ROSEMARY CREAM CHICKEN PASTA

Rosemary-crusted creamy chicken pasta is a great, easy recipe for fuss-free weeknight dinners and is elegant enough to serve to guests at a dinner party.

4 sprigs fresh rosemary (finely chopped)
4 chicken breast fillets (halved horizontally)
2 tbsp olive oil
1 cup chicken stock/wine
3 cloves garlic (finely chopped)
1 cup heavy/whipping cream
1-2 tbsp lemon juice (fresh)
Parmesan (to serve)
500 g (1lb) penne pasta

Steps:

  • Remove the rosemary leaves from the stalks and finely chop.
  • Slice the chicken in half horizontally, resulting in two thin chicken fillets.
  • Drizzle the olive oil over the chicken and season well with the rosemary, salt and pepper.
  • Cook the chicken in a hot pan until golden brown on both sides and cooked through. Remove from the pan and set aside to rest.
  • Pour the chicken stock into the pan and scrape the bottom to release all the caramelized bits.
  • Allow the stock to simmer and reduce for 2 minutes then add the garlic and cook for another 30 seconds.
  • Pour in the cream and lemon juice and allow to simmer for 5 minutes.
  • Season to taste.
  • While the sauce is cooking, bring a large pot of salted water to a boil. Add penne pasta and cook for 9-10 minutes or until al dente. Reserve 1 cup of cooking water and drain.
  • Slice the chicken and add to cooked pasta then pour over the sauce and toss well. Add some of the pasta cooking water to emulsify the sauce. Add grated Parmesan and serve.

1/3 cup walnuts
1 teaspoon chopped fresh rosemary
3/4 cup plus 2 tablespoons all-purpose flour
1 tablespoon granulated sugar
1/4 teaspoon salt
6 tablespoons cold unsalted butter, chopped into 1/2-inch pieces
4 tablespoons (1/2 stick) unsalted butter
1 cup dark brown sugar
1/2 cup honey
1/4 cup heavy cream
1 teaspoon pure vanilla extract
1 teaspoon fine salt
2 cups walnuts, coarsely chopped
1 teaspoon finely chopped fresh rosemary
1 1/2 cups heavy cream
2 teaspoons granulated sugar
1 teaspoon orange zest plus 1/4 cup fresh orange juice
Powdered sugar, for dusting

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F.
  • For the tart shell: In the bowl of a food processor, pulse the walnuts, rosemary and 2 tablespoons of the flour until the nuts are finely ground. Add the granulated sugar, salt and remaining 3/4 cup flour and pulse to blend. Add the butter and pulse until the dough resembles coarse sand. Pour in 1 tablespoon cold water and pulse until the dough just comes together in a ball. Shape the dough into a disc, wrap in plastic wrap and refrigerate until the dough is firm, about 30 minutes.
  • Place the dough between 2 sheets of parchment paper and roll it out until it is 1/4 inch thick and 10 inches in diameter. Transfer the dough to a 9-inch tart pan and press the dough into the bottom and up the sides of the pan, trimming away any excess dough. Prick the dough with a fork, place the tart pan on a baking sheet and bake until light brown, about 20 minutes. Set aside while you make the filling.
  • For the tart filling: Melt the butter in a small saucepan over medium heat until it is golden brown and fragrant, about 3 minutes. In a large bowl, whisk together the brown sugar, honey, cream, vanilla and salt. Add the browned butter, walnuts and rosemary and stir to combine.
  • Pour the filling into the tart shell and place on a baking sheet. Bake until the filling is bubbly and thick, about 35 minutes. If the edges of the crust begin to get too dark, cover the tart loosely with foil. Transfer the tart to a wire rack to cool.
  • For the orange chantilly cream: In the bowl of a stand mixer with a whisk attachment, combine the cream, granulated sugar and orange zest and juice and beat until soft peaks form, about 2 minutes.
  • To serve, dust the tart with powdered sugar and top each slice with a dollop of the cream.

3 cloves garlic
1/2 teaspoon salt
nutritional yeast, to taste (optional, adds a cheesy flavor)

water

Steps:

  • Blend walnuts, cashews, oil, garlic, salt, rosemary and nutritional yeast if using.
  • Add water as needed to blend into a cream.
  • Serve over pasta or winter vegetables!

2 tablespoons light-brown sugar
1 tablespoon water
1 tablespoon Worcestershire sauce

Steps:

  • Melt butter in a large skillet over medium heat. Add rosemary and chipotle powder. Cook, stirring, 15 seconds. Add walnuts, salt, sugar, water, and Worcestershire sauce. Cook, stirring, until glossy and fragrant, about 4 minutes; let them cool to room temperature.

  • Add 1 Tbsp. oil to the pan, along with shallots. Cook 2 to 3 minutes, until softened. Add garlic; cook 30 seconds, until aromatic. Stir in rosemary, 1/2 tsp. salt, and vinegar; cook 1 to 2 minutes, until harsh vinegar smell dissipates. Add broth and simmer 3 minutes. Stir in lemon zest, and carefully pour mixture into blender with walnuts. Blend on HIGH until smooth and creamy; set aside.
  • Add remaining 2 Tbsp. oil to pan and increase heat to medium-high. Season salmon with remaining 1/2 tsp. salt and black pepper. Place salmon skin side down in pan; cook, undisturbed, pressing gently on fillets with a spatula to ensure skin is in full contact with pan, until skin is golden and crisp, about 5 minutes. Gently flip, turn off heat, and continue cooking until fish is opaque in the center, about 2 more minutes for medium-rare.
  • Pour walnut sauce into skillet and add garnishes of choice (chopped walnuts, fresh herbs, lemon zest, etc.) Serve with grain and/or vegetable of choice.
