Apple bars with a sweet, creamy apple filling layered between a crunchy oat crust and topping.

Crust
1 cup Land O Lakes® Butter softened
1 cup firmly packed brown sugar
2 cups uncooked quick-cooking oats
1 cup all-purpose flour
1 cup chopped walnuts
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
Filling
1 cup sour cream
3/4 cup sugar
2 tablespoons all-purpose flour
1 large Land O Lakes® Egg
2 medium (2 cups) apples, peeled, finely chopped

Steps:

  • Heat oven to 350°F.
  • Combine butter and brown sugar in bowl. Beat at medium speed until creamy. Add all remaining crust ingredients; continue beating until well mixed.
  • Press two-thirds of crust mixture into bottom of ungreased 13x9-inch baking pan. Bake 9-11 minutes or until light golden brown.
  • Combine all filling ingredients in bowl; mix well. Pour filling over hot, partially baked crust. Crumble remaining crust mixture over filling and press down lightly.
  • Bake 50-55 minutes or until top is golden brown and center is set. Cool completely. Cut into bars. Store refrigerated.

1 cup sifted all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
¼ teaspoon ground cinnamon
¼ cup butter or margarine, melted
½ cup packed brown sugar
½ cup white sugar
1 egg
1 teaspoon vanilla extract
½ cup chopped apple
½ cup finely chopped walnuts
2 tablespoons white sugar
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch pan. Sift together flour, baking powder, salt, and 1/4 teaspoon of cinnamon; set aside.
  • In a large bowl, mix together melted butter, brown sugar, and 1/2 cup of white sugar with a wooden spoon until smooth. Stir in the egg and vanilla. Blend in the flour mixture until just combined, then stir in the apples and walnuts. Spread the mixture evenly into the prepared pan. In a cup or small bowl, stir together the remaining cinnamon and sugar; sprinkle over the top of the bars.
  • Bake for 25 to 30 minutes in preheated oven; finished bars should spring back when lightly touched. Cool in the pan, and cut into squares.

2 cups all purpose or unbleached flour
2 cups firmly packed brown sugar
1/2 cup margarine or butter, softened
1 cup chopped nuts
1 to 2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1 (8-oz.) container sour cream
1 teaspoon vanilla
1 egg
2 cups finely chopped, peeled apples

Steps:

  • Heat oven to 350°F. In large bowl, combine flour, brown sugar and margarine; beat at low speed until crumbly. Stir in nuts. Press 2 3/4 cups crumb mixture in bottom of ungreased 13x9-inch pan.
  • To remaining mixture, add cinnamon, baking soda, salt, sour cream, vanilla and egg; mix well. Stir in apples. Spoon evenly over crumb mixture in pan.
  • Bake at 350°F. for 30 to 40 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes. Cut into squares. Serve warm or cool. If desired, serve with whipped cream or ice cream. Store in refrigerator.

18 ounces Pillsbury Plus yellow cake mix (1 package)
1/2 cup margarine (soft) or 1/2 cup butter (soft)
1/4 cup brown sugar (firmly packed)
1/2 teaspoon cinnamon
2 apples (thinly sliced)
1 cup sour cream
1 egg

Steps:

  • Preheat oven to 350*.
  • Combine cake mix and butter; mix until crumbly.
  • Reserve 2/3 cup of crumbly mixture for topping.
  • Stir brown sugar into remaining mixture.
  • Cover bottom of ungreased 13x9 inch pan with brown sugar mixture. Pat down.
  • Arrange apple slices over base.
  • Blend sour cream and egg; spread evenly over apples.
  • Sprinkle topping mixture over all.
  • Sprinkle cinnamon over top.
  • Bake at 350* for 25 to 30 minutes of until topping is golden brown and bubbly.
  • Serve warm.
  • Refrigerate leftovers.
  • Note: to increase visual appeal, I sometimes dust a little powdered sugar over the top under the cinnamon.

Our first try was perfect, and these apple squares soon became a favorite to serve at social functions. Years ago, we made six pans of these squares when a young Johnny Carson presented his magic show at our card club!

2 cups all-purpose flour
2 cups packed brown sugar
1/2 cup butter, softened
1 cup chopped nuts
2 teaspoons ground cinnamon
1 teaspoon baking soda

1 large egg, room temperature, beaten
2 cups chopped peeled tart apples
Whipped cream, optional

Steps:

  • In a large bowl, combine the flour, brown sugar and butter; beat at low speed until crumbly. Stir in nuts. Press about 2-3/4 cups into an ungreased 13x9-in. baking pan. , To the remaining crumb mixture, add the cinnamon, baking soda, salt, sour cream, vanilla and egg. Beat until thoroughly combined. Stir in apples. Spoon evenly over crust. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into squares. Garnish with whipped cream if desired.

  • Preheat oven to 350°. In a small bowl, combine flour and brown sugar; cut in butter until crumbly. Press into a well-greased 13x9-in. baking pan. Bake 15-18 minutes or until lightly browned., Meanwhile, in a large bowl, beat cream cheese, 1/2 cup sugar and vanilla until smooth. Add eggs; beat on low speed just until combined. 2 cups all-purpose flour
½ teaspoon salt
⅔ cup shortening
¼ cup water
2 eggs
1 tablespoon lemon juice
6 apples - peeled, cored, and cut into 1/2-inch thick slices, or more to taste
1 cup white sugar
3 tablespoons all-purpose flour
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk 2 cups flour and salt together in a bowl. Cut shortening into flour mixture using a pastry blender or a fork until crumbly.
  • Whisk water, eggs, and lemon juice together in a separate bowl; stir into flour mixture until dough forms a ball. Split dough into halves; roll each half into about a 9x13-inch rectangle. Press 1 rectangle into the bottom of a 9x13-inch baking dish.
