Spinach and Millet Timbale With Tomato Sauce image

A timbale is a molded custard, somewhat similar to a quiche without a crust. It differs from a gratin because it is cooked at a lower heat in a water bath so the sides don't brown and stick to the baking dish, allowing you to unmold it. This one is delicious served with homemade marinara sauce (see recipe).

6 eggs
2 cups, tightly packed, blanched spinach* (about 10 ounces blanched; 1 1/2 pounds baby spinach or 3 pounds bunch, on the stem), finely chopped
2 teaspoons chopped fresh thyme leaves
2 garlic cloves, finely minced (optional)
1 cup cooked millet
3 ounces Gruyère cheese, grated (3/4 cup)
2/3 cup 2 percent milk
Salt and freshly ground pepper to taste
1 1/2 cups marinara sauce

Steps:

  • Heat the oven to 350 degrees. Bring a kettle of water to a boil. Butter a 2-quart soufflé dish or 6 1-cup ramekins, making sure to butter the bottoms generously, and place them in a baking pan that is deep enough so that you can fill it with enough water to come halfway up the sides of the mold or ramekins.
  • Beat the eggs in a large bowl and stir in the remaining ingredients (I usually season with 3/4 to 1 teaspoon of kosher salt). Scrape into the molds, filling them a little more than halfway full.
  • Add boiling water to the baking pan, enough to come halfway up the sides of the molds. Place in the oven and bake for 5 minutes, then lower the heat to 325 degrees. Bake small molds for another 40 minutes, or until set and a skewer inserted in the center comes out almost clean. Large timbales will take between 1 to 1 1/2 hours. Make sure the water bath does not boil.
  • Remove the timbales from the oven and allow to sit for 10 minutes while you heat the tomato sauce.
  • Spoon about 3 to 4 tablespoons of tomato sauce onto each plate if you made individual timbales. Run a knife around the edges of the ramekins and unmold onto the plates. If serving 1 large timbale unmold onto a platter and cut into wedges.

4 large tomatoes (about 2 pounds)
1/2 garlic clove, minced
2 tablespoons chopped fresh basil, plus whole leaves, freshly sliced, for garnish
3/4 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
4 teaspoons balsamic vinegar
1 tablespoon water
1 teaspoon sherry vinegar
1 1/2 teaspoons sugar
1/2 medium zucchini
1/2 Japanese or small eggplant
1 tablespoon olive oil, plus more for drizzling
Tomato Sorbet
2 1/4 pounds vine-ripened cherry or other ripe, flavorful tomatoes, halved
1/2 stalk celery, coarsely chopped
1 1/2 teaspoons finely chopped shallot
1/2 cup (about 1/4 bulb) chopped fennel
3/4 teaspoon chopped fresh thyme leaves
1/4 teaspoon chopped fresh tarragon
4 tablespoons chopped fresh basil
1 garlic clove
1 tablespoon coarse salt
Pinch of cayenne pepper
2 drops Worcestershire sauce
2 drops hot-pepper sauce, such as Tabasco

Steps:

  • Make the tomato essence: In a large bowl, combine tomatoes, celery, shallot, fennel, thyme, tarragon, 4 tablespoons basil, garlic clove, 1 tablespoon salt, cayenne, Worcestershire, and hot-pepper sauce. Cover, and marinate 4 hours.
  • Transfer to bowl of food processor; pulse to combine, about 5 seconds. Do not overblend. Drape two 14-inch squares of cheesecloth over a deep bowl or stockpot, and transfer mixture to the cheesecloth. Tie ends together tightly, and suspend over bowl to catch juices, preferably overnight. Transfer juices to an airtight container, and store in refrigerator until needed, up to 1 day. Discard contents in cheesecloth.
  • Make the timbales: Fill a medium saucepan halfway with water, and bring to a boil over high heat. Score an X in the bottom of each large tomato; place in boiling water for 10 seconds. Remove with a slotted spoon, and let cool slightly. Use a paring knife to gently remove skins and cut flesh into petals by following the shape of the tomato from top to bottom. You should have four petals from each tomato for a total of sixteen; set aside.
  • Remove and discard seeds from core of tomatoes, and dice remaining flesh. Combine diced tomatoes in a small bowl with remaining 1/2 garlic clove, 2 tablespoons chopped basil, 1/4 teaspoon salt, 1/8 teaspoon pepper, and balsamic vinegar; set aside. Using a 2-inch round cutter, cut out eight circles from eight petals, and place one each in the bottom of four sterilized 4-ounce jelly jars, presentation side down. Set aside remaining four circles. Dice the scraps, and add to the marinating diced mixture.
  • Fit two of eight remaining petals to line sides of each jar, overlapping slightly to cover. Place 4 to 5 tablespoons diced tomato mixture in each jar to fill, and place one of the reserved circles on top. Press down lid; screw on ring lid. Place in refrigerator 1 hour or overnight.
  • In a small bowl, whisk water, sherry vinegar, sugar, and remaining 1/2 teaspoon salt and 1/8 teaspoon pepper. Set aside.
  • Cut off ends of zucchini and eggplant. Use a paring knife to slice lengthwise into 1/4-inch-thick strips; cut each strip into 1-inch squares. In a medium saute pan, heat oil over medium heat. Add eggplant skin side down; cook 30 seconds. Add zucchini skin side down, and cook 1 minute on each side. Pour sherry-vinegar solution into pan, and remove from heat.
  • Remove jars from refrigerator; run the tip of a paring knife around the inside of each jar to loosen, and unmold. Place a timbale in the center of each of four chilled bowls. Surround with eggplant and zucchini. Ladle tomato essence around bowl; drizzle with olive oil. Place a scoop of sorbet on each timbale, and garnish with basil. Serve immediately.

8 ounces spaghetti, cooked al dente
2 cups prepared Bolognese sauce
8 ounces rigatoni, cooked al dente
2 cups favorite tomato sauce, heated
1 cup freshly grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees. Grease a 3-quart round deep glass baking dish with the butter. Arrange the spaghetti in a spiral pattern over the bottom of the prepared baking dish.
  • Spoon the Bolognese sauce into a pastry bag fitted with a wide plain tip and pipe the sauce into the rigatoni. Arrange the rigatoni over the spaghetti in the prepared baking dish. Bake for 15 minutes.
  • Invert the baking dish onto a serving plate and lift it off. Spoon the tomato sauce on top of the timbale and sprinkle with the Parmesan cheese.

1 cup sweet corn
1 cup water
1 1/4 teaspoons salt

2 slices onions

2 tablespoons brown sugar
2 eggs
1/4 cup cracker crumb
1 tablespoon butter
1 tablespoon cornstarch
1 1/3 cups milk
1/3 cup of grated cheese
1/4 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon paprika
1/4 teaspoon cumin

Steps:

  • Cheese sauce: Melt the butter, then add 1 tablespoon of cornstarch, and mix well.
  • Now add 1 cup of milk, and bring it to the boiling point.
  • Mix well, and add the cheese, salt, mustard and paprika.
  • Stir until the cheese has melted, and pour over the baked timbales.
  • Simmer the tomatoes, corn, water, salt and pepper along with the onion, cloves and sugar for 15 minutes.
  • Rub through a sive.
  • Add the cracker crumbs and slightly beaten eggs.
  • Pour the mixture into greased timbale molds or miniature muffin cups and bake at 350 degrees for 20 minutes or until firm.
  • Turn out on a platter and pour the Cheese Sauce over them.

1 large or 2 medium heirloom or beefsteak tomatoes
Kosher salt
Eight 1/3- to 1/2-inch-thick slices Pullman bread
12 slices sharp Cheddar or American cheese
6 tablespoons cultured butter, softened

Steps:

  • Thinly slice the tomatoes and lay them on a paper towel. Sprinkle with salt and let sit to release any water, about 15 minutes. Pat dry.
  • Lay out 4 slices of the bread on a work surface. Layer each with 2 slices of cheese, making sure that they cover to the edges. Follow with 2 slices of tomato and then 1 more slice of cheese. Close the sandwiches with the remaining bread. Thinly and evenly spread the butter on both sides of the bread using about 1 1/2 tablespoons of the butter for each sandwich.

2 Tbsp all purpose flour
1 ½ cup scalded whole milk
salt, to taste
freshly cracked black pepper
pinch of freshly ground nutmeg
3 Tbsp olive oil
1 small onion, chopped
3 garlic, cloves, chopped
1 14 oz can crushed plum tomato
4 Tbsp chopped fresh basil
salt, to taste
freshly cracked black pepper
1 ½ cup all purpose flour
2 large egg
olive oil, for coating mould
4 sheet fresh pasta
2 baby Italian eggplant
½ lb(s) rigatoni, cooked al dente
1 recipe tomato basil sauce
1 recipe béchamel sauce
3 oz mozzarella buffalo cheese, sliced
1 Tbsp chopped fresh basil
salt, to taste
freshly cracked black pepper
¼ cup freshly grated Parmigiano-Reggiano cheese

Steps:

  • In a small saucepan melt butter over medium heat. Add flour and cook, stirring, about 2 minutes until it starts bubbling but does not colour.
  • Gradually whisk in the hot milk. Continue whisking for about 4 minutes until it thickens.
  • Season with salt and pepper.
  • Pour the sauce into a bowl. Cover the bowl with plastic wrap. Make sure to place wrap directly on the surface of the sauce so a skin does not form. Set aside.
  • Heat olive oil in a saucepan over medium heat. Add onion and garlic and cook for about 4 minutes until soft.
  • Add the tomatoes. Partially cover and simmer for about 45 minutes or until sauce is very thick.
  • Stir in the basil. Season with salt and pepper and set side.
  • Put 1¼ cups of the flour into a large bowl. Make a well in the centre of the flour and crack the eggs into the well.
  • With your hands, gradually mix the flour into the eggs until dough forms.
  • Turn out onto a lightly floured surface. Knead the dough a few times until you have incorporated as much of the remaining 1/4 cup of flour as possible. The dough will appear lumpy and dry.
  • Cut the dough in half and put one ball under a slightly damp towel.
  • Flatten the other piece with your hand.
  • Set a pasta roller at thickest setting and feed dough through rollers.
  • Fold dough into an envelope shape and feed through machine again. Repeat 3 or 4 more times or until your dough looks smooth.
  • Reduce the pasta setting by one mark and pass through again. Reduce setting by one mark for each pass through until dough has passed through all settings.
  • Cut the sheet of dough in half and put the 2 sheets under a sheet of plastic wrap.
  • Repeat the entire process with the second dough ball. You now have 4 sheets of pasta under plastic.
  • Bring a pot of salted water to a boil. Cook the pasta sheets in the boiling water for about 1 minute each or until al dente.
  • Lay them on a well-oiled baking sheet. Do not over-lap the sheets. Spread some more olive oil on top of each pasta sheet.
  • Preheat the oven to 350 degrees F.
  • Put one pasta sheet in the centre of a 5 inch deep, 8 inch circular baking dish. Drape the edges of the pasta over the sides. Press pasta sheet into the edges of the baking dish. Repeat with the remaining pasta sheets. The entire bottom and sides of the baking dish should be covered with pasta and the sides of the pasta sheets should be hanging over the sides of the baking dish.
  • Cut eggplant into 1/4 inch thick diagonal slices. Brush with oil and grill. Season the eggplant with salt and pepper.
  • In a large bowl toss the cooked rigatoni with the tomato basil sauce and parmigiano regiano cheese.
  • Spread half the rigatoni on top of the fresh pasta sheets in the baking dish.
  • Overlap half of the eggplant slices over the rigatoni.
  • Spread half the béchamel on the eggplant slices.
  • Top the béchamel with the rest of the rigatoni.
  • Place the mozzarella slices on top of the rigatoni.
  • Sprinkle with chopped basil.
  • Layer with remaining eggplant slices.
  • Pour over remaining béchamel sauce.
  • Fold the overhanging pasta sheet ends over on top of the dish to seal.
  • Brush the top with more olive oil.
  • Bake for about 25 minutes until golden. Remove from oven and let the timbale rest for 15 minutes.
  • Flip timbale onto a platter and unmould. Cut the timbale into wedges to serve.

CHEESY BREAD BALLS IN TOMATO SAUCE

It's hard not to love this combination of tomato sauce, melted cheese, bread balls and garlic oil, which is sort of like a pizza, deconstructed. If you prefer not to stuff the bread balls, you can skip that part and simply roll them until round, baking them in the same way. The extra cheese can then be added to the sauce around the bread balls just before broiling. This dough method isn't complicated, but you could work with store-bought pizza dough to save on time.

1/4 cup/60 milliliters lukewarm water
1 1/2 teaspoons olive oil, plus more for brushing
1/2 teaspoon active (fast-action) dry yeast
1/4 teaspoon kosher salt
1/3 cup/80 milliliters olive oil
7 garlic cloves, peeled and minced
1 (14-ounce/400-gram) can plum tomatoes, well crushed by hand
3 tablespoons fresh oregano leaves, plus 1 tablespoon for garnish

1 teaspoon granulated sugar

  • Prepare the bread balls: Add the flour, lukewarm water, 1 1/2 teaspoons oil, the yeast and salt to the bowl of a stand mixer. Using the dough hook, knead on medium-high speed for 7 minutes, scraping the bottom of the bowl to distribute the ingredients as needed, until soft and elastic. Transfer to a medium, lightly oiled bowl, and brush the top of the dough with a little oil. Cover with a damp tea towel and let rise in a warm place for 1 hour, or until soft and pillowy.
  • Meanwhile, prepare the sauce: Add the 1/3 cup/80 milliliters oil and garlic to a medium ovenproof skillet and heat over medium-low, gently frying for 4 to 5 minutes, until soft and fragrant. (You don't want the garlic to brown, so turn the heat down if necessary.) Transfer 3 tablespoons of the garlic-oil mixture to a small bowl and set aside.
  • Add the tomatoes with their juices, oregano, basil, sugar and 1/4 teaspoon salt to the skillet and simmer over medium-high heat, stirring occasionally, for 4 minutes. Add 2/3 cup/160 milliliters water, turn the heat to medium-low and continue to simmer for 15 minutes, stirring every now and then, until thickened slightly. Set aside.
  • Meanwhile, cut the mozzarella into 20 cubes.
  • Transfer the dough to a clean work surface and use a pastry cutter or sharp knife to cut it into 8 equal pieces.
  • Use your hands to flatten each piece into a 2 1/2-inch/6 centimeter-wide round, then place a piece of mozzarella into the center. Fold the dough up and around, pinching the dough tightly to enclose the cheese. Turn the dough ball over, pinched side down, and use the palm of your hand to roll the dough against your work surface to make a smooth, neat ball.
  • Transfer to a parchment-lined baking sheet (baking tray), and form the remaining dough balls, spacing them evenly apart as you place them on the baking sheet. Cover with a damp tea towel and leave to proof in a warm place for another 30 minutes.
  • Heat the oven to 375 degrees Fahrenheit/200 degrees Celsius. Brush the top of the dough balls with a little olive oil to coat, then bake for 10 minutes, or until golden brown. Set aside and heat the broiler (turn the oven grill setting to medium-high).
  • Return the sauce to medium-high heat and bring to a simmer. Once simmering, add the baked bread balls to the sauce, and arrange the remaining cheese cubes around them. Transfer to the middle rack of the oven and broil (grill) for 2 to 4 minutes, until the cheese is melted and bubbling and the bread balls are nicely browned.
  • Spoon the reserved garlic oil over the bread balls and season lightly with salt and pepper. Sprinkle with the extra oregano and basil, and serve right away.

2 -3 teaspoons bacon drippings (or chicken drippings from baked chicken if you've got them)
1/2 teaspoon garlic (fresh or powder)
1/4 onion, sliced thin
3 -4 manzanilla olives, chopped fine (optional)
1/4 cup mushroom, chopped (optional)
3/4 cup tomato sauce (pasta sauce)
1 cup extra-sharp cheddar cheese (best to use brick cheese and slice it thin for quick and even cooking)

Steps:

  • Heat a pot over medium heat. Once pot is hot, pour in bacon drippings (can add bacon too, crumbled).
  • Add in onions and cook until they start to become translucent, then add garlic and olives, mushrooms, or whatever other vegetables you decide to add to the sauce.
  • Once vegetables are soft, add in tomato sauce. Cook until heated through (about 3 minutes), then add cheese and stir until melted.
  • Serve this over pasta or stir the pasta directly into the pot. Since this is a thick sauce, the noodles should easily hold on to the sauce.

Use whatever herbs and cheeses you have on hand, for example, adjust the spice levels as preferred, and opt for fresh tomatoes if they're in season, or chopped canned tomatoes instead of whole. Steps:

  • Cut out a piece of parchment paper about 16-by-12 inches/40-by-30 centimeters in size and lay onto a clean work surface.
  • Prepare the polenta: Add the milk, garlic, 1 1/2 tablespoons oil, 1 teaspoon salt and a good grind of pepper to a medium saucepan. Bring to a bare simmer, stirring occasionally, over medium-high heat. Turn the heat to medium-low and slowly pour in the polenta, whisking continuously, until completely incorporated and there are no lumps. Cook for 2 to 3 minutes, stirring all the while with a spatula. When cooked, the mixture should pull away from the sides of the pan and be quite thick.
  • Add the Parmesan, stirring for another 30 seconds to melt. Remove from the heat and transfer the mixture to the parchment paper. Use your hands to quickly shape the polenta into a large cylindrical shape, about 13-inches/32-centimeters long. Use the parchment paper to help you tighten the cylinder and then gently roll the whole thing in the paper, tightening as you go, then twisting in opposite directions at both ends. Refrigerate to set for about 1 hour, or longer if time allows.
  • Meanwhile, make the sauce: Add the olive oil to a large, ovenproof cast-iron pan that is roughly 11-inches/28-centimeters wide, and heat over medium-high. Once hot, add the onions and cook, stirring occasionally, for 6 minutes, or until softened and lightly colored.
  • Stir in the garlic, red-pepper flakes and oregano, and cook until fragrant, about 1 minute. Add the tomatoes and their juices, sugar, a scant 1/2 cup/100 milliliters water, 3/4 teaspoon salt and a good grind of pepper. Bring to a simmer over medium-high. Turn the heat down to medium and cook, stirring occasionally, for 20 minutes or until the sauce has thickened slightly. Set aside until needed.
  • Heat oven to 450 degrees Fahrenheit/230 degrees Celsius.
  • Gently unwrap the chilled polenta and transfer to a cutting board. Trim about 1 inch/2 to 3 centimeters off the ends and then cut the polenta into 24 (1-centimeter-thick) slices.
  • Top the tomato sauce evenly with the sliced fontina, then fan out the polenta slices, overlapping slightly, so that they're spiraled to cover the top, leaving a 1-centimeter gap from the edge of the pan. Drizzle the polenta with the remaining 2 tablespoons oil and bake for 30 to 35 minutes, or until polenta is golden in places and the sauce is bubbling. Remove from oven and let sit for 10 minutes to settle.
  • While the polenta cools, in a small bowl combine all the topping ingredients. Sprinkle a handful of the topping over the polenta and serve the remaining in a bowl alongside. Serve warm.
