SUGAR COOKIES (1964)
Steps:
- Sift flour, baking powder and salt into bowl.
- Add Mazola; blend well with fork or pastry blender. (Mixture will appear dry.)
- Beat sugar, vanilla and egg-milk mixture together until very light and fluffy.
- Stir into flour mixture.
- Chill about 1 hour.
- Roll out on a floured board or cloth.
- Cut as desired.
- Before baking, place nuts on cookies or sprinkle with colored sugar.
- For other cookies, arrange candied cherries on a circle of dough; fold over dough to meet center and press to seal.
- Bake in a 400 (F) oven about 9 minutes.

OIL SUGAR COOKIES
Yes, these could have a better name. The point seems to be that No Butter Was Harmed (or used) in the Making of These Cookies! ;-) If you divide the 3/4 cup of canola oil recommended by the two dozen or so cookies the recipe makes (which I cannot do), it's practically nothing, right?! And the are cookies, after all. Cardiologist approved too, I swear.

- Stir dry ingredients until mixed. Stir sugar into oil; beat in egg substitute slowly. Blend until smooth. Stir in dry ingredients all at once. Blend until dough is smooth. Chill ½ hour. Shape into ½ inch balls. Dip tops of balls into granulated sugar. Top with cherry or pecan if desired. Place on ungreased cookie sheet and flatten slightly with bottom of a drinking glass. Bake at 375 for 10 minutes or until lightly golden on the edges.

EASY OIL SUGAR COOKIES
This recipe came out of a old cookbook.My daughter wanted to bake some cookies so she started looking in my cookbooks and found this one. The whole family loved them.

- 1. Beat eggs with fork and mix in remaining ingredients.
- 2. Drop by spoon on ungreased cookie sheet.Stamp each cookie with a glass that has oil on bottom of it and dipped in sugar each time. Bake at 400 until slightly golden around the edages.(about 8 minutes)

Steps:
- Sift together flour, salt, cream of tartar, and baking soda; set aside. Place butter, olive oil, 1 cup confectioners' sugar, and 1 cup granulated sugar in the bowl of an electric mixer fitted with the paddle attachment; beat on medium until fluffy.
- Beat in eggs, vanilla extract, and orange zest until well combined. Reduce speed to low; add flour mixture slowly, until fully incorporated. Cover with plastic wrap, and chill for at least 1 hour or overnight.
- Heat oven to 375 degrees. Form dough into balls measuring about 1 inch in diameter, and place on a cookie sheet about 2 inches part. Press flat with a glass dipped in sugar. Place cookies in oven, and bake until very lightly golden, 7 to 10 minutes. Transfer to a wire rack to cool. Dust with confectioners' sugar before serving.

Oh my; I love these! So light and crispy! I don't like making these because I can't stop munching on them! :-)

- Then roll into balls and place on greased cookie sheet. Press with glass dipped in sugar.
- Bake in 350 degree oven about 8 to 10 minutes.
