Whole Roasted Rabbit With Guanciale, Wilted Greens and Pan Drippings image

Rabbits are so lean on their own that they benefit from some added fat - in this case, a few strips of guanciale, the compellingly flavorful cured pork jowl from Italy. Once the pan juices from the roasted rabbit have commingled with the fat from the guanciale and the bitter water released from the Treviso, you have a perfect, craveable balance on the plate, in every forkful.

2 whole rabbits
Kosher salt
Freshly ground black pepper
2 bunches watercress
1 bunch dandelion greens
2 heads Treviso
1/2 pound guanciale, sliced thin
1/2 cup dry white wine
Extra-virgin olive oil

Steps:

  • Preheat oven to 500 degrees.
  • Season rabbits on all sides and inside the cavity with salt and freshly ground black pepper. Set aside.
  • Trim the watercress and dandelion greens, removing the woodiest stems. Cut the Treviso into halves the long way, then cut each half into thirds, and trim away any especially tough white stalky interior core.
  • Lay sliced guanciale on a sheet pan large enough to hold the rabbits. (You can use 2 separate pans if necessary.) Scatter the dandelion greens, watercress and Treviso on top of the guanciale, and then place the rabbit on top, back side facing up. Drizzle the rabbit and greens with the wine and extra-virgin olive oil.
  • Roast rabbits for 20 minutes. After 20 minutes, check rabbits, and rotate the pans to ensure that they are cooking and browning evenly. Return to the oven to continue roasting until rabbit legs are just cooked through, about 15 more minutes.
  • Let rabbit rest for 10 minutes, then cut into 8 pieces each; two hindquarters, two forequarters and four loin pieces. Transfer the guanciale and greens to a serving platter. Place the rabbit pieces on top and drizzle with the pan-drippings left on the sheet tray and a healthy drizzle of olive oil.

  • 1. IN A SKILLET COOK BACON UNTIL CRISP,DRAIN ON A PAPER TOWEL,RESERVING THE DRIPPINGS IN THE THE SKILLET.CRUMBLE THE COOKED BACON AND SET ASIDE.
  • 2. SEASON RABBIT WITH RED AND BLACK PEPPER.COAT WITH FLOUR.NOW BROWN RABBIT IN BACON DRIPPINGS IN SKILLET OVER MED. HEAT, REMOVE RABBIT FROM SKILLET.
  • 3. RESERVE 4 TABLESPOONS DRIPPINGS IN SKILLET,ADD MUSHROOMS,ONIONS,GREEN PEPPER,AND GARLIC TO RESERVED DRIPPINGS.COOK ABOUT 5 MIN OR UNTIL TENDER,STIRRING OCCASIONALLY.
  • 4. STIR CHICKEN BROTH,WORCESTERSHIRE SAUCE,AND DRY MUSTARD INTO VEGETABLES IN SKILLET. NOW ADD RABBIT TO THE SKILLET.BRING MIXTURE TO A BOIL. COVER AND SIMMER ABOUT 55 MIN OR UNTIL RABIT IS TENDER.
  • 5. PUT RABBIT IN A SERVING PLATTER.SPOON FAT OFF MIXTURE IN SKILLET.SPOON MIXTURE OVER RABBIT.SPRINKLE WITH CRUMBLED BACON.

Grilled Swiss-Chard Stems With Roasted Garlic Oil image

Don't throw all those Swiss-chard stems away. Not everyone is a fan of including them with sautéed greens, but here's a plan for the rest of us who love their texture and flavor. Prepare to blanch, blister and then dress these stems in an intense garlic oil. With a little lemon and salt to perk the taste buds, you've got a new favorite side dish.

3 bunches of Swiss chard, any variety
Kosher salt
Roasted garlic oil (see recipe)
Lemon
Maldon salt

Steps:

  • Bring a large pot of water to a boil.
  • Strip the chard leaves from the stems using a knife, scissors or simply your hands. Reserve the leaves for another use.
  • Trim the bottom 1/8 inch of the chard stem, to remove the dry, discolored bit. Clean the stems by submerging in cold water and rinsing thoroughly.
  • Aggressively season your boiling water with kosher salt.
  • Working in batches, blanch the chard stems until tender, about 5 minutes. Drain well, and let cool on a baker's rack or in a colander to continue draining.
  • Grill blanched, dry chard stems evenly on both sides until charred and blistered here and there, like perfect pizza crust looks from a wood oven.
  • Cut the stems into batons, and thoroughly dress the stems with roasted garlic oil (see recipe), a few drops of lemon juice and a few flakes of Maldon salt.

1 whole farmed rabbit (about 1.2kg)
2 tbsp thyme leaves
4-6 tbsp olive oil
12 small onions or shallots, peeled
16 garlic cloves , peeled

Steps:

  • Ask your butcher to joint the rabbit, cutting the legs into two pieces, the saddle into three and the shoulders and front into two. Heat oven to 220C/200C fan/gas 7.
  • Put the rabbit in a large roasting tin, season and add 1 tbsp of the thyme leaves. Add the oil and toss until the rabbit is well coated. Roast for 20 mins.
  • Add the onions or shallots and the garlic, then stir well and roast for another 15 mins, stirring again halfway through. Sprinkle over the remaining thyme before serving.

Tasting this bold dressing on its own, straight out of the jar, might make your eyes widen. It is very assertive. But don't tone it down thinking there must be an error. The high ratio of potent raw garlic to bright lemon juice to salty anchovy is very much on purpose - once you spoon the dressing over cold braised celery hearts or fennel heads or steamed cauliflower or leafy mustard greens, the ferocity is tamed. If it didn't start so high and assertive, it would become docile rather than perfectly obedient.

4 lemons, juiced and strained (about 3/4 cup)
20 oil-packed anchovy fillets (from one 3.5-ounce jar), drained and minced
9 fresh, sticky, assertive garlic cloves, finely grated using a Microplane
2 teaspoons kosher salt, plus more if desired
1 teaspoon red-pepper flakes
2 cups extra-virgin olive oil
Freshly ground black pepper

Steps:

  • Place lemon juice, anchovies, garlic, kosher salt and red-pepper flakes in a medium bowl.
  • Stir (don't whisk) in the olive oil.
  • Season to taste with salt and several good grinds on the pepper mill for a bright, bracing dressing. Cover, and refrigerate for up to 2 weeks.

1 (2 1/4 lb) rabbit
kosher salt
white pepper
4 tablespoons olive oil
2 garlic cloves, finely diced
2 teaspoons finely diced fresh rosemary
1 teaspoon coriander seed, crushed
1 teaspoon black peppercorns, crushed
1/4 teaspoon red new mexico chile powder

Steps:

  • Line a sheet pan with parchment paper.
  • Spread rabbit out as flat as possible and place it on prepared pan.
  • Season both sides with salt and pepper.
  • Combine oil, garlic, rosemary, coriander, peppercorns and chili powder in a small bowl.
  • Rub mixture over both sides of rabbit.
  • Cover and refrigerate 2-3 hours.
  • Preheat oven to 475°F.
  • Uncover rabbit.
  • Roast until tender and cooked through, 30-35 minutes.
