HIDDEN SECRET BROWNIES

Nonstick baking spray
4 ounces unsweetened chocolate, broken into pieces
2 sticks (16 tablespoons) salted butter, softened
1 1/2 cups sugar
3 large eggs
1 tablespoon vanilla extract
1 cup finely chopped beets, from 8 ounces of cooked beets (see Cook's Note)
1/2 cup toasted walnuts, chopped
1 1/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder
Confectioners' sugar, to serve

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8-inch square baking pan with nonstick baking spray. Line it with a piece of parchment overhanging the edges (this will help in removing the brownies from the pan) and spray again.
  • Melt the chocolate in a bowl in the microwave or over a double boiler. Set aside to cool slightly.
  • In the bowl of a stand mixer using the paddle attachment, cream the butter and sugar. Beat in the eggs. With the mixer on low speed, drizzle in the melted chocolate. Add the vanilla extract, beets and walnuts and mix. Whisk together the flour and cocoa powder in a small bowl. Add half of the flour to the batter and mix just until combined. Mix in the remaining flour; do not over mix.
  • Pour the batter into the prepared baking pan. Spread it to even out the surface. Bake until a toothpick inserted in the center comes out clean, 50 to 55 minutes. Let the brownies cool completely.
  • Using the paper, lift the brownies from the pan. Remove the paper, and then cut the brownies into 9 squares. Dust with confectioners' sugar before serving.

CRAZY BROWNIES

1 stick (8 tablespoons) butter, melted, plus more for greasing pan
1 box chocolate cake mix (18 ounces)
1/3 cup evaporated milk
9 peanut butter cups
12 chocolate-covered caramels, such as Rolos
1/2 cup finely chopped pecans
1/3 cup candy-coated chocolates, such as M and Ms
1/4 teaspoon salt
Powdered sugar, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8-by-8-inch baking pan.
  • Put the dry cake mix in a large bowl and stir in the evaporated milk. (The mixture will still be dry.) Next, pour in the melted butter, stirring gently until the mix just comes together (don't over-mix).
  • Divide the mixture in half and press half of it in the bottom of the prepared pan. Lay the peanut butter cups over the top. Peel the caramels and place them in the spaces between. Sprinkle the nuts into the cracks, followed by the chocolate candies. Finally, sprinkle the salt all over. Put the other half of the batter on a cutting board and press it into a square a little smaller than the pan (it will be very sticky). Transfer it to the pan and lightly press it to cover all the ingredients.
  • Bake until the batter is fully baked, 22 to 25 minutes. Allow to cool completely, then place the pan in the fridge, covered in foil, for a couple of hours.
  • Remove the brownies from the pan in one piece, then sprinkle on plenty of powdered sugar. With a sharp serrated knife, cut into small squares.
  • Gobble 'em up!

1 pound unsalted butter
1 pound plus 12 ounces semisweet chocolate chips
6 ounces unsweetened chocolate
6 extra-large eggs
3 tablespoons instant coffee granules
2 tablespoons pure vanilla extract
2 1/4 cups sugar
1 1/4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
3 cups chopped walnuts

Steps:

  • Preheat oven to 350 degrees F.
  • Butter and flour a 12 x 18 x 1-inch baking sheet.
  • Melt together the butter, 1 pound of chocolate chips, and the unsweetened chocolate in a medium bowl over simmering water. Allow to cool slightly. In a large bowl, stir (do not beat) together the eggs, coffee granules, vanilla, and sugar. Stir the warm chocolate mixture into the egg mixture and allow to cool to room temperature.
  • In a medium bowl, sift together 1 cup of flour, the baking powder, and salt. Add to the cooled chocolate mixture. Toss the walnuts and 12 ounces of chocolate chips in a medium bowl with 1/4 cup of flour, then add them to the chocolate batter. Pour into the baking sheet.
  • Bake for 20 minutes, then rap the baking sheet against the oven shelf to force the air to escape from between the pan and the brownie dough. Bake for about 15 minutes, until a toothpick comes out clean. Do not overbake! Allow to cool thoroughly, refrigerate, and cut into 20 large squares.

SALTED PRETZEL BROWNIES

1 cup (2 sticks) salted butter, plus more for buttering the pan
5 ounces bittersweet chocolate, broken into pieces
1/4 cup unsweetened cocoa powder
2 cups sugar
1 tablespoon vanilla
3 large eggs
1 1/4 cups all-purpose flour
3/4 cup semisweet chocolate chips
2 cups thin salted pretzels, lightly crushed

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking pan.
  • In a medium-large saucepan, melt the butter with the bittersweet chocolate over low heat, whisking occasionally until smooth and melted. Sprinkle in the cocoa powder and whisk to combine. Remove the pan from the heat and allow to cool for about 5 minutes.
  • Stir the sugar and vanilla into the chocolate mixture until just combined. One at a time, stir in the eggs. Gently stir in the flour until halfway incorporated. Add the chocolate chips and stir just until combined.
  • Sprinkle half of the pretzels in the bottom of the prepared baking pan. Pour the batter (it will be very thick!) in the pan over the pretzels. Spread to even out the top and arrange the remaining pretzels all over the top.
  • Bake for 40 minutes, then check the brownies with a toothpick. If overly gooey/messy, return the pan to the oven for 5 to 10 more minutes, being careful not to burn the edges. Allow to cool completely (important!), then cut into small squares.

These are by far the best homemade brownies I have ever had. I combined a few recipes and recipe ideas to get IMHO the perfect brownie! The name comes from the fact that anyway you crave/want them they are good I posted them w/ the marshmallow filling and chocolate frosting as that is MY prerogative! 2 cups sugar
1 cup margarine
1 cup flour
4 eggs
3/4 cup cocoa
2 teaspoons vanilla
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2-1 cup nuts, chopped (optional)
2 -3 cups mini marshmallows or 1 (7 ounce) jar marshmallow cream
4 -12 cups powdered sugar
1/3 cup cocoa
1 cup margarine or 1 cup butter
1/2 cup evaporated milk
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F.
  • Mix together butter, sugar, and vanilla in a bowl.
  • Add eggs.
  • Stir in dry ingredients and add nuts in a bowl.
  • Pour into greased 9x13-inch pan.
  • Bake for 20-25 minutes. Just until set, do not over bake or they will be dry!
  • Allow to cool for 5 minutes and then cover evenly with mini marshmallows.
  • Return to oven and bake just until the marshmallows begin to melt (5 minutes or so).
  • Remove from oven and cool.
  • For frosting: to make it thick and creamy do not melt the butter; for a thin frosting, melt the butter, you can then pour the frosting instead of spreading it on top of the brownies and chill till the frosting sets up.
  • Combine powdered sugar and cocoa, add butter (whatever method you are using)and blend well.
  • Add milk and vanilla and beat till smooth.
  • Spread over brownies and cut into squares.
