THAI GINGER BALSAMIC SALAD DRESSING



Thai Ginger Balsamic Salad Dressing image

Fresh ginger and freshly squeezed lime join balsamic vinegar and Dijon mustard in this salad dressing that also makes a lovely marinade.

¾ cup olive oil
¼ cup balsamic vinegar
1 clove garlic, minced
1 ½ tsp fresh ginger, grated
2 tsp sesame oil
2 tsp freshly squeezed lime juice
2 tsp sesame seeds
salt and freshly ground pepper, to taste
cayenne pepper

Steps:

  • In a small skillet over medium heat, toast sesame seeds until golden. Cool seeds to room temperature.
  • Whisk together all ingredients and store, refrigerated, in an airtight bottle.

1/3 cup rice vinegar
3 tablespoons finely chopped onion
2 tablespoons minced fresh gingerroot
2 tablespoons soy sauce
1 tablespoon honey
1/4 teaspoon pepper
3/4 cup olive or peanut oil

Steps:

  • In a blender, combine the first six ingredients; cover and process until blended. While processing gradually add oil in a steady stream. Chill until serving.

3 cloves garlic, minced
2 tablespoons minced fresh ginger root
¾ cup olive oil
⅓ cup rice vinegar
½ cup soy sauce
3 tablespoons honey
¼ cup water

Steps:

  • In a 1 pint glass jar or larger, combine the garlic, ginger, olive oil, rice vinegar, soy sauce, honey, and water. Cover the jar with a tight fitting lid, and shake well. Remove lid, and heat jar in the microwave for 1 minute just to dissolve the honey. Let cool, and shake well before serving. Store covered in the refrigerator.
