Stir-Fried Beef With Mushrooms and Asparagus image

This recipe was my first "Mushroom Monday Challenge" dinner. I love stir-fries, and this one comes together in a snap. You can always use any vegetables that you may have on hand if you are short what's listed in the ingredients. Red or green peppers could be used if you don't have asparagus, even a little sliced carrot would be delicious.

2 tablespoons vegetable oil
1 beef steak, any kind, cut into 1 inch chunks (16-24 oz)
1 onion, sliced
2 tablespoons fresh garlic, minced
1 tablespoon fresh ginger, grated (optional)
1/2 lb asparagus, sliced into 1-inch pieces
8 ounces sliced mushrooms
2 heads baby bok choy
2 tablespoons soy sauce
1 teaspoon sugar (optional)
fresh ground black pepper
1/4 cup water
2 cups cooked white rice

Steps:

  • Cook the rice, as per package directions, while you prepare the stir-fry.
  • Add 1 tbsp to a large deep frying pan. Heat oil over high heat, about 30 seconds. Add beef to pan and cook until medium, or 3-5 minutes. Remove beef from pan, and set it aside.
  • Lower the heat to medium, and add the remaining 1 tbsp oil. Add onions, garlic, and ginger (if using). Stir and cook for 30 seconds, then add asparagus, mushrooms and bok choy, cook 3-4 minutes or until vegetables have softened.
  • Return beef to pan. Add soy sauce, sugar (if using), and pepper, toss to coat everything in sauce. Add 1/4 water, and raise heat to high, cook until water has slightly reduced and sauce starts to thicken.
  • Serve stir-fry over hot white rice.

1 1/2 lbs london broil beef, 1-inch thick
4 garlic cloves, minced, divided
4 teaspoons dried rosemary, crushed, divided
2 tablespoons extra virgin olive oil, divided
1 small onion, sliced lengthwise
1 lb asparagus, cut into 2-inch pieces
1 lb white mushroom, sliced
2 teaspoons lemon zest, grated
salt & freshly ground black pepper

Steps:

  • Score both sides of steak in a diamond pattern by carefully making 1/8-inch-deep diagonal cuts with a sharp knife at 1" intervals. Rub half of the garlic and 2 teaspoons of the rosemary into both sides of meat and season with salt and pepper.
  • Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high heat. Add steak and cook, turning once, about 4 minutes per side for medium-rare. Transfer to a plate and loosely cover with foil to keep warm.
  • Heat remaining oil in the same skillet. Add onion and cook, stirring often, for 2 minutes. Add remaining garlic and cook, stirring constantly, until fragrant, about 30 seconds. Add asparagus and mushrooms and cook, stirring often, until asparagus is crisp-tender and almost all the liquid has evaporated, about 5 minutes. Stir in lemon zest and remaining rosemary; season to taste with salt and pepper.
  • Cut steak into thin slices and serve with the vegetables.

I found this in my local paper and made a few adjustments to use ingredients available to me. Careful, it's spicy! Prep time includes 1 hour marinade time.

8 ounces New York strip steaks, thinly sliced
2 tablespoons orange juice
2 tablespoons soy sauce
1 tablespoon olive oil
1 tablespoon Thai sweet chili sauce or 1 tablespoon chili paste
3 green onions, sliced
3 garlic cloves, minced
1 inch long piece gingerroot, minced
1 bunch asparagus, cut on diag into 1-1/2 in. pieces
8 ounces sliced mushrooms

Steps:

  • Marinate beef in orange juice and soy sauce for 1 hour.
  • Heat oil in large skillet. Add chili sauce, onions, garlic and ginger. Stir fry for 1 minute.
  • Add beef and marinade. Stir fry for 2-3 minutes or until nearly cooked through. Remove beef to plate.
  • Add asparagus. (Add more oil if needed.) Stir fry until cooked but still slightly crunchy, about 4 minutes. Remove to plate.
  • Add mushrooms. Stir fry about 4 minutes.
  • Reduce heat to low. Return all ingredients to skillet and heat through for about 1 minute.

Its a really tasty stir fry, full of lots of vegetables with enough chilli to kick up the flavour. I really started out making this yesterday by looking around to see what ingredients I had at the time. I had to scribble down what I had put in it before I forgot so I can make it again for ourselves but I am sure that you will find it enjoyable as well.

1 tablespoon cooking oil
300 g steak, Rump
1 tablespoon soya sauce, light
2 tablespoons oyster sauce
3/4 teaspoon five-spice powder
2 teaspoons ginger, grated
2 garlic cloves, grated
3 cups mixed vegetables
2 chilies, Dried birds eye
1/2 teaspoon sesame oil
salt
1/2 cup water
1 tablespoon soya sauce, Dark
1 teaspoon cornflour, rounded
2 teaspoons water

Steps:

  • Slice the steak up really thin and place in a bowl to marinade with the light soya sauce, oyster sauce and the five spice powder, cover and put it in the fridge.
  • Prepare the vegetables which can consist of a combination of Bean Shoots, Red Capsicum, Bok Choy, Chinese Leaf, Baby Corn, Spring Onions, asparagus, broccoli, celery. (the asparagus and broccoli need to be blanched for 2 minutes, drained and allowed to cool.
  • For the sauce mix the water, dark soya sauce, sesame oil and cornflour together.
  • Heat the wok, adding some of the oil - stir fry the vegetables along with the garlic, ginger and the chillies for a few minutes adding some salt if necessary.
  • Place in a hot dish and add more oil to the wok and stir fry the beef, taking care to stir frequently, add the sauce and as soon as it starts to thicken add the vegetables back into the wok, stir to coat.
  • Serve immediately either with fried rice or plain boiled noodles. Delicious.

1 teaspoon cornstarch, dissolved in
2 teaspoons cold water

Steps:

  • Heat oil in a wok over medium-low heat.
  • Stir-fry ginger, scallion, and garlic until aroma develops, about 1 minute.
  • Add asparagus and raise heat.
  • Stir-fry for 1 minute.
  • Pour in last 4 ingredients.
  • Stir-fry quickly over high heat for 3 minutes, or until thoroughly heated.

12 -18 asparagus, trimmed
1/4 cup oyster sauce
1 tablespoon light soy sauce
1 tablespoon chinese sweet vinegar
1 teaspoon sugar
1 teaspoon toasted sesame seeds

Steps:

  • Leaving spears whole blanch asparagus for 1-2 minutes or you can microwave on high for 1 minute.
  • In the meanwhile combine oyster, soy, vinegar and sugar in a saucepan. Bring to the boil or alternatively heat in the microwave.
  • Pour over asparagus and sprinkle with sesame seeds.
  • Serve.

This is my mock-meat version of a Les Huynh recipe. Huynh set up the Sydney restaurant Blue Ginger, and has always combined fresh Australian ingredients with strong Asian flavors. Don't be scared of mock meats, they're fantastic fillers for vegetarians and meat eaters alike. But of course, if you want to use real beef, do so!

3 garlic cloves, peeled
3 tablespoons fresh coriander, chopped
2 long red chilies, deseeded and chopped
4 tablespoons vegetable oil
350 g mock beef, finely sliced
8 asparagus spears, trimmed and sliced into 5cm pieces on the diagonal (2 inch)
8 large fresh oyster mushrooms (or tinned if you can't find fresh, though they are far more slippery)
1 tablespoon light soy sauce
1 tablespoon vegetarian oyster sauce
1 teaspoon sugar
3 tablespoons vegetable stock

Steps:

  • Using a mortar and pestle, pound the garlic, coriander roots, chillies and a pinch of salt together. Alternatively, chop the ingredients into a paste using a small food processor.
  • Heat the oil in a hot wok, add the beef and the chilli/garlic paste and stir fry for 1-2 minutes.
  • Add the rest of the ingredients to the wok and cook for a further 2 minutes, or until the asparagus is tender.
  • To serve, pile the beef, asparagus and mushrooms in a bowl and pour the sauce over the top.
