- 1. Prehead oven to 350 degrees. In a saucepan add butter roasted garlic and minced onion. Stirring cook until onions are translucent. Add half and half and oregano. After it comes to a soft boil, add parmesan cheese. Stirring cook for about two minutes and then set aside. It should have gotten thick and creamy.
- 2. Put your favorite crust in the oven for about 10 minutes until it puffs up.
- 3. When the crust is done pour your thickened sauce over the crust and spread so that it is even.
- 4. Sprinkle the chopped spinach, olives, and onions over the sauce. Lay the bacon over the top of the spinach, olives, and onions.
- 5. Add the cheese. If you wish more cheese you can add more.
- 6. Bake for 25 to 30 minutes in the oven. Let set about 5 minutes before serving.
ROASTED GARLIC CHICKEN & BACON PIZZA RECIPE BY TASTY

- Preheat the grill to 400°F (200°C).
- Place the garlic heads on a small sheet of aluminum foil. Drizzle 1½ tablespoons of olive oil over the garlic and season with ½ teaspoon salt and ½ teaspoon pepper, then wrap tightly. Place the garlic on one side of the grill, close the lid, and roast for 35-40 minutes, until the cloves are tender and golden brown. Remove from the grill and let cool for 10 minutes, then unwrap the foil and squeeze the garlic cloves out of the skins.
- Meanwhile, season the chicken breast and thigh with the remaining 1½ teaspoons of salt, remaining 1½ teaspoons black pepper, the paprika, Italian seasoning, and 2 tablespoons of olive oil. Add the seasoned chicken to the rotisserie basket and turn on the motor so that the chicken rotates and cooks evenly. Cook for 10-12 minutes, or until the internal temperature reaches 165°F (75°C). Remove the chicken and let rest for about 5 minutes, then roughly chop.
- Heat a small cast-iron skillet on the sizzle zone over medium-high heat. Add the bacon to the pan and cook, flipping occasionally, for 6-8 minutes, until very crispy and cooked through. Remove the bacon from the pan and roughly chop.
- Roll out the pizza dough to your desired shape, about ½ inch thick. Brush the remaining ¼ cup of olive oil over both sides of the dough, then place directly on the grill grates (or use a pizza stone if preferred). Close the lid and cook for 5-6 minutes, or until the bottom is lightly browned.
- Flip the dough over and top with the pizza sauce, mozzarella cheese, cheddar cheese, chopped chicken, chopped bacon, and roasted garlic cloves. Close the lid and cook for another 5-6 minutes, or until the bottom of the dough is cooked through and the cheese has melted.
- Remove the pizza from the grill and sprinkle with the parsley. Slice and serve immediately.

PASTA WITH ROASTED GARLIC, PANCETTA AND ARUGULA
For this pasta, garlic is roasted in the oven to bring out its sweetness, then sautéed with bold flavors: salty pancetta, fiery chile flakes and a squeeze of lemon. Chopped peppery arugula and a pound of penne round out the dish. It takes 40 minutes to an hour to roast the garlic, but you can do it a day in advance, and it is worth it for the final, honeyed results.

- Heat oven to 375 degrees. Trim hairy root and green stem from green garlic, or trim 1/4-inch off top of regular garlic, making sure to expose all cloves.
- Place garlic in a small, shallow baking dish, root side down, and drizzle each with a little olive oil. Cover dish with foil. Roast until cloves or bulbs are golden brown, about 40 minutes to 1 hour (green garlic will cook faster than regular garlic). If bottom of dish starts to burn before garlic is roasted, add one tablespoon water. Transfer to a rack to cool. Garlic can be roasted up to one day ahead; wrap well and store in refrigerator.
- Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente.
- While pasta cooks, heat 3 tablespoons olive oil in a large skillet on medium-high heat. Add pancetta and red pepper flakes. Sauté until pancetta is golden and crisp around edges, about 5 minutes.
- Peel outside layer of green garlic, or if using regular garlic, squeeze cloves from their papery skins. Chop roasted garlic, and add to skillet with lemon juice and a large pinch of salt and pepper. Sauté for 2 minutes.
- Drain pasta, reserving 1/2 cup cooking water. Add drained pasta and arugula to skillet, place over low heat, and toss until arugula wilts. Add just enough cooking water to scrape up brown bits in pan (do this 1 tablespoon at a time). Taste and adjust seasoning, then serve with Parmesan.

- Set a pizza stone on the bottom rack of the oven and preheat the oven to 350°.
- In a pie dish, toss the garlic cloves with 1 tablespoon of the olive oil. Cover tightly with foil and roast until tender, about 45 minutes. Let cool slightly, then squeeze the softened garlic cloves into a mini food processor. Increase the oven temperature to 550° and allow at least 20 minutes for the stone to come to temperature.
- In a small skillet, cook the anchovies in the remaining oil over moderate heat until they are nearly dissolved, about 1 minute. Scrape the oil into the processor, add the oregano and crushed red pepper and process to a paste.
- Wipe out the skillet. Add the bacon and cook over moderate heat, stirring, until the fat is rendered but the bacon is not browned, about 2 minutes. Drain the bacon on paper towels.
- On a lightly floured surface, stretch 1 piece of the pizza dough out to a 14-inch round. Transfer the dough to a floured pizza peel. Spread half of the roasted-garlic paste all over the dough, leaving a »-inch border. Sprinkle with half of the bacon, mozzarella and Parmigiano-Reggiano. Slide the pizza onto the hot stone and bake until bubbling and golden, about 8 minutes. Transfer the pizza to a work surface and top with half of the arugula. Cut the pizza into wedges and serve immediately. Repeat with the remaining dough and toppings.
