These moist golden orange muffins pair equally well with jam at breakfast or with soups and savory main dishes.

1 cup all-purpose flour
¾ cup yellow cornmeal
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 eggs, well beaten
1 cup canned unsweetened pumpkin puree
½ cup packed dark brown sugar
¼ cup canola oil
1 cup coarsely chopped pecans

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease muffin cups or line with paper muffin liners.
  • In a large bowl, stir flour, cornmeal, baking powder, baking soda, and salt and make a well in the center. In a small bowl, stir together the eggs, pumpkin, sugar, and oil.
  • Make a well in the center of the dry ingredients and pour in the egg mixture. Stir just until blended; do not over mix. Fold in pecans. Divide the batter evenly among prepared muffin tin cups.
  • Bake in preheated oven for 15 to 18 minutes, until a toothpick inserted into center of a muffin comes out clean.

1 1/2 cups whole wheat flour
1 cup cornmeal
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
1/3 cup butter, softened
3/4 cup light brown sugar, packed
4 eggs
1 1/3 cups canned pumpkin puree
1 cup milk

Steps:

  • Preheat oven to 350°F.
  • Spray a 9 inch square baking pan with nonstick cooking spray and coat lightly with flour.
  • Combine the first 8 dry ingredients.
  • In another bowl, beat the butter and sugar together until fluffy.
  • Add eggs and pumpkin and combine thoroughly.
  • Add dry mixture and milk alternately until all are incorporated and the mixture is smooth.
  • Pour into pan.
  • Bake 60-70 minutes, until tester inserted in center comes out clean.

1/3 cup honey
2 eggs
1 cup whole wheat flour, plus
2 tablespoons whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup canned pumpkin
3/4 teaspoon cinnamon
1/3 cup nuts (optional)

Steps:

  • Combine all ingredients in bowl and mix well.
  • Bake in greased 9x13 baking pan for 25-30 minutes at 350 degrees; cool on wire rack.
