This takes only 10 minutes and tastes like it came from a 5 star restaurant! This tuna tar tar is just amazingly simple and outstanding!

1 pound sushi grade tuna, finely diced
3 tablespoons olive oil
¼ teaspoon wasabi powder
1 tablespoon sesame seeds
⅛ teaspoon cracked black pepper
sliced French bread

Steps:

  • In a bowl, stir together olive oil, wasabi powder, sesame seeds, and cracked black pepper. Toss tuna into mixture until evenly coated. Adjust seasoning as desired with additional wasabi powder or black pepper. Serve on sliced French bread.

Gordon Ramsay is well known, but what about a new take on his tuna tartare? This recipe draws inspiration from Ramsay but adds in some twists along the way.

6 ounces fresh sushi-grade tuna
2 tablespoons soy sauce
½ tablespoon sesame oil
1 teaspoon chili garlic sauce
1 teaspoon fresh ginger, grated
¼ cup fresh mango, diced
½ cup vegetable oil
5 sheets wonton wrappers, cut in half diagonally

Steps:

  • Wrap the tuna tightly in plastic wrap. Place it in the freezer until it's firm and easy to cut.
  • Mix together the soy sauce, sesame oil, chili garlic sauce, and ginger in a small bowl. Set the mixture aside.
  • Remove the tuna from the freezer when it's par-frozen. Remove the plastic wrap.
  • With a sharp knife, dice the tuna into small cubes about ¼-inch around.
  • Toss together the tuna, mango, and prepared sauce in a medium-sized mixing bowl. Place the mixture in the refrigerator to finish defrosting.
  • Heat the vegetable oil on medium-high heat in a large, heavy-bottomed skillet.
  • Fry the wonton wrapper halves - 2 at a time is best - for about 12 to 15 seconds on each side after the oil is shimmering. Cook them until they are just beginning to brown on the edges. Transfer the cooked wonton wrapper halves to a paper towel-lined plate.
  • Remove the fully defrosted tuna from the refrigerator.
  • Serve the tuna tartare with the fried wontons and your choice of optional toppings.

8 ounces sushi-quality tuna
2 tablespoons minced cilantro
1 tablespoon minced shallot
1/2 teaspoon ginger, peeled and finely grated
1 teaspoon safflower oil
1/2 teaspoon kosher salt
6 grinds black pepper
1 teaspoon lime juice
1/2 small red onion, sliced paper-thin
1 medium cucumber, sliced paper-thin
20 large caper berries
16 toast points (crusts removed)

Steps:

  • Dice the tuna as finely as possible, or put it through a meat grinder using the largest disk. Transfer to a small bowl and add the cilantro, shallot, ginger, oil, salt and pepper. Mix until the ingredients are thoroughly combined. Cover and refrigerate up to 2 hours.
  • When ready to serve, mix the lime juice into the tuna. Divide the tuna between 4 small plates, mounding it in the center of the plates. Divide the onion, cucumbers, caper berries and toast points between the plates and serve immediately.

12 wonton wrappers (can substitute egg roll wrappers)
2 tablespoons olive oil
3 tablespoons sesame seeds
6 ounces sushi-grade tuna, cut into 1/4-inch dice
2 tablespoons green onions, green parts only, finely chopped
2 tablespoons sesame seeds, toasted
2 tablespoons soy sauce
1 teaspoon sesame oil
1 teaspoon peeled and grated fresh ginger
1 garlic clove, minced
3/4 teaspoon orange zest
2 tablespoons cilantro, finely chopped
1/2 teaspoon kosher salt
1 avocado, cut into 1/4-inch dice
2 teaspoons lime juice
fresh cilantro stem (to garnish)

Steps:

  • Sesame Wonton Crisps: Preheat oven to 350°F Line a baking sheet with parchment paper. Cut the wonton squares on an angle to make two triangles. Arrange the wonton triangles on the baking sheet. Spray with olive oil on one side (or brush lightly). Sprinkle lightly with sesame seeds. Bake until golden, about 6 minutes. (Can burn easily so watch carefully). Let cool. (Alternatively, if you want cups, put the oiled whole wrappers in mini muffin tins). Remove triangles from the pan and let cook on a cooling rack.
  • Tuna Tartar: Mix tuna, green onions, sesame seeds, soy sauce, sesame oil, ginger, garlic, orange zest, cilantro and salt together in a medium bowl. Mix well.
  • Assembly: Right before ready to serve, add the avocado and lime juice. (Do not mix in advance.) Place a heaping teaspoon of the tuna mixture on each wonton triangle. Garnish with a sprig of cilantro. Serve immediately. It is important that the tuna is not left at room temperature for more than 1 hour.

1/2 teaspoon Sriracha (Asian chili sauce)
8 ounces fresh tuna, cut into 1/4-inch dice
1 tablespoon thinly sliced fresh chives, plus 1-inch pieces for garnish
Gaufrettes or waffle-cut potato chips, for serving

Steps:

  • Whisk together mayonnaise, soy sauce, and Sriracha in a nonreactive bowl. Add tuna and chives, and gently combine with a fork. Top each gaufrette with 1 tablespoon tuna tartare, and garnish with chives.
