Time 55m

Yield 18

Number Of Ingredients 17

1 tablespoon olive oil
1 small onion, finely chopped
1 clove garlic, crushed
1 cup uncooked Arborio rice
½ cup dry white wine
2 ½ cups boiling chicken stock
½ cup frozen green peas
2 ounces finely chopped ham
salt and pepper to taste
½ cup finely grated Parmesan cheese
1 egg, beaten
1 egg
1 tablespoon milk
4 ounces mozzarella cheese, cut into 3/4 inch cubes
½ cup all-purpose flour
1 cup dry bread crumbs
1 cup vegetable oil for deep frying

Steps:

  • Heat the olive oil in a large saucepan over medium heat. Add onion and garlic, and cook, stirring until onion is soft but not browned. Pour in the rice, and cook stirring for 2 minutes, then stir in the wine, and continue cooking and stirring until the liquid has evaporated. Add hot chicken stock to the rice 1/3 cup at a time, stirring and cooking until the liquid has evaporated before adding more.
  • When the chicken stock has all been added, and the liquid has evaporated, stir in the peas and ham. Season with salt and pepper. Remove from the heat, and stir in the Parmesan cheese. Transfer the risotto to a bowl, and allow to cool slightly.
  • Stir the beaten egg into the risotto. In a small bowl, whisk together the remaining egg and milk with a fork. For each ball, roll 2 tablespoons of the risotto into a ball. Press a piece of the mozzarella cheese into the center, and roll to enclose. Coat lightly with flour, dip into the milk mixture, then roll in bread crumbs to coat.
  • Heat oil for frying in a deep-fryer or large deep saucepan to 350 degrees F (175 degrees C). Fry the balls in small batches until evenly golden, turning as needed. Drain on paper towels. Keep warm in a low oven while the rest are frying.

TRICOLORE ARANCINI

Tricolore Arancini image

Provided by Giada De Laurentiis

Time 1h15m

Yield 36

Number Of Ingredients 15

2 tablespoons olive oil
1 tablespoon unsalted butter
1 shallot (chopped)
1 1/2 cups Arborio rice
3/4 teaspoon kosher salt
3/4 cup dry white wine
3 1/2 cups low-sodium chicken broth
1 1/2 cups freshly grated Parmesan cheese
1/4 cup prepared pesto
1/2 cup jarred marinara sauce
Vegetable oil (for frying)
3/4 cup all-purpose flour
3 large eggs (beaten)
1 1/2 cups panko breadcrumbs
Jarred marinara sauce (for serving, optional)

Steps:

  • This recipe originally appeared on Giada Entertains: Under the Stars Movie Night.
  • For the arancini: Heat a Dutch oven over medium-high heat. Add the olive oil, butter and shallot and cook until the shallot is soft and fragrant, about 2 minutes. Add the rice and toast, stirring often to coat the rice in the flavored oil, for 2 more minutes. Season with the salt. Deglaze with the white wine and cook, stirring often, until almost entirely absorbed. Add a cup of the broth and cook, stirring constantly, until the liquid is nearly absorbed. Continue to cook until the rice is just tender and the mixture is creamy, adding more broth by the cup and stirring often, about 35 minutes total.
  • Stir in the Parmesan cheese. Pour one-third of the risotto into a separate bowl and one-third into another bowl so you have 3 separate bases. To the risotto in one of the bowls, stir in the pesto. To the risotto in the pot, stir in the marinara. Refrigerate until completely cool.
  • For the breading and serving: In a Dutch oven, heat 4 inches of oil to 350 degrees F on a deep-fry thermometer.
  • Set up a breading station by placing the flour in one bowl, the eggs in another bowl and the breadcrumbs in a third bowl. Using a 1-ounce scoop, form the risotto into 1 1/2-inch balls. Roll them in the flour first, followed by the eggs and finishing with the breadcrumbs. Fry the arancini until golden brown and warmed through, about 3 minutes. Serve with marinara on the side for dipping, if desired.

ARANCINI DI RISO

Categories     side-dish

Time 30m

Yield about 20 servings

Number Of Ingredients 19

Vegetable oil, for deep-frying
2 large eggs, beaten to blend
2 cups Risotto with Mushrooms and Peas, recipe follows, cooled
1/2 cup grated Parmesan
1 1/2 cups dried Italian-style bread crumbs
2 ounces mozzarella, cut into 1/2-inch cubes
Salt
8 cups canned low-salt chicken broth
1/2-ounce dried porcini mushrooms
1/4 cup unsalted butter
2 tablespoons olive oil
2 cups finely chopped onions
10 ounces white mushrooms, finely chopped
2 garlic cloves, minced
1 1/2 cups Arborio rice or short-grain white rice
2/3 cup dry white wine
3/4 cup frozen peas, thawed
2/3 cup grated Parmesan
Salt and freshly ground black pepper, optional

Steps:

  • Pour enough oil in a heavy large saucepan to reach the depth of 3 inches. Heat the oil over medium heat to 350 degrees F.
  • Stir the eggs, risotto, Parmesan, and 1/2 cup of the bread crumbs in a large bowl to combine. Place the remaining breadcrumbs in a medium bowl. Using about 2 tablespoons of the risotto mixture for each, form the risotto mixture into 1 3/4-inch-diameter balls. Insert 1 cube of mozzarella into the center of each ball. Roll the balls in the bread crumbs to coat.
  • Working in batches, add the rice balls to the hot ail and cook until brown and heated through, turning them as necessary, about 4 minutes. Using a slotted spoon, transfer the rice balls to paper towels to drain. Season with salt. Let rest 2 minutes. Serve hot.
  • Bring the broth to a simmer in a heavy medium saucepan. Add the porcini mushrooms. Set aside until the mushrooms are tender, about 5 minutes. Keep the broth warm over very low heat.
  • Melt the butter in a heavy large saucepan over medium heat. Add olive oil. Add the onions and saute until tender, about 8 minutes. Add the white mushrooms and garlic. Using a slotted spoon, transfer the porcini mushrooms to a cutting board. Finely chop the mushrooms and add to the saucepan. Saute until the mushrooms are tender and the juices evaporate, about 5 minutes. Stir in the rice and let it toast for a few minutes. Add the wine; cook until the liquid is absorbed, stirring often, about 2 minutes. Add 1 cup of hot broth; simmer over medium-low heat until the liquid is absorbed, stirring often, about 3 minutes. Continue to cook until the rice is just tender and the mixture is creamy, adding more broth by cupfuls and stirring often, about 28 minutes (the rice will absorb 6 to 8 cups of broth). Stir in the peas. Mix in the Parmesan. Season with salt and pepper, to taste.

CRAB ARANCINI

Crab Arancini image

Provided by Giada De Laurentiis

Categories     appetizer

Time 2h10m

Yield 30 rice balls

Number Of Ingredients 19

2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter, at room temperature
2 shallots, chopped
1 clove garlic, chopped
1/2 teaspoon kosher salt
1 cup Arborio rice
1 cup white wine
2 cups seafood broth
1/2 cup freshly grated Parmesan
2 tablespoons mascarpone, at room temperature
1 teaspoon grated lemon zest (from 1 large lemon)
2 cups lump crabmeat, picked through for shells
2 tablespoons chopped fresh chives
1/2 cup all-purpose flour
1/2 teaspoon kosher salt
2 eggs, at room temperature
1 cup panko breadcrumbs
Vegetable oil, for frying
2 cups jarred marinara, warmed, for serving, optional

Steps:

  • For the risotto: Heat a 3 1/2-quart Dutch oven over medium-high heat. Add the oil and butter. When the butter is melted, add the shallots and garlic; cook, stirring often with a wooden spoon, until the vegetables are soft and fragrant, about 2 minutes. Add the salt and the rice; stir to coat with the flavors of the pan. Cook for 1 minute, then deglaze with the white wine. Reduce the heat to medium and simmer, stirring often, until the wine is almost fully absorbed. Add the broth and stir to combine; cook, stirring often, until the rice is tender but not mushy, 15 to 20 minutes. Remove from the heat and stir in the Parmesan, mascarpone, lemon zest, crab and chives. Spread the risotto out on a parchment-lined baking sheet and let cool to room temperature, then cover with plastic wrap and refrigerate until completely cold.
  • For the arancini: Prepare a breading station using three shallow bowls: Place the flour and salt in one bowl, the eggs in another, and the panko in yet another. Using a 1-tablespoon ice cream scoop or spoon, scoop a round of risotto into the palm of your hand and form it into a ball. Roll the ball in the flour, then the egg, and then the panko; make sure the entire ball is well coated. Place on a rimmed baking sheet and repeat with the remaining risotto.
  • Add enough oil to a medium saucepan to come 2 inches up the side of the pan. Heat over medium-high until the oil reaches 350 degrees F on a deep-fry thermometer. Using a spider or slotted spoon, lower 5 or 6 rice balls into the oil, or as many as the pan will allow without crowding. Fry until deep golden brown and heated through, 3 to 4 minutes. Remove to a paper-towel-lined baking sheet to drain. Continue with the rest of the rice balls. Serve warm, with marinara alongside for dipping, if desired.

From pasta.com
  • Neapolitan Arancini. Palle de riso is the Neopolitan version of arancini, and the only filling you will find in this is cheese. However, even though it is a simple recipe, the texture and overall flavor will wow your tastebuds.
  • Baked Arancini. Try this healthier version of traditional arancini. Instead of frying the rice balls, you will bake them in a 350°F oven for about 30 minutes.
  • Sicilian Arancini. The author of this recipe has Italian heritage and recommends cooking a risotto a few hours or up to one day in advance. Using risotto makes it easy to form the arancini compared to a freshly cooked batch of regular rice.
  • Ham and Cheese Arancini. This recipe takes a unique approach and combines the rice with all of the filling ingredients. You can use regular white rice if you want since there is no specification on the type of rice required.
  • Porcini Mushroom Arancini. These cheesy mushroom arancini go great with a fresh pesto dip and are a lovely vegetarian-friendly snack. The recipe calls for a risotto made with arborio rice, just like the Sicilian arancini recipe.
  • Arancini Patty Cakes. Instead of rolling them into balls, you can make it easier on yourself and form arancini into flat cakes. Similar to how you cook potato cakes, this recipe is excellent for when you want to use leftover risotto.
  • Vegan Arancini. Last but not least, here is a vegan-friendly version of arancini that uses a plant-based mozzarella cheese for the filling. Wet your hands slightly and measure out ¼ cup of risotto to create each ball.
