3. Once the meat and onion mixture looks thoroughly cooked; drain off the excess grease.
- 4. Place the meat mixture back into the pot, then sprinkle the packet of taco seasoning mix over the cooked meat; stir thoroughly.
- 5. Turn off stove and set the pot aside till the macaroni has been cooked. (I do add a bit of canola oil or vegetable oil to the water which I cook the macaroni. This helps to prevent the macaroni from sticking together.)
- 6. When the macaroni is done cooking, drain the macaroni in a colander and rinse with cold water. Set aside to finish draining off the water.
- 7. Now add the macaroni to the pot, along with the tomato juice, the stewed tomatoes, cream style sweet corn, and the drained black beans.
- 8. Heat the soup through then pour into bowls and serve.
- 9. Enjoy soup with saltine crackers. I enjoy mine with already buttered saltine crackers.
