Cheesy and delicious - without all the fat and calories. If you'd like, add extra jalapenos, chopped cilantro or a drizzle of fresh lime juice.

0.5 tsp(s) Dried oregano

0.75 cup(s) Canned diced tomatoes with adobe (smoky/spicy) or chipolte (hot)
0.667 cup(s) Canned refried black beans
0.5 cup(s) Low-fat shredded cheddar cheese or crumbled queso blanco
0.5 cup(s) Uncooked scallion(s) finely sliced
2 medium Jalapeño pepper(s) finely minced (or to taste; do not touch seeds w

Steps:

  • Preheat broiler to high. Arrange tortilla chips on a nonstick baking sheet in a single layer but close together; set aside.
  • Coat a large nonstick skillet with cooking spray; heat over a medium heat. Add beef and cook until browned, breaking up meat as it cooks, about 3 to 4 minutes. Season with oregano and salt; stir in tomatoes and beans. Cook until heated through, stirring occasionally, about 3 to 5 minutes.
  • Spoon beef mixture over chips; sprinkle with cheese. Broil until cheese melts, about 30 seconds to 1 minute. Remove from broiler; sprinkle with scallions and jalapenos. Yields 4 nachos per serving.

You need to make this epic beef nachos supreme at your next game day. Seasoned ground beef, refried beans, cheese, tomatoes and green onions make such a great flavor combination.

Taco Seasoning ((or you can use one packet/ serving of store-bought taco seasoning))
1 pound ground beef
1/2 yellow onion (diced)
2 bags tortilla chips ((16 ounces each))
1 can refried beans
16 ounces shredded cheese of choice ((I used cheddar and Monterey jack))
3 roma tomatoes (diced)
2 to 3 green onions (sliced)

Steps:

  • Preheat the oven at 400 degrees.
  • Meanwhile on the stovetop, brown the ground beef and diced onions over medium-high heat until fully cooked (about 8 minutes) and drain.
  • Return the beef to the pan, and sprinkle on the taco seasoning.
  • Stir in 3/4 cup water, bring it to a simmer, reduce heat and simmer until the liquid mostly evaporates, about 5 minutes.
  • While the beef is cooking, add a generous layer of chips to two baking sheets lined with parchment paper.
  • Spoon on refried beans, half on each pan. These are thick, but I just add spoon fulls all over the chips. (The spoon fulls will spread with the heat of the oven.)
  • Spoon on half the ground beef to each pan of chips.
  • Sprinkle shredded cheese on top.
  • Bake at 400 degrees for 15 minutes.
  • Remove from the oven, and sprinkle on diced tomatoes and green onions.
  • Serve immediately.

1 tsp(s) Cumin seeds
0.5 tsp(s) Table salt
0.25 pinch Black pepper
0.333 cup(s) Fat free salsa
0.5 cup(s) Shredded reduced-fat Mexican-style cheese
8 oz Baked low fat tortilla chips about 72 chips
2 tbsp(s) Pickled jalapeno peppers sliced

Steps:

  • Preheat oven to 400ºF.
  • Set a large nonstick skillet over medium-high heat. When pan is hot, add beef and cook until completely browned, breaking up the meat as it cooks, about 3 to 5 minutes; drain off any fat and return pan to heat. Add chili powder, cumin, salt and pepper; stir to coat beef. Stir in salsa and heat through; remove from heat.
  • Arrange chips in a shallow ovenproof dish; spoon beef mixture over chips and sprinkle with cheese and jalapeño peppers. Bake until cheese melts, about 5 minutes. Yields about 12 topped chips per serving.
