BAKED WOLFFISH RECIPE



Baked Wolffish Recipe image

Tender, flaky, sweet wolffish gets baked in a white wine lemon butter sauce that is perfect for spooning over the fish fillets. Serve this with rice, quinoa, or potatoes to sop up the sauce.

3 to 4 Wolffish fillets, about 5 to 6 ounces each
salt and pepper
4 tablespoons butter
1 shallot, finely chopped
2 garlic cloves, minced
1/4 cup white wine
1/4 cup heavy cream
2 tablespoons lemon juice
1 tablespoon Dijon mustard or Worcester
1/4 teaspoon red pepper flakes
1 lemon, sliced
fresh dill for garnish

Steps:

  • Preheat the oven to 400°F.
  • Season both sides of the Wolffish with salt and pepper then place them in a baking dish.
  • Melt the butter in a saucepan over medium heat
  • Add the shallot and garlic and cook for 1 minute.
  • Add the wine and boil for 2 to 3 minutes to reduce the wine.
  • Remove from heat and stir in the cream, lemon juice, Dijon mustard, and red pepper flakes.
  • Pour the sauce over the fish, place lemon slices on top and bake for 10 to 12 minutes or until it flakes easily with a fork. (Thicker fillets will need to bake for 15 to 20 minutes, see notes)
  • Garnish with fresh dill.

1/4 cup olive oil, plus more for brushing the wolf fish
1 tablespoon chopped garlic
Pinch hot pepper flakes
1 cup sliced Spanish onion
12 canned whole, peeled tomatoes, seeded and roughly chopped
1/2 cup capers
1/2 cup skinned, whole almonds, roughly chopped
1/2 cup sliced basil
1 teaspoon chopped thyme
1 teaspoon sugar
Kosher salt and freshly ground black pepper
4 (6-ounce) center-cut wolf fish fillets
12 littleneck clams
Serving Suggestion: Smashed potatoes

Steps:

  • Heat the oil in a saucepan over medium heat. Add the garlic and pepper flakes and cook, stirring, until lightly browned. Add the onion and cook, stirring, until soft, about 10 minutes. Add the tomatoes, capers, almonds, basil, thyme, and sugar and season with salt and pepper. Simmer for 10 minutes. (The sauce can be prepared 1 day ahead.)
  • Preheat the oven to 375 degrees F.
  • Put the almond-tomato sauce in the bottom of an ovenproof casserole dish. Lightly brush wolf fish with oil and season with salt and pepper. Place the wolf fish on top of the sauce in the center of the casserole dish, and arrange the clams around the outer edge. Bake uncovered until the wolf fish is cooked through and the clams have opened, about 15 to 20 minutes. Serve with smashed potatoes.

  • Defrost fish fillets at room temperature or overnight in the fridge. When defrosted, squeeze out as much liquids as possible and pat dry. Don't worry, fish won't be dry due to marinade and high fat content in under skin layer.
  • Pour the marinade at the bottom of baking dish, place the fish in and rotate, to ensure it has a bit of marinade on all sides. Add bay leaves, chopped herbs and sprinkle with spice.
  • For fennel marinade, slice the bulb vertically in few slices and arrange between fillets. Chop the fronds and sprinkle around. They will become crispy when done.
