AMARETTO FRUIT PARFAITS
This adds a bit of a creamy cheesecake flavor to your favorite fresh fruit. Very easy yet elegant. Goes very well with any fruit; my favorite is strawberries. would also make a nice dip to dip fruit into as an appetizer.

Steps:
- Beat cream cheese and sour cream with mixer at medium speed.
- Blend in sugar, liqueur, and cream.
- Chill.
- Put fruit in serving dishes and spoon cream cheese mixture over fruit.
- Serve and enjoy.

AMARETTO BAKED CUSTARD
If you love Amaretto, you will love this baked custard!

Steps:
- 1. In a heavy nonreactive saucepan combine the egg yolks, sugar, flour, and salt.
- 2. Beat until the mixture is pale yellow. Place over low heat and slowly stir in the warm milk & warm cream.
- 3. Cook, stirring constantly, for 7 to 10 minutes.
- 4. Add in Amaretto.
- 5. Let sit while you butter your ramekins.
- 6. Pour even amount into buttered ramekins. Set Ramekins into a water bath. (Broiler pan filled with 1 inch hot water)
- 7. Bake at 325 for 35 minutes or until set. Custard is set when center barely moves after touching ramekin.
- 8. Cool on a wire rack and chill. You can leave custard in the ramekin and serve or you can turn them out to serve. Shake some nutmeg on top before serving. =)

Steps:
- In a small saucepan, combine the sugar, cornstarch and salt. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat.
- Stir a small amount of hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat.
- Gently stir in vanilla. Cool to room temperature without stirring. Transfer to a bowl; press plastic wrap onto surface of custard. Refrigerate for at least 1 hour.
- Just before serving, spoon 1/4 cup of berries into each parfait glass; top with 2 tablespoons of custard. Repeat layers.

- Whisk blackberry spread, 1 tablespoon amaretto and 1 teaspoon vanilla in small bowl until smooth.
- Whisk sugar, flour, cornstarch, and salt in heavy medium saucepan to blend. Gradually whisk in milk. Whisk in egg. Add butter. Whisk over medium heat until mixture comes to boil and thickens, about 6 minutes. Boil 1 minute longer, whisking constantly. Remove from heat. Whisk in almond extract, 1 tablespoon amaretto and 1/2 teaspoon vanilla.
- Spoon 1 teaspoon blackberry spread mixture into bottom of each four 1-cup stemmed glasses. Top each with 4 blackberries, then with about 3 tablespoons hot pudding. Repeat layering twice more. Divide any remaining blackberries among glasses. Refrigerate until cold, about 3 hours. (Blackberry parfaits can be prepared 1 day ahead. Keep refrigerated.)

- In a large bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating on high until stiff glossy peaks form and sugar is dissolved. , Drop by heaping tablespoonfuls 2 in. apart onto parchment-lined baking sheets. Bake at 250° for 32-38 minutes or until firm to the touch. Turn oven off; leave meringues in oven for 1 hour. Remove from the oven and cool on baking sheets., In a large bowl, combine the peaches, sugar and 1 tablespoon Amaretto. Cover and refrigerate for at least 30 minutes. In another bowl, beat cream cheese and confectioners' sugar until smooth. Beat in cream and remaining Amaretto until thickened., Crumble two-thirds of the cookies; place 2 tablespoons crushed cookies in each of 6 dessert dishes. Layer with half the peaches, Amaretto cream and remaining crushed cookies; repeat layers. Garnish with coconut and/or almonds if desired. Store leftover cookies in an airtight container.
