LOW CARB MEXICAN PEAS



Low Carb Mexican Peas image

Mexican Street Foods are for the most part, quick and easy to prepare using simple ingredients with big flavors. This recipe for Low Carb Mexican Peas is our Keto version of the popular Mexican Street Food Esquites. The hot peas melt the butter and sour cream into a delicious sauce, it's so good that you'll be licking the bowl!

Number Of Ingredients 8

2 cups water
1 tsp Salt
1 cup Frozen Peas
2 ounces Butter
3 tbsp Sour Cream
2 tsp Lime Juice
1 tsp Chilli Powder
1 ounce Feta Cheese (crumbled)

Steps:

  • Melt the butter in a heat proof bowl, add the sour cream. lime juice, chilli powder and half the feta cheese. Mix well and set aside.
  • Put the water and salt into a pot and bring to the boil. Add the peas and boil for 3 minutes, until cooked through.
  • Drain the peas well and add to the sour cream mix. Stir until the mixture has melted and the peas are coated.
  • Serve the peas sprinkled with the remaining feta. Enjoy!

In my search for a good cream pea recipe, I found many, but none that quite matched what I wanted. So I took to my own creativity and came up with this absolutely fabulous recipe. We love it so much we have this on the side quite often.

2 cups frozen green peas, thawed
⅔ cup water
⅛ teaspoon salt
3 tablespoons butter
⅓ cup heavy cream
2 tablespoons all-purpose flour
1 tablespoon white sugar

Steps:

  • In a medium saucepan, combine peas, water, and salt. Bring to a boil, then stir in butter.
  • In a small bowl, whisk together cream, flour, and sugar. Stir mixture into peas. Cook over medium-high heat until thick and bubbly, about 5 minutes.

"I can still taste these wonderful peas in Mama's delicious white sauce. Our food was pretty plain during the week, so I thought this white sauce made the peas 'extra fancy' and fitting for a Sunday meal."

1 package (10 ounces) frozen peas
1 tablespoon butter
1 tablespoon all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup whole milk
1 teaspoon sugar

Steps:

  • Cook peas according to package directions. Meanwhile, in a small saucepan, melt the butter. Stir in the flour, salt and pepper until blended; gradually add milk and sugar. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Drain peas; stir into the sauce and heat through.

2 tablespoons butter
2 tablespoons all-purpose flour
1 1/4 cups milk
salt and pepper
14 3/4 ounces salmon, drained and picked free of bones and skin
1 cup canned peas
1 teaspoon lemon juice
1/4 teaspoon dried dill

Steps:

  • Melt butter in a large pan, add flour and cook over medium heat until light brown and pasty (1-2 minutes).
  • Slowly add milk and whisk until all flour bits are broken up. Continue to whisk while milk comes to a boil and thickens, and add salt and pepper to taste.
  • When cream sauce is slightly thickened, add salmon and peas and continue to cook until sauce is thickened up and the salmon and peas are heated through. Stir in lemon juice and dill.
  • Serve over hot white rice, toasted bread, a hot biscuit or puff pastry.
