4 cups cold fat-free milk, divided
1 package (1 ounces) sugar-free instant vanilla pudding mix
1 reduced-fat graham cracker crust (9 inches)
1 package (1 ounces) sugar-free instant butterscotch pudding mix
1 package (1.4 ounces) sugar-free instant chocolate pudding mix
Optional: Whipped topping and finely chopped pecans

Steps:

  • Whisk 1-1/3 cups milk and vanilla pudding mix 2 minutes. Spread into crust. , In another bowl, whisk 1-1/3 cups milk and butterscotch pudding mix 2 minutes. Carefully spoon over vanilla layer, spreading evenly. , In a third bowl, whisk remaining 1-1/3 cups milk and chocolate pudding mix 2 minutes. Carefully spread over top. Refrigerate until set, at least 30 minutes. If desired, serve with whipped topping and pecans.

1 baked 9 inch pie shell
1 cup sugar
1 (5 ounce) can evaporated milk
2 tablespoons butter or 2 tablespoons margarine
2 ounces unsweetened chocolate, cut up
1 teaspoon vanilla
2 pints peppermint ice cream
3/4 cup sugar
1/2 cup boiling water
1/4 cup meringue powder
1/4 cup crushed peppermint stick candy

Steps:

  • Prepare baked 9-inch pastry shell; set aside.
  • For fudge sauce, in a small saucepan combine the 1 cup sugar, the evaporated milk, butter and chocolate.
  • Cook and stir over medium heat until bubbly.
  • Reduce heat and boil gently for 4 to 5 minutes, stirring occasionally, until mixture is thickened and reduced to 1 1/2 cups.
  • Remove from heat; stir in vanilla.
  • Beat until smooth with wire whisk or rotary beater.
  • Set aside to cool completely.
  • In a chilled bowl, stir 1 pint of the ice cream until softened.
  • Spread into cooled baked pastry shell.
  • Cover with half of the cooled fudge sauce.
  • Freeze until nearly firm.
  • Repeat with remaining ice cream and fudge sauce.
  • Return to freezer while preparing meringue.
  • In a medium mixing bowl dissolve the 3/4 cup sugar in the boiling water.
  • Cool to room temperature.
  • Add the meringue powder.
  • Beat on high speed until stiff peaks form.
  • By hand, fold 3 tablespoons of the crushed candy into the meringue.
  • Spread meringue over chocolate sauce layer, sealing to edge.
  • Sprinkle top with remaining crushed candy.
  • Freeze until firm (several hours).
  • Bake in a 475° oven for 3 to 4 minutes or just until meringue is lightly browned.
  • Cover loosely and return to freezer for a few hours or overnight before serving.

1 1/4 cup sugar
1/4 cup flour
1/2 tsp vanilla
3 eggs
chocolate sauce and ice cream, for toppings

Steps:

  • Preheat oven to 350F. Grease a 9-inch pie pan and set aside.
  • Add unsweetened chocolate and butter in a saucepan over low heat. Stir until the chocolate and butter melts completely and remove from heat.
  • Whisk in sugar, flour, vanilla and eggs.
  • Pour batter into pie pan and bake for 27 minutes. Serve warm with desired toppings.

I developed this recipe especially for my husband, who likes anything that has chocolate and peanut butter together!

2 teaspoons plus 3/4 cup butter, cubed, divided
3 cups sugar
1 can (5 ounces) evaporated milk
1 jar (7 ounces) marshmallow creme
1 cup semisweet chocolate chips
1 teaspoon vanilla extract, divided
1/2 cup peanut butter

Steps:

  • Line a 9-in. square pan with foil and grease the foil with 2 teaspoons butter; set aside. In a large heavy saucepan, combine the sugar, milk and remaining butter. Bring to a full rolling boil, stirring constantly. Boil for 4 minutes over medium heat, stirring to prevent scorching. Remove from the heat and set aside., Divide marshmallow creme between 2 heat-resistant bowls; add chocolate chips and 1/2 teaspoon vanilla to 1 bowl, and peanut butter and remaining vanilla to the other. Pour half of sugar mixture into each bowl., Stir chocolate mixture until smooth and pour into prepared pan; stir peanut butter mixture and carefully pour over chocolate layer. Refrigerate until firm. , Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-1/4-in. squares.

Dough for single-crust deep-dish pie
6 ounces cream cheese, softened
1/2 cup confectioners' sugar
Dash salt
1 cup heavy whipping cream, whipped
1 package (3 ounces) raspberry gelatin
1-1/4 cups boiling water
1 tablespoon lemon juice
1 package (10 ounces) frozen raspberries in syrup, thawed

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. , In a large bowl, beat cream cheese, sugar and salt until smooth. Fold in cream. Spread half into crust. Refrigerate 30 minutes., Meanwhile, dissolve gelatin in boiling water; add lemon juice and raspberries. Carefully spoon half over cream cheese layer. ½ cup unsalted butter
3 (1 ounce) squares unsweetened chocolate
1 ½ cups white sugar
4 large eggs
3 tablespoons light corn syrup (such as Karo®)
1 teaspoon vanilla extract
1 (9 inch) ready-to-use refrigerated pie crust

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter and chocolate in a pan over low heat.
  • Remove from the heat. Add sugar, eggs, corn syrup, and vanilla; stir until well combined. Pour into the pie crust.
  • Bake in the preheated oven until mostly set but slightly jiggly, 40 to 45 minutes.
  • Remove from the oven and cool to room temperature before serving; filling will thicken as it cools.

1 1/4 cups fine graham cracker crumbs
1/4 cup sugar
6 tablespoons butter or 6 tablespoons margarine
2 ounces unsweetened chocolate squares
1 (6 ounce) can evaporated milk (2/3 cup)
1 cup sugar
2 tablespoons butter or 2 tablespoons margarine
1 teaspoon vanilla
1 quart ice cream (I use Haagen-dazs honeybee)
9 inches baked pastry shells, cooled
1 (8 ounce) container whipped topping
honey

Steps:

  • For Graham-Cracker Crust:.
  • Combine graham-cracker crumbs, sugar, and butter or margarine, melted; mix.
  • Press firmly into 9- inch pie plate.
  • Bake at 375°F for 6 to 9 minutes or until edges are browned; cool.
  • For unbaked crust, chill 45 minutes; fill.
  • For Ice Cream Pie:.
  • In saucepan, combine chocolate and evaporated milk.
  • Cook and stir over low heat till chocolate is melted, about 15 minutes.
  • Stir in the sugar and butter.
  • Cook over medium heat till thickened, 5 to 8 minutes longer, stirring occasionally.
  • Stir in vanilla.
  • Cool.
  • Spoon HALF of the ice cream in the cooled pastry shell.
  • Cover with HALF the cooled chocolate sauce; freeze.
  • Repeat with the remaining ice cream and sauce.
  • Cover and freeze overnight or till firm.
  • Remove pie from freezer.
  • Spread whipped topping over chocolate layer; seal to edge.
  • Drizzle top with honey.
  • Enjoy.

6 oz unsweetened baking chocolate, chopped
1 can (14 oz) fat-free sweetened condensed milk (not evaporated)
1 container (8 oz) Cool Whip fat-free frozen whipped topping, thawed
Fresh raspberries, if desired

Steps:

  • Heat oven to 425°F. Place pie crust in 9-inch glass pie plate as directed on box for One-Crust Filled Pie. Line pie crust with foil; fill with pie weights or dried beans.
  • Bake 8 minutes. Remove weights and foil; bake 5 to 7 minutes longer or until golden brown. Cool completely on cooling rack, about 15 minutes.
  • Meanwhile, in large microwavable bowl, microwave chocolate uncovered on High 1 minute to 1 minute 30 seconds, stirring every 30 seconds, until melted and smooth. Stir in condensed milk with whisk until smooth; let stand 2 minutes. Fold half of the whipped topping into chocolate mixture until blended; pour mixture into crust.
  • Cover and refrigerate 4 to 8 hours. Spread remaining whipped topping over pie; garnish with raspberries.
