FLAKY TENDER BISCUITS
These biscuits are light, flaky and tender. So good with breakfast or serve them with strawberries and cream. Only mix the dough until it comes together. I cannot stress enough that this dough should not be overworked and that a light hand is needed. If you end up with a hard and doughy biscuit, you will know to mix the dough less the next time. Steps:
- Preheat oven to 400 degrees F (205 degrees C) and place rack in center of oven. Line a baking sheet with parchment paper.
- In a large mixing bowl, sift or whisk together the flour, baking powder, salt and sugar. Cut the butter into the dry ingredients until the mixture resembles coarse crumbs (use pastry blender, two knives, or fingertips). Add the milk and slightly beaten egg and stir until just combined. (The texture should be sticky, moist and lumpy.).
- Place mixture on a lightly floured surface and knead the dough gently until it comes together and is a smooth dough.
- Roll out dough to 1/2 inch (1.25 cm) thickness. Cut out biscuits with a lightly floured round cookie cutter. Place on prepared baking sheet and brush the tops with the beaten egg and milk mixture and bake for about 10 - 15 minutes or until the tops are golden brown and a toothpick inserted in the center of the biscuit comes out clean. Remove from oven and place on a wire rack. Serve warm with butter.
- Makes about 12 3-inch (7.5 cm) biscuits.

- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- Using your hands or a pastry cutter, incorporate the butter into the dry ingredients, leaving large chunks.
- Fold in the buttermilk until a thick dough forms.
- Lightly flour a clean surface and dump the dough onto it. Bring the dough together until it comes together in one large piece.
- Roll out with a rolling pin to about 1 ½-2 inches (4-5 cm) thick. Using a biscuit cutter or small glass, cut out 2-3-inch (5-7 cm) rounds and place them on the prepared baking sheet. It's okay if the biscuits are touching.
- Bake for 18-20 minutes, or until golden brown.
- Brush the biscuits with melted butter.
- Serve as desired.

TENDER & TASTY PIZZA BISCUITS - CASSIE
These tender, tasty biscuits are my kids favorites...I used to have these made for when they got home from school...they love dipping them in pizza sauce...You could add other veggies if you like...I never make them the same way twice....this is just what I used today! My daughter says they remind her a lot of Cheddar Bay Biscuits...:) Enjoy!

- Preheat oven to 375 degree F. I then lined a baking sheet with parchment paper, you could also just spray a sheet with non stick cooking spray. In a large bowl, I mix the flour, cornmeal, baking powder, basil, oregano, garlic powder and salt.
- I then add this to my food processor. Add the butter and pulse till forms crumbs. ( Can cut in the butter with knives or pasty blender as well, just easier with food processor.) I then pour back into bowl.
- Stir in the onion, pepperoni and cheese.
- In a small bowl, whisk the eggs with the milk. Stir this into the dry mixture, until well blended.
- Turn out onto a well floured surface and knead 5 - 6 times.
- Cut in half and with floured fingers, pat each half into a circle about 1 inch thick. You could cut into triangles or I use my biscuit cutter. I also used the scraps and shaped with my fingers.
- Place on prepared baking pan, about 1 inch apart. I then used a pastry brush and brushed each biscuit with buttermilk, then sprinkled with more Parmesan. Bake for 20 - 25 minutes or until golden. If you make them smaller, adjust baking time. Serve immediately. My kids like dipping them in pizza sauce. Enjoy!
- They heat up nicely in microwave.
TENDER, FLAKY, BUTTERMILK BISCUITS
The kids were hinting for me to make some biscuits...I hadn't made this particular recipe in years, but remembered how tender and flaky they were...and they didn't let me down...serve them hot out of the oven...once buttered of course... Enjoy!

- 1. Preheat oven to 485 degree F. Sift the dry ingredients in a medium bowl.
- 2. Slice the butter into pats and with fingers, rub the butter into the flour, until you have pieces the size of large and small peas.
- 3. Stir the buttermilk into the flour with a fork, just until the dough starts to come together. Using your hands, start kneading the dough to incorporate all of the flour. If the dough is not sticky, add more milk.
- 4. Turn the dough out onto a floured surface and fold over itself 2 or 3 times ( this is what makes the layers.) Just fold and push 3 times. With your hands, pat out dough to 3/4 inch thickness. Cut out dough using a 3 inch biscuit cutter - DO NOT TWIST THE CUTTER! Twisting will seal sides, and keep biscuits from rising correctly.
- 5. Place biscuits on a greased baking sheet or cake pan, so they almost touch. Brush tops with buttermilk or melted butter.
- 6. Bake for 10 - 12 minutes or until desired brownness occurs. I turn the pan half way through baking time.
- 7. Brush the biscuits when taken from the oven and serve them hot. Enjoy with honey, butter, jam or gravy!
PIZZA BOMBS RECIPE BY TASTY

- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and grease with butter.
- Cut each biscuit in half. Press each half into a circle with your thumb.
- Place a small dollop of marinara sauce, 1 pepperoni, and 1 cube of mozzarella cheese in the center of each biscuit round.
- Bring the edges up and over, pressing them together and being sure to leave no gaps for the filling to leak out. Lay the pizza bombs on the prepared baking sheet.
- Combine the melted butter, garlic, salt, pepper, and Italian seasoning in a small bowl.

- 1. Preheat oven to 350 degree F. Prepare a 9 inch square baking pan - or ( I used an oval casserole dish) with nonstick spray. Carefully separate the biscuits so you have a top and a bottom.
- 2. Press half of the biscuits on the bottom of baking dish. Set aside.
- 3. In a skillet, brown ground beef, onion, garlic and pepper, until beef is cooked and veggies tender. Drain Stir in tomato sauce, garlic salt and chili powder, simmer for about 5 minutes.
- 4. Meanwhile, in a bowl, add half cheese, sour cream and egg...mix well.
- 5. Remove skillet from heat and stir in sour cream mixture, thoroughly.
- 6. Now spread the ground beef mixture evenly over the biscuits.
- 7. Top with the other halves of biscuits. Sprinkle with remainder of cheese.
- 8. Bake for 20 - 25 minutes or until bubbly and golden brown. Serve with extra cheese, onion, sour cream...or serve as is...enjoy...it sure is tasty.

Kids love to help with these. Make with any topping you wish, I just use whatever I have on hand. Tonight it was Pepperoni, fresh Mozzarella, fresh grated Parmesan, green onion, real bacon bits and some spices. Enjoy!

- Preheat oven to 350 degree F. Get out a baking sheet and spray with nonstick cooking spray. Spread each biscuit out to about 6 inch rounds.
- Spread each with sauce, I used about 1 1/2 tablespoons per biscuit. I then sprinkled with a pinch of oregano and garlic powder.
- Sprinkle with desired amount of shredded Mozzarella, I used about 1 1/2 Tbs per biscuit.
- Next, a pinch of green onion. I Julienne the pepperoni, One slice per biscuit. Next, about 1 tsp bacon bits per biscuit. Sprinkled each with a pinch of dried parsley.
- Place in oven and bake for 15 - 18 minutes, depending how crisp you like them Can salt, pepper or sprinkle with more Parm or even hot pepper flakes. My kids love these. Try them sometime, even the big kids love em!
