Quick, easy, healthy and delicious vegetarian main course. It's a perfect meatless weeknight dinner that can be on the table in half an hour, start to finish.

1 can Black Beans
1 can Diced Green Chiles
1 can Tomato
2 cup Frozen Corn
1 bunch Scallion
1/2 teaspoon Dried Oregano
1 teaspoon Chili Powder
1 teaspoon Ground Cumin
12 White Corn Tortilla
1/2 teaspoon Salt
2 cup Cheddar Cheese
to taste Salsa
to taste Sour Cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Combine Black Beans (1 can), Tomato (1 can), Frozen Corn (2 cup), Diced Green Chiles (1 can), Scallion (1 bunch), Chili Powder (1 teaspoon), Ground Cumin (1 teaspoon), Dried Oregano (1/2 teaspoon), and Salt (1/2 teaspoon).
  • Lightly oil a 2-3 quart casserole dish. Line the bottom with half of the White Corn Tortilla (12), allowing them to overlap in the middle.
  • Scoop on half the bean mixture. Sprinkle half the Cheddar Cheese (2 cup) on top. Add another layer of tortillas; the rest of the bean mixture. The rest of the cheese.
  • Bake in the center of the oven for 12-15 minutes, until the cheese is bubbling.
  • Cut into squares and serve with your favorite Salsa (to taste) and Sour Cream (to taste) to spoon on top.

2 avocados, pitted, peeled, and diced
½ cup corn, cooked
½ red onion, minced
½ jalapeño, seeded and minced
½ cup canned black bean, drained
1 lime, juiced
salt, to taste
pepper, to taste
tortilla chip, for serving

Steps:

  • In a medium bowl, combine the avocado, corn, red onion, jalapeño, black beans, lime juice, salt, and pepper. Mix together until fully incorporated.
  • Serve with tortilla chips.
  • Enjoy!

This recipe is from "Alive" magazine and it is very tasty and satisfying. It is a meal in itself and peppy flavor. I cut back on the rice and cheese and used HOT salsa. The corn I used were canned but you can use frozen. The carrots were fresh shoe string cut.

3/4 cup cooked brown rice
3/4 cup low sodium cheddar cheese, grated
1/2 cup salsa
1/3 cup corn kernel
1/3 cup peas, frozen
1/3 cup carrot, shoestring
1 tablespoon low-fat mayonnaise
1 teaspoon cumin, ground
1/2 teaspoon chili powder
4 whole wheat tortillas

Steps:

  • Mix together the cooled rice, veggies, cheese, mayo salsa, cumin & chili powder.
  • Divide the mix between the 4 tortillas, roll up the tortilla tucking in the sides.
  • Wrap tortillas in foil and heat in 375 oven for apprx 20 - 25 minutes or until the ingredients are hot through and the cheese has melted.
  • Enjoy.
