Velvety smooth Cream of Pea Soup recipe using fresh or frozen peas. This beautiful green soup is creamy, healthy and easy to make on the stove top!

2 tablespoons butter
1 small yellow onion (chopped)
2 cloves garlic (minced)
3 cups vegetable broth
3 cups fresh shelled green peas
1/2 teaspoon salt
1/3 teaspoon pepper
1/4 cup heavy whipping cream

Steps:

  • Melt the butter in a large soup pot over medium high heat. Add chopped onion and minced garlic and cook until soft, stirring frequently so they don't burn, about 5 minutes.
  • Add vegetable broth, peas, salt and pepper. Bring to a boil and then cover and simmer until the peas are soft, about 15-20 minutes.
  • Using a immersion blender, blend the soup until creamy. Alternatively you could use a blender. If using a blender, carefully put soup in blender in batches, and pulse until creamy, being careful as the soup is very hot. Put soup back in pot if using a blender.
  • Add in heavy cream and stir to thicken up. Season with salt and pepper to taste and serve. Optional - add some fresh parsley or mint on top before serving.

2 cups split peas
1 teaspoon salt
1 tablespoon butter
1/2 cup finely diced salt pork
1 medium onion, well chopped
1 medium carrot, well chopped
2 leeks (the green parts only, well chopped)
1 cup spinach, well chopped
bay leaf
1 pinch thyme
1 cup stock
salt, to taste
1 teaspoon sugar
1 tablespoon butter
1/2 cup heavy cream

Steps:

  • Cover two cups of split peas with water and allow to soak for a little over one hour.
  • Pour off the water and put the peas into a large saucepan with one quart fresh water. Add salt. Bring to a boil and skim the water, the cover the pan and simmer steadily.
  • Melt one tablespoon of butter in a soup kettle and drop in 1/2 cup of finely diced salt pork. Cook until the pork begins to brown. Add onion and saute until soft but not brown. Now add the carrot, tops of the leeks and spinach. Drop in a small piece of bay leaf and a pinch of thyme.
  • Cook for a few minutes more and then pour in the partly cooked peas with their water. Continue to cook for about one hour, or until the peas are very soft. Rub the soup through a fine sieve and add one cup of stock, then bring back to a boil.
  • Season to taste with salt and add sugar, butter and heavy cream.

1/2 pound dried whole peas
1/2 pound dried green split peas
1 meaty ham bone
3 quarts water
1 large onion, chopped
1 medium carrot, chopped
2 celery ribs, chopped
1/2 cup chopped celery leaves
1 teaspoon bouquet garni (mixed herbs)
1 tablespoon minced fresh parsley
1 bay leaf
1 teaspoon salt
1/4 teaspoon pepper
1/2 pound smoked sausage, chopped, optional
SPAETZLE DUMPLINGS:
1 cup all-purpose flour
1 large egg, beaten
1/3 cup water

Steps:

  • Cover peas with water and soak overnight. Drain, rinse and place in a Dutch oven. , Add ham bone, water and remaining soup ingredients except sausage and dumplings. Bring to a boil. Reduce heat; cover and simmer 2 to 2-1/2 hours. , Remove ham bone and skim fat. Remove meat from bone; dice. Add ham and, if desired, sausage to pan. , For dumplings, place flour in a small bowl. Make a depression in the center of the flour; add egg and water and stir until smooth. , Place a colander with 3/16-in.-diameter holes over simmering soup; transfer dough to the colander and press through with a wooden spoon. Cook, uncovered, 10-15 minutes. Discard bay leaf. Freeze Option: Prepare soup without dumplings and freeze in serving-size portions to enjoy for months to come.

1 tbsp olive oil , plus a drizzle to serve
2 leeks , finely sliced
4 small garlic cloves , crushed
650-800ml hot veg stock
80g watercress
400g frozen peas
1 small lemon , zested and juiced
small bunch of parsley , finely chopped
dairy-free crème fraîche and crusty bread, to serve (optional)

Steps:

  • Heat the oil in a large saucepan over a medium heat. Add the leeks and garlic and fry for 7-10 mins or until softened and translucent.
  • Pour in the hot stock and simmer for 5-10 mins. Stir through the watercress, reserving a few leaves for garnish, then the peas, and cook for 5 mins until wilted. Use a hand blender or processor and whizz until smooth. Stir through the lemon juice and zest, then season to taste. Stir through half the parsley. Ladle into bowls and top with the remaining parsley, reserved watercress and a drizzle of olive oil. Swirl through some crème fraîche, then serve with crusty bread, if you like.

1/2 pound sliced bacon, diced
1 large onion, chopped
2 ribs celery, sliced
1 pound dried green split peas
2 quarts water
2 medium potatoes, peeled and diced
2 cups diced fully cooked ham
2 teaspoons salt
1 bay leaf
1/4 teaspoon pepper
1 cup heavy whipping cream

Steps:

  • In a Dutch oven or soup kettle, cook bacon over medium heat until crisp. Using a slotted spoon, remove bacon to paper towels; drain, reserving drippings. Add onion and celery to drippings. Saute until vegetables are tender; drain. Add the peas, water, potatoes, ham, salt, bay leaf and pepper. Bring to a boil. Reduce heat; cover and simmer for 45 minutes or until peas are very tender, stirring occasionally. Discard bay leaf., Cool slightly. Process in small batches in a blender until smooth. Return to Dutch oven; stir in cream. Heat through (do not boil). Garnish with reserved bacon.

1/2 teaspoon salt (optional)
1 teaspoon thyme
1 teaspoon allspice
1 cup fat free chicken broth
10 ounces frozen baby peas
1 cup lite evaporated milk
2 tablespoons flour

Steps:

  • In large nonstick saucepan over high heat, combine butter buds, seasonings, chicken broth and baby peas.
  • Bring to a boil, reduce heat to medium and cook for 5 minutes or until baby peas are tender; stir occasionally.
  • Do not drain.
  • In blender, combine milk and flour.
  • Blend on high for 1 minute or until smooth.
  • Stir milk mixture slowly into soup mixture. Stirring constantly over medium heat, bring soup to boil for 1 minute. Serve hot. Makes 3 servings.

1/4 cup butter, cubed
1/4 cup all-purpose flour

1 tbsp olive oil
onion , finely chopped
1 garlic clove , crushed
650g frozen petits pois
750ml vegetable stock
6 rashers streaky bacon
1 tbsp butter , optional

Steps:

  • Heat the oil in a saucepan. Add the onion and gently cook over a medium heat for 5-6 mins until softened but not coloured. Add the garlic and cook for a further min. Stir in three-quarters of the petit pois, then pour in the stock. Bring to the boil and simmer for 10-12 mins. Meanwhile, grill the bacon until crisp.
  • Allow to cool for a few mins, then carefully transfer to a food processor and whizz until smooth. You might need to do this in two batches, depending on the size of your processor.
  • Return the soup to the pan and add the remaining petit pois. Bring to the boil and simmer for 2 mins or until the whole peas are tender. Season to taste, then stir in the butter, if using. Break the bacon into pieces and scatter over bowls or mugs of soup. The soup can be made up to a day ahead; just grill the bacon on the day.
