This crisp and tangy salad from our Test Kitchen hits the spot on warm afternoons and evenings. Sprinkling the cucumbers with salt and letting them sit draws out excess water so they stay nice and crisp.

Number Of Ingredients 6

1 medium cucumber, thinly sliced
1-1/2 teaspoons kosher salt
1/4 cup white vinegar
2 tablespoons snipped fresh dill
4-1/2 teaspoons sugar
1/4 teaspoon coarsely ground pepper

Steps:

  • Place cucumber slices in a colander over a plate; sprinkle with salt and toss. Let stand for 15 minutes, stirring once. Rinse and drain well., In a large bowl, combine the vinegar, dill, sugar and pepper. Add cucumbers and toss to coat. Cover and refrigerate for at least 15 minutes before serving.

½ cucumber, very thinly sliced
salt and ground black pepper to taste
¼ cup sour cream, or to taste
¼ cup vinegar, or more to taste
¼ cup plain yogurt
2 tablespoons mayonnaise
½ lime, juiced
2 teaspoons white sugar
1 teaspoon dill
½ red onion, thinly sliced
½ stalk celery, thinly sliced

Steps:

  • Place cucumber slices in a colander. Generously sprinkle salt over cucumber; let sit until water starts to bead on the slices, about 10 minutes. Drain water from cucumber slices.
  • Whisk sour cream, vinegar, yogurt, mayonnaise, lime juice, sugar, and dill together in a large bowl until dressing is smooth. Mix cucumber, onion, and celery into dressing until evenly coated; season with salt and pepper.

This is the BEST cucumber salad I've ever had. My mom showed me how to make this one. It is fantastic on salmon, I wont even eat salmon anymore if I don't have this salad to throw on top. It's also Atkins friendly c:

1-2 large cucumber(s) seeded and peeled
1/3 c sour cream
2 Tbsp mayonnaise
1 tsp dill
1/4 tsp garlic (to taste)
juice from half a lemon (or to taste)
worcestershire sauce (to taste)
salt and pepper (to taste)

Steps:

  • 1. Peel, seed, and chop up cucumbers. Mix all ingredients in a bowl. It is best if it's left in the fridge overnight, or at least for a couple of hours to let all the flavors mingle c: Note: Don't add too much garlic because it will overpower the other flavors, sometimes I even leave it out.

Don't skip salting the cucumbers, this will remove the excess moisture in the cucumbers so that the salad is rich and creamy instead watery.

1 English cucumber, sliced, about ⅛-inch thick
1 small sweet onion, thinly sliced
½ cup sour cream (125 ml)
¼ cup chopped fresh dill (60 ml)
Juice of ½ lemon
1 tsp grated fresh horseradish (5 ml)
Coarse salt and freshly cracked black pepper

Steps:

  • Place sliced cucumbers in a colander over a bowl. Sprinkle with salt. Allow to drain for 20 minutes. Remove juice and discard.
  • Add drained cucumber to a large bowl. Add onion, dill, horseradish and lemon juice. Mix to combine. Toss with sour cream. Season the salad with salt and pepper to taste.
