SPICY ITALIAN SAUSAGE PASTA



Spicy Italian Sausage Pasta image

This spicy Italian sausage pasta is fast, easy, and uses minimal ingredients. It's the perfect weeknight dinner that tastes like it came from a restaurant!

8 ounces uncooked penne
10.6 ounces hot Italian sausages (crumbled (see note))
3 cloves garlic (minced)
1/2 cup chicken broth or white wine
1/2 tablespoon flour
1 (14 fluid ounce) can diced tomatoes (with juices)
1/2 cup heavy/whipping cream
Salt & pepper (to taste)
6 large leaves basil (sliced/torn into small pieces)
Freshly grated parmesan cheese (to taste)

Steps:

  • Bring a large pot of salted water to a boil. Cook pasta al dente according to package directions.
  • Take the sausage meat out of the casings and crumble it into a deep skillet. Cook it for about 5 minutes, stirring occasionally, over medium-high heat until browned.
  • Once the sausage is browned, take it out of the pan and set it aside. Drain the fat.
  • Add the garlic, followed by the chicken broth to the skillet. Sprinkle the flour in. Whisk it until the flour has dissolved, and scrape any browned bits from the bottom of the pan. Cook this mixture until it's significantly reduced (should only take a minute or two in total).
  • Add in the tomatoes, cream, and the sausage meat. Cook the sauce for a few more minutes until it's thickened to your liking. Season with salt & pepper as needed.
  • Just prior to serving, add in the torn basil leaves and then toss with the drained pasta. Serve with freshly grated parmesan cheese.

This Italian Sausage Tomato Sauce is loaded with tomatoes and spices. It's great over zucchini noodles, pasta, mashed potatoes, and even on its own.

3 tablespoons extra virgin olive oil (divided)
1 cup white onions (chopped)
1 cup red bell peppers (chopped)
2 cloves garlic (minced)
1 dried bay leaf
⅛ teaspoon crushed red pepper
1 teaspoon dried parsley
salt and black pepper
2 28-ounce cans whole tomatoes with juice
¾ cup water
1 teaspoon brown sugar
1 tablespoon pesto
4 medium fresh Italian sausage

Steps:

  • In a saucepan, heat 2 tablespoons of the olive oil over medium heat.
  • Add the onions, and cook 4-5 minutes until they are soft and golden.
  • Add the bell peppers, garlic, bay leaf, crushed red pepper, dried parsley, salt, and black pepper.
  • Cook everything for about 3 minutes. Remove the bay leaf, and set aside.
  • Add the 2 cans of whole tomatoes including the juice. With a hand blender, crush the tomatoes. Be careful not to blend the tomatoes too much. You should leave a few chunks of tomatoes in the sauce.
  • Add the brown sugar and water. Cook for more 3 minutes.
  • Return the bay leaf to the pan.
  • Add the pesto, and cover the pan. Once it boils, lower the heat to maintain a low simmer.
  • Don't forget to stir occasionally.
  • Meanwhile in a skillet, heat the remaining 1 tablespoon of olive oil.
  • Add the Italian sausages, and sauté until they become brown on the outside but still raw inside.
  • Cut the Italian sausages into three pieces each, and add to the tomato sauce. Cook on low heat for about 1½ hours. You can also cook the sauce for longer (3-4 hours) if you have the time.
  • Before serving, remove the bay leaf. Serve it over spaghetti or zucchini noodles.

Italian Sausage with Peppers & Onions image

2 Tbsp oil
2 lbs sweet Italian Sausage links
2 bell peppers, sliced
2 onions, sliced
3 cloves garlic, minced
15 oz can tomato sauce
14.5 oz can diced tomatoes with juice
1/2 tsp salt
1 tsp Italian seasoning
1 tsp onion powder
1 Tbsp brown sugar
Hoagie buns
Provolone cheese slices
Parmesan cheese

Steps:

  • Add oil to a large skillet over high heat.
  • Brown the sausages well on all sides, I like to get a good amount of color on them. Color=flavor!
  • Remove the sausages to a platter and set aside.
  • Add the bell peppers and onions to the same skillet and cook for about 5 minutes, getting them a little bit brown as well.
  • Reduce the heat to medium and add the garlic to the veggie mixture for the last minute.
  • Next add the sausages back to the pan and dump in the tomato sauce and diced tomatoes with juice, the salt, Italian seasoning, onion powder and brown sugar.
  • Bring to a boil then reduce to low and simmer covered for an hour or until sausages are cooked through.
  • When you are ready to serve, toast your hoagie buns on both sides, then add the cheese to the inside of the buns and place back in the oven to broil until the cheese is melted.
  • Add the Italian Sausage & peppers & onions to each hoagie and sprinkle with lots of Parmesan cheese. Serve with some of the tomato sauce on the side for dipping.
  • My kiddos like their sausages cut up in bite size pieces before I put it on their hoagies, but that is optional.

ITALIAN SAUSAGES SWEET & HOT IN TOMATO SAUCE

My husband loves Italian sausage and spicey, so this is what I tested out and it came out just perfectly. It's spicey but if you want it really hot just add more red pepper flakes and adjust to your own spicey senses. This recipe is just kicked up enough for my husband. Enjoy

2 pounds hot italian sausage (casings removed)
3 pounds sweet italian sausage(casings removed)
1 1/2 c red onions chopped
1/2 c vidalia onion chopped
1 1/2 Tbsp chopped garlic
1 Tbsp fennel seeds
1 tsp salt
1 Tbsp crushed red pepper
2 28 oz. cans whole italian plum tomatoes/chopped with all the juices
1 12 oz. can tomato paste
1 Tbsp oregano
6 Tbsp fresh basil leaves chopped or more if you like
1 pound cavatappi or penne pasta
ricotta cheese and grated parmaesano/regiano

Steps:

  • 1. Remove the sausages from the casings and crumble. Put a little olive oil in bottom of a large pot and start to brown and crumble until all redness is gone. Usually takes about 10 minutes. Remove with slotted spoon and leave fat in the pan. To the remaining fat in the pan add the onions and garlic on low heat until soft, about 3 or 4 minutes. Add the fennel seeds, salt and red pepper flakes, saute still on low, stirring until fragrant. Add the tomatoes, all the juices too and tomato paste, oregano and cooked sausage and fresh basil cook and stir until thick and fragrant. Leave on a low flame for 45 minutes. Taste and adjust seasoning to your taste.
  • 2. Meanwhile, cook pasta in boiling salted water. Drain and toss with the sauce. If you desire to add ricotta do that or just top with grated cheese.
  • 3. This sauce freezes well.

Meat sauce is one of the recipes many American home cooks start with. It seems so easy; brown some hamburger, pour in a jar of marinara, and presto! Meat sauce. Not so fast, friends. Made that way, your sauce may be thin-tasting, sour, sweet, or - worst of all - dry and chewy. Meat sauce with deep flavor and succulent texture isn't harder to make; it just needs more time and a low flame. This recipe from the New York chef Sara Jenkins, who grew up in Tuscany and has cooked all over Italy, shows how it's done. Caramelization is involved; dried pasta and canned tomatoes are best practice; and pork, not beef, is the meat of choice. If your sausage meat seems timidly flavored, feel free to add chopped garlic, chile flakes, fennel seed and/or dried herbs like oregano and sage to the meat as it browns.

1 pound sweet Italian sausage or bulk sausage
Extra-virgin olive oil
1 onion, minced
1 carrot, minced
1 celery stalk, minced
1/4 cup minced flat-leaf parsley, plus extra for garnish
1 28-ounce can whole tomatoes, preferably San Marzano, with its juice
1 large sprig fresh thyme
1 large sprig fresh rosemary
3 tablespoons tomato paste
Salt
Ground black pepper
1 pound tubular dried pasta such as mezzi rigatoni, paccheri or penne
Freshly grated Parmesan cheese, for garnish, optional

Steps:

  • With the tip of a small, sharp knife, slit open the sausage casings. Crumble the meat into a wide, heavy skillet or Dutch oven and set over medium-low heat. If the meat is not rendering enough fat to coat the bottom of the pan as it begins to cook, add olive oil one tablespoon at a time until the meat is frying gently, not steaming. Sauté, breaking up any large chunks, until all the meat has turned opaque (do not let it brown), about 5 minutes.
  • Add onion, carrot, celery and parsley and stir. Drizzle in more oil if the pan seems dry. Cook over very low heat, stirring often, until the vegetables have melted in the fat and are beginning to caramelize, and the meat is toasty brown. This may take as long as 40 minutes, but be patient: It is essential to the final flavors.
  • Add tomatoes and their juice, breaking up the tomatoes with your hands or with the side of a spoon. Bring to a simmer, then add thyme and rosemary and let simmer, uncovered, until thickened and pan is almost dry, 20 to 25 minutes.
  • Mix tomato paste with 1 cup hot water. Add to pan, reduce heat to very low, and continue cooking until the ragù is velvety and dark red, and the top glistens with oil, about 10 minutes more. Remove herb sprigs. Sprinkle black pepper over, stir and taste.
  • Meanwhile, bring a large pot of salted water to a boil. Boil pasta until just tender. Scoop out 2 cups cooking water, drain pasta and return to pot over low heat. Quickly add a ladleful of ragù, a splash of cooking water, stir well and let cook 1 minute. Taste for doneness. Repeat, adding more cooking water or ragù, or both, until pasta is cooked through and seasoned to your liking.
  • Pour hot pasta water into a large serving bowl to heat it. Pour out the water and pour in the pasta. Top with remaining ragù, sprinkle with parsley and serve immediately. Pass grated cheese at the table, if desired.
