CREAMY IRISH POTATO SOUP



Creamy Irish Potato Soup image

This rich and creamy potato soup is subtly flavored with celery and green onions. It's the kind of soup you'll want to savor slowly...even though it's ready in just 35 minutes.

2 tablespoons butter or margarine
4 medium green onions, sliced
1 stalk celery, sliced
1 ¾ cups Swanson® Chicken Broth or Swanson® Certified Organic Chicken Broth or Swanson® Natural Goodness® Chicken Broth
⅛ teaspoon ground black pepper
3 medium potatoes, peeled and sliced 1/4 inch thick
1 ½ cups milk

Steps:

  • Heat the butter in a 3-quart saucepan over medium heat. Add onions and celery and cook until tender.
  • Stir the broth, 1/8 teaspoon ground black pepper and potatoes in the saucepan and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes or until the potatoes are tender.
  • Place half of the broth mixture and half of the milk in a blender or food processor. Cover and blend until smooth. Repeat with the remaining broth mixture and remaining milk. Return to the saucepan and heat through.

This is pretty easy. I make it almost every month and my family loves it! Serve with rolls or crackers. You may add chopped ham, bacon, carrots, or broccoli.

¼ cup butter
3 stalks celery, chopped
1 cup chopped green onion
salt and ground black pepper to taste
1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.5 ounce) can chicken broth
2 cups water
1 (10.75 ounce) can condensed cream of celery soup
1 (10.75 ounce) can condensed cream of chicken soup
2 cups milk

Steps:

  • Melt butter in a soup pot over medium heat. Cook and stir celery, green onions, salt, and black pepper in melted butter until slightly tender, about 5 minutes.
  • Stir potatoes, chicken broth, and water with celery mixture. Bring to a boil over medium-high heat, cover, and lower heat to a simmer until vegetables are softened, about 30 minutes.
  • Stir cream of celery soup, cream of chicken soup, milk with the potatoes mixture. Season with salt and pepper. Cook until heated through, stirring occasionally, 5 to 10 minutes.

3 ½ pounds potatoes, peeled and cubed
½ cup butter
½ cup half-and-half cream, or more if needed
1 teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon garlic powder

Steps:

  • Place potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 20 to 25 minutes. Drain.
  • Mash potatoes with a potato masher or an electric mixer on Low in a bowl until smooth.
  • Heat butter and half-and-half in a small saucepan over medium heat until butter is melted and half-and-half is warmed, 3 to 5 minutes.
  • Mash or beat butter mixture, salt, black pepper, and garlic powder into mashed potatoes until potatoes are light and fluffy. Stir additional half-and-half, 1 tablespoon at a time, into potatoes for creamier consistency.
