1/2 cup hoisin sauce*
1/4 cup rice vinegar
2 tablespoons oyster sauce*
2 tablespoons low-sodium soy sauce (or tamari)
1 teaspoon toasted sesame oil
1/2 teaspoon each: freshly-cracked black pepper, garlic powder
1 batch Homemade BBQ Sauce
2/3 cup pineapple juice
2 tablespoons olive oil
2 teaspoons ground ginger
2 teaspoons low-sodium soy sauce
1 teaspoon Chinese five-spice powder
1/2 teaspoon each: freshly-cracked black pepper, garlic powder
optional: pinch of crushed red pepper flakes
1/2 cup fresh orange juice
1/3 cup fresh lime juice
1/3 cup chopped fresh cilantro
2 tablespoons olive oil
2 teaspoons ground cumin
1 teaspoon each: chili powder, salt
1/2 teaspoon each: dried oregano, freshly-cracked black pepper, garlic powder
1/4 cup red wine vinegar
1/4 cup coarse-grain dijon mustard
1/4 cup maple syrup
1/4 cup olive oil
optional: 1-2 tablespoons finely-chopped fresh rosemary

Steps:

  • Whisk together the ingredients for (one) marinade in a small bowl until combined.
  • Combine marinade with pork in a ziplock freezer bag, and toss until the pork is evenly coated in the marinade. Carefully press out any extra air that might be in the bag, then seal. (You will need 1/2 cup marinade per 1 pound of pork.)
  • Refrigerate the pork pack(s) for anywhere from 30 minutes to up to 1 day.
  • Immediately transfer the pork pack(s) to the freezer, and freeze for up to 3 months. Then when you're ready to cook the pork, transfer the pork pack back to the refrigerator for 24 hours, or until it has thawed completely. Or to speed up the process, you can submerge the sealed pork pack in a bowl of cold water in the refrigerator until it has thawed completely.
  • When ready to cook, remove the pork from the marinade, discard the remaining marinade, and cook however you prefer. (See recommendations below.)

3 tablespoons olive oil
3 pounds boneless pork butt roast, cubed
¼ cup dry white wine
1 cup plain bread crumbs
2 yellow onions, chopped
2 shallots, minced
2 cloves garlic, minced
3 tablespoons dried parsley
1 cup beef stock
2 tablespoons red wine vinegar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat the oil in a Dutch oven over high heat, and quickly brown the pork on all sides. Pour in the wine, and mix in bread crumbs to coat pork. Mix the onions, shallots, garlic, and parsley in a bowl, and sprinkle over the meat.
  • Transfer Dutch oven to the preheated oven, and cook 10 minutes. Reduce heat to 350 degrees F (175 degrees C), and pour in the stock. Cover, and continue cooking 50 minutes. Remove cover, increase heat to 400 degrees F (200 degrees C), and cook 10 more minutes. Sprinkle with vinegar to serve.

1 tablespoon paprika
1 teaspoon coarse salt (to taste)
6 black peppercorns
1 tablespoon olive oil
1 cup red wine or 1 cup white wine

Steps:

  • Using a mortar and pestle, mash the garlic and add the dry ingredients one at a time, blending well.
  • Drizzle in 1 tbs. of olive oil.
  • Rub meat with spice mixture and place in glass dish.
  • Pour the wine over meat to partially or entirely cover it.
  • Marinate, turning occasionally, for a few hours or overnight in refrigerator.

Ahh, 'Vina Dosh,' a Portuguese dish and tradition of my family during Christmas. It started getting passed down more than 80 years ago when my grandparents came to America from the Azore Islands! Easy to make, but lots of patience to wait for the marinade to make its magic. But, oh so worth the wait! As it was passed down to me, I share it with you. Serve with Portuguese Linguica, a pot of semi-sweet, bacon-laced baked beans, and some Portuguese sweet bread. Hawaiian sweet bread works in a pinch. You can use white wine or red wine in the marinade.

1 ½ cups red wine vinegar
¾ cup red wine
7 cloves garlic, crushed
3 bay leaves
8 whole cloves, or to taste
2 tablespoons ground black pepper
2 teaspoons salt
½ teaspoon dried thyme
1 (3 pound) boneless pork shoulder, cut into 1-inch cubes
2 tablespoons vegetable oil

Steps:

  • Whisk red wine vinegar, red wine, garlic, bay leaves, cloves, black pepper, salt, and thyme together in a bowl; pour into a resealable plastic bag. Add the pork, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 2 to 4 days, turning occasionally.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Drain the pork, reserving 1/2 cup of marinade. Put pork and reserved marinade in a baking dish.
  • Bake in preheated oven until the pork is completely warmed, about 20 minutes. Drain as much liquid from the pork as possible.
  • Heat vegetable oil in a large skillet over medium-low heat. Add the pork to the skillet in batches to prevent crowding; cook and stir in hot oil until completely browned and no longer pink in the center, 10 to 15 minutes.

2 tablespoons fresh parsley, chopped
2 cloves garlic, minced
2 teaspoons sea salt
1/4 teaspoon fresh ground black pepper
1 cup dry white wine or 1 cup chicken broth
1 (4 lb) boneless center cut pork loin roast

Steps:

  • Combine the first five ingredients in a small bowl; mix well.
  • Place the roast in a large resealable bag.
  • Pour the wine marinade over the roast; seal bag.
  • Turn the bag to coat the roast.
  • Marinate in the refrigerator overnight or for at least 2 hours, turning the bag occasionally.
  • Preheat oven to 325 degrees F.
  • Remove the roast from the bag and discard the marinade.
  • Place the roast, fat side up, on a rack in a shallow roasting pan.
  • Insert a meat thermometer.
  • Bake 1-1/2 to 2 hours or until thermometer reads 155 degrees F.
  • For gravy: Strain the meat drippings.
  • Add white wine to the meat drippings to equal 1-1/4 cup.
  • In a small saucepan, combine 2 T water and 4 T cornstarch, blending until smooth.
  • Add the wine and drippings.
  • Bring to a boil, stirring constantly.
  • Boil and stir until it starts to thicken.
  • It will continue to thicken after you remove it from the heat, so don't keep it on the heat too long!

1 tsp lime juice
1 tsp packed light brown sugar or honey
1 tsp basil, dried
1 tsp marjoram, dried

1/4 tsp pepper
1/8 tsp cayenne pepper
MEAT
4 boneless pork chops (3/4 inch thick) or 4 boneless skinless chicken breast halves

Steps:

  • 1. Combine all marinade ingredients in a large resealable plastic bag; add meat. Refrigerate 2-4 hours.
  • 2. Heat grill. Grill, covered, over medium heat or coals 7 to 9 minutes or until pork is pale pink in center or chicken is no longer pink in center, turning once.
