GARLIC-BASIL TOMATOES WITH MOZZARELLA



Garlic-Basil Tomatoes with Mozzarella image

This salad is the perfect showcase for your fresh garden tomatoes and basil!

4 medium tomatoes, cut into 1/4-inch slices
1/4 cup plus 1 tablespoon olive or vegetable oil
3 tablespoons red wine vinegar
1 tablespoon chopped fresh basil leaves or 1 teaspoon dried basil leaves
1/8 teaspoon salt
3 drops red pepper sauce
2 large garlic cloves, finely chopped
8 ounces fresh mozzarella cheese, sliced
Salad greens, if desired

Steps:

  • Place tomatoes in glass or plastic dish.
  • Shake remaining ingredients except cheese and salad greens in tightly covered container. Pour over tomatoes. Cover and refrigerate at least 3 hours to blend flavors, turning occasionally.
  • Layer cheese alternately with tomatoes on salad greens.

Great easy appetizer that I had at our annual Halloween Party...Putting recipe here for safe keeping as I want to make it for Thanksgiving....very elegant, and tastes wonderful.

20 cherry tomatoes, halved (cherry or grape size)
20 basil leaves
20 bite-size fresh mozzarella cheese balls (often labeled bocconcini)
salt and pepper
1/2 cup balsamic vinegar
1/4 cup extra virgin olive oil
20 toothpicks

Steps:

  • Usining a toothpick, spear a half of a tomato, a piece of basil, a mozzarella ball, and another half of a tomato. Repeat with remaining ingredients. Place on a service dish and sprinkle with salt and pepper. Mix the vinegar and oil together in a small bowl to serve as a dipping sauce, or you can marinate appetizers in a bowl with marinade poured over.

6 ounces buffalo mozzarella
24 small cherry tomatoes
24 basil leaves
24 (5 inch) bamboo skewers
1 tablespoon balsamic vinegar
1 tablespoon extra virgin olive oil
1/4 teaspoon pepper
1/8 teaspoon salt

Steps:

  • Whisk vinegar in a small bowl with oil, pepper and salt.
  • Cut cheese in twenty-four 1/2 inch cubes. To assemble, slide a tomato onto a skewer, followed by a basil leaf, folded in half, and a cheese cube.
  • Repeat with remaining skewers.
  • Arrange on a serving platter and brush or sprinkle with vinaigrette.
  • Cover and let sit at room temperature up to 2 hours before serving.
