2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons unsalted butter, cold, cut into small pieces
1/2 cup grated cheddar cheese
3/4 cup buttermilk
18 miniature hot dogs

Steps:

  • Heat the oven to 400ºF. Grease a large baking sheet. Sift the dry ingredients (flour through salt) into a mixing bowl (or dump them in one at a time, whatever).
  • Rub the butter pieces into the dry ingredients until mixture is crumbly. Stir in cheese until evenly distributed.
  • Make a well in the dry ingredients and add the buttermilk. Stir well with a wooden spoon. Let the dough sit for 3 minutes.
  • Sprinkle the dough with flour and stir once or twice then turn out onto a well floured counter.
  • With floured hands, pat the dough into a 15 by 7 inch rectangle, trimming the sides if necessary to get a true rectangle. (Handle the dough as little as possible for tenderness, yeah right).
  • Using a pizza cutter, slice the rectangle into thirds horizontally then slice each third into thirds vertically, this will give you 9 small rectangles. Slice each rectangle diagonally into two thin triangles.
  • One at a time, roll up the sausages in the triangles. Place pointy side down on greased cookie sheet.
  • Bake for 12 to 13 minutes, until golden brown. Cool on the sheet for 3 minutes then tranfer to a wire rack.

2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon sugar
1 teaspoon salt
1/3 cup butter or shortening (cold)
1 cup milk or buttermilk
2 tablespoons melted butter (for brushing (optional))

Steps:

  • In a large mixing bowl, stir together flour, baking powder, sugar, and salt.
  • Grate your butter using a cheese grater and stir into the flour mixture OR cut butter into small pieces and use a pastry cutter to cut the fat into the flour mixture until it resembles coarse meal or sand.
  • Gradually pour in the buttermilk or milk, stirring until the dough just comes together.
  • Turn the dough out onto a clean countertop and form it into a ball.
  • Press the dough flat until it is 1-inch thick. Use a circle biscuit cutter or a drinking glass to cut out your biscuits. Combine leftover scraps and continue re-pressing and cutting until all dough is used.
  • Place cut biscuits on an un-greased baking sheet and bake at 425 degrees for about 12-15 minutes, until the tops are nicely browned. Brush the tops with melted butter, if desired.

300 g all-purpose flour, sifted
220 g golden syrup
70 g peanut oil
1 1/2 teaspoons alkaline water
1 egg (beaten for egg wash)
1 teaspoon water (beaten for egg wash)

Steps:

  • Preheat oven to 190°C.
  • Prepare a baking sheet lined with baking paper.
  • Measure the amount of dough to put into wooden mould by using lotus paste wrapped in cellophane wrap. Weigh the amount of lotus paste used.
  • Sift the flour into a medium mixing bowl. Set aside.
  • Pour the golden syrup, peanut oil and alkaline water into another bowl and mix well.
  • Make a well in the centre of the flour and pour in the liquid mix.
  • Mix together the flour and the liquid mix till well mixed. Take care not to over-mix.
  • Flour the wooden mould sparingly and knock out the excess flour.
  • Weigh the dough in 40g lumps and press 1 lump into the wooden mould.
  • Knock out the formed dough from the mould and place it on the prepared baking sheet.
  • Continue the process for the rest of the lumps of dough.
  • Spray the dough with water sparingly before putting it in the oven to bake for 10 minutes.
  • Remove the half-baked biscuits from the oven and apply some egg wash.
  • Bake for another 10 minutes or until golden brown.
  • Remove from the oven to cool on a wire rack.

3 c flour
2 1/2 Tbsp baking powder
1/2 tsp ground nutmeg
1 Tbsp salt
3 Tbsp sugar
1 c lard
1 c buttermilk

Steps:

  • 1. Place all dry ingredients into a large bowl. Cut in the lard, until mixture looks like meal. Stir in buttermilk. If dough is not pliable, add just enough buttermilk to make a soft, puffy dough that is easy to roll out. Knead dough on lightly floured board about one to two minutes or 25 to 30 times. Roll out dough to about 3/4 inch thick. Cut with floured biscuit cutter, or use a glass of the right size. Place on greased baking sheet. Bake in a 450 degree oven for 10 to 12 minutes.
  • 2. *** I don't use LARD. I use either Butter Flavored Crisco or Margarine. The Pioneers cooked them a bit differntly as there were no modern ovens on the trail... They made make-shift ovens that were sitting on coals of the campfire and more coals on top to get a hot oven effect. They also spent a lot of time baking as the ovens were small. They also sometimes made them in a skillet or a heavy pot with a lid (Dutch Oven)with coals under and about 12 - 15 on top.
