1/2 ounce sweet vermouth
1 teaspoon creme de cassis
Splash of Angostura bitters
4 ounces chilled Champagne
Garnish: white currants

Steps:

  • Combine vermouth, cremede cassis, and bitters in aChampagne coupe or flute.Top with Champagne.Garnish with currants.

TEQUILA SOLEIL

Think of the Tequila Soleil as a Negroni (with tequila) meets a spritz (with beer) meets that wonderful feeling of relief only an ice cold drink on a hot summer afternoon can bring. The vermouth - use blanc if you have it, sweet red if you don't - tempers the drink, but the key to a perfectly balanced Tequila Soleil lies in how you build it. Namely, you'll want to add the ice last. This small switch in technique has a big impact, keeping the beer from deflating on impact and thus retaining a bubbly, refreshing vibe for much longer.

1/2 ounce reposado tequila
1/2 ounce red bitter liqueur, such as Campari, Cappelletti or Contratto Bitter
1/2 ounce blanc or sweet red vermouth
4 to 6 ounces I.P.A. (preferably a session I.P.A.), chilled
Ice

Steps:

  • In a Collins or wine glass, add the tequila, the liqueur and vermouth. Pour the beer over top to taste. (Start with 4 ounces for a stronger, more bitter drink, and add as needed, up to 6 ounces total, for a milder, hoppier drink.) Add ice, to taste, and serve.

BASIL VERMOUTH COOLER

A double dose of basil - infused in dry vermouth and used as garnish - ensures this drink is fresh and herbal throughout. A splash of olive brine and a garnish with the olives themselves add salinity and balance. Use the leftover basil-infused dry vermouth in a 50/50 martini, Vermouth Royale, a Fair Play or pour as is over a large ice cube and finish with a citrus twist.

Yield 1 (750-milliliter) bottle basil-infused dry vermouth and 1 cocktail

Number Of Ingredients 11

10 to 15 fresh basil leaves, washed and dried
1 (750-milliliter) bottle dry vermouth
Ice
1 1/2 ounces fino or manzanilla sherry
1 1/2 ounces basil-infused dry vermouth
1/4 to 1/2 ounce mild green olive brine, such as Castelvetrano or Manzanilla
2 ounces dry tonic
3 ounces soda water
1 basil sprig
1 (3-inch) lemon peel
1 to 3 Castelvetrano olives

Steps:

  • Make basil-infused dry vermouth: Place the basil in one hand and use the other to lightly slap the leaves, releasing the aromatics. Add the leaves to the vermouth either in the bottle itself or in a large, clean container. (You may need to pour out an ounce of vermouth to fit in all the leaves. If this is the case, pour the vermouth into a glass with an ice cube and garnish with a citrus twist. Drink while you infuse the rest.) Cover and set aside to infuse at room temperature for 3 hours. Strain the vermouth through a fine-mesh strainer, removing and discarding the basil leaves, and rebottle in the original bottle. Store in the refrigerator and use the basil-infused vermouth within 3 weeks.
  • Make the cocktail: Fill a Collins or highball glass with ice. Add the sherry, basil-infused vermouth and olive brine. Top with tonic and soda water. Place the basil sprig in one hand and use the other to lightly slap the leaves, releasing the aromatics. Garnish with the basil, lemon peel and olives.

CASSIS MANHATTAN

With a rye-bourbon split and just enough slightly herbal crème de cassis to sweeten without overpowering, this manhattan variation is spirit-forward, with layered notes of sugar and spice. If you prefer to keep the drink to one type of whiskey, opt for rye and leave out the bourbon. The cocktail will be slightly more spice-forward and boozier in feel. Whatever you do, let the cherry garnish sit until the very end of the drink for an especially flavorful final snack.

1 ounce rye whiskey
1 ounce bourbon
3/4 ounce sweet vermouth
1/4 ounce crème de cassis
3 to 4 dashes angostura bitters
1 brandied or maraschino cherry, for garnish

Steps:

  • In a cocktail shaker or mixing glass filled with ice, combine the rye whiskey, bourbon, vermouth, crème de cassis and bitters. Stir until well chilled, about 30 seconds, then strain into a Nick and Nora or coupe glass. Garnish with a cherry.

VERMOUTH ROYALE

Bubbly, citrus-forward and refreshing, the Vermouth Royale is just as lovely served in the dead of winter as it is poolside during the summer. If you don't have a muddler, the business end of a wooden spoon or tapered rolling pin work just as well. Since crème de cassis can quickly skew a cocktail saccharine, the Vermouth Royale starts with a half-ounce. That said, if your preference for sweetness skews a touch higher, feel free to use up to three-quarters of an ounce of crème de cassis.

1/2 lime, cut into wedges
2 (3-inch) lemon peels
1/2 teaspoon granulated sugar
Very small pinch of flaky sea salt
2 ounces dry vermouth
1/2 ounce crème de cassis
Ice
2 to 3 ounces sparkling wine

Steps:

  • Add the lime wedges, one of the lemon peels, sugar and salt to the bottom of a cocktail shaker. Use a muddler (or the end of a wooden spoon) to lightly smash and release the lime's juices and the lemon's oils and to dissolve the sugar and salt.
  • Add the vermouth and crème de cassis, and fill the shaker with ice. Cover and shake until very cold, then strain into a Collins glass filled with ice. Top with sparkling wine and garnish with the second lemon peel.
