PASTA CHIHUAHUA

Pasta Chihuahua image

This creation set me on the path to fusion cuisine and gave me the confidence to open Rulis' International Kitchen. It came to me over 12 years ago and was inspired by an Italian meat sauce; the flavor is all Mexican though. Tomatoes were unknown to Europe until explorers and traders took them back from the New World (Mexico). This is a full circle dish: Mexico gave Italy tomatoes, Italy gave the world pasta and meat sauce, now I bring it back over the Atlantic and give you Mexican pasta.

Categories     main-dish

Time 1h30m

Yield 6 servings

Number Of Ingredients 18

2 parts kosher salt
1 part granulated garlic
1 part smoked paprika
1 part black pepper
1 1/2 pounds Mexican chorizo
2 white onions, diced
2 cloves garlic, minced
Kosher salt and black pepper
One 16-ounce can crushed tomatoes with green chile
2 fresh tomatoes, diced
1 tablespoon Mexican oregano
1 1/2 teaspoons ground cumin
6 spicy hot links, sliced
3 cups chicken stock
2 pounds linguine
3 pounds hanging tender steak (or steak of your choice)
12 ounces cotija cheese, shredded
Cilantro, for garnish

Steps:

  • For the house seasoning: Mix the salt, granulated garlic, smoked paprika and black pepper in a bowl and use to season everything.
  • For the Chihuahua pasta sauce: Heat a medium saucepan over medium-high heat and start browning the chorizo, about 4 minutes. Add the onions and minced garlic, season with salt and pepper and cook for 3 minutes. Add the canned tomatoes with green chile, stir and cook an additional 3 minutes. Stir in the fresh tomatoes, oregano, cumin and hot links. Add the chicken stock, bring to a boil and then simmer uncovered for 45 minutes.
  • Cook the linguine until al dente. Set aside.
  • Sprinkle the steak with the house seasoning and grill on high heat, 2 to 3 minutes per side for medium-rare. Let rest 5 minutes before dicing the steak into bite-size chunks.
  • Heat up 3 ounces of water in a saute pan and toss in the pasta to reheat. Toss in the steak and cook more if desired. Introduce the pasta sauce to the pan and heat it up to at least 140 degrees F. Nest the contents into a bowl, top with cotija cheese and garnish with fresh cilantro.

BAKED STUFFED TOMATOES WITH GOAT CHEESE FONDUE

Baked Stuffed Tomatoes With Goat Cheese Fondue image

Hollowed out and stuffed with a runny mix of goat cheese and mascarpone, firm but ripe tomatoes make excellent vessels for a melting fondue.

Provided by Melissa Clark

Categories     quick, appetizer

Time 20m

Yield 2 to 3 servings

Number Of Ingredients 10

2 to 3 large firm tomatoes, or 4 to 6 small firm ones
Kosher salt
3 tablespoons mascarpone
3 tablespoons goat cheese, at room temperature
1 tablespoon unsalted butter
1 tablespoon extra virgin olive oil
2 garlic cloves, finely chopped
2 anchovies, finely chopped
1/4 cup panko or other coarse bread crumbs
Freshly ground black pepper, to taste

Steps:

  • Preheat oven to 500 degrees. If necessary, slice a very thin layer off bottoms of tomatoes so they will stand upright. Core tomatoes, and carve them out, stopping about about 3/4 inch from bottom and sides. (Do not remove too much, or tomato will collapse when baked.) Season inside of each tomato with salt. In a small bowl, stir together mascarpone and goat cheese.
  • To prepare topping, melt butter with oil in a medium skillet over medium-high heat. Add garlic and anchovies, and cook, stirring, 30 seconds. Stir in bread crumbs, and sauté 2 minutes more. Season with pepper.
  • Fill each hollow with mascarpone mixture. Top generously with bread crumbs. Transfer tomatoes to a baking sheet, and bake until they are slightly blistered and the tops are golden, about 10 minutes.

  • Rinse the rice well, place in a bowl and cover with water. Soak for 15 to 20 minutes until you are easily able to break one grain of rice between your fingertips. Drain.
  • Place a large skillet over medium-high heat. Add 1/3 cup extra virgin olive oil and heat until just shimmering but not smoking. Add chopped onions (but not the sliced onions) and garlic, toss briefly until fragrant (do not brown the onions and garlic.) Add the ground meat, season with salt, pepper, cumin, oregano, allspice and nutmeg. Cook the meat for about 5 minutes or until fully browned and cooked through (use a wooden spoon to break the meat apart to avoid large chunks.)
  • When meat is fully browned, add drained rice it to the meat mixture in the skillet. Add crushed tomatoes, white wine, and water (a pinch of salt if you like.) Bring the saucy mixture to a boil, turn the heat down and let simmer for for just 10 minutes or so (the simmering is an optional step, but it is helpful to get the rice cooking a little bit.) When ready, stir in the fresh herbs. Season with kosher salt to taste.
