This Red Wine Vinaigrette is easy and fabulous. 5 pantry ingredients (including salt!) is all it takes for the easiest vinaigrette, ever.

1/2 cup olive oil
1/4 cup red wine vinegar
1 teaspoon Dijon mustard ((see note 1))
1 teaspoon dried oregano ((see note 2))
Salt and freshly ground black pepper ((see note 3))

Steps:

  • In a small bowl whisk together olive oil, vinegar, Dijon mustard, and oregano. Season to taste with salt and pepper (I like 1/2 teaspoon salt and 1/4 teaspoon pepper).

1/3 cup lightly packed coarsely chopped fresh tender herbs, such as parsley, dill, tarragon, and chives
1 large hard-cooked egg, coarsely chopped
Kosher salt and freshly ground pepper

Steps:

  • Stir together vinegar, mustard, oil, capers, and herbs. Top with egg; season with salt and pepper. Serve with poached, sauteed, steamed, roasted, or grilled fish.

4 ounces honey
4 ounces fennel seeds (in cheese clothe)
2 ounces garlic (minced)
4 ounces shallots (minced)
16 ounces olive oil

Steps:

  • Place all ingredients except for oil in large container.
  • Place in immersion blender in container and blend. While in container slowly add oil blending ingredients to mixture to create emulsification. Place in container, label, date and refrigerate.
