My family loves to grill in the summer, and this is our go-to recipe when hosting friends and family. Every bite is full of flavor and the chicken is always tender and juicy. -Joy Yurk, Grafton, Wisconsin

2-1/2 cups white wine
2 medium onions, finely chopped (1-1/2 cups)
1/2 cup lemon juice
10 garlic cloves, minced
16 chicken drumsticks
3 bay leaves
1 can (15 ounces) tomato puree
1/4 cup honey
1 tablespoon molasses
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
2 tablespoons white vinegar

Steps:

  • For marinade, in a large bowl, combine wine, onions, lemon juice and garlic. Pour 2 cups marinade into a large shallow dish. Add chicken; turn to coat. Cover and refrigerate 4 hours to overnight. Add bay leaves to remaining marinade; cover and refrigerate., Meanwhile, in a large saucepan, combine tomato puree, honey, molasses, salt, thyme, cayenne, pepper and remaining marinade. Bring to a boil. Reduce heat; simmer, uncovered, 35-40 minutes or until liquid is reduced by half. Remove from heat. Remove bay leaves; stir in vinegar. Reserve 1 cup sauce for serving; keep warm., Drain chicken, discarding marinade in bag. Grill chicken, covered, on an oiled rack over indirect medium heat 15 minutes. Turn; grill 15-20 minutes longer or until a thermometer reads 170°-175°, brushing occasionally with remaining sauce. Serve chicken with reserved sauce.

Steps:

  • Simmer 1 cup ketchup, 1/2 cup cider vinegar, 3 tablespoons each molasses and brown sugar, 1 tablespoon each dried mustard and soy sauce, 2 teaspoons Worcestershire sauce, 1 cup water, and kosher salt and pepper to taste until thickened, about 30 minutes. Preheat a grill to medium-high on one side. Season 4 bone-in, skin-on chicken breast halves with salt and pepper. Grill over direct heat until golden and crisp on both sides, about 5 minutes. Transfer to a bowl and toss with 1 cup of the sauce. Place on the cooler side of the grill; cover and cook, basting once, until the meat is glazed and reaches 165, 25 to 30 minutes.

3 to 4 pounds meaty chicken pieces (breast halves, thighs, and drumsticks), skinned
1 1/2 cups dry sherry
1 cup finely chopped onion (1 large)
1/4 cup lemon juice
2 bay leaves
6 cloves garlic, minced
1 cup reduced sodium broth
1 can (6 oz) tomato paste
1/4 cup honey
3 tablespoons mild-flavor molasses
1/4 teaspoon salt
1/2 teaspoon dried thyme, crushed
1/4 to 1/2 teaspoon ground red pepper
1/4 teaspoon black pepper
2 tablespoons vinegar

Steps:

  • Place chicken in a resealable plastic bag set in a shallow dish. For marinade: In a medium bowl, stir together sherry, onion, lemon juice, bay leaves, and garlic. Pour over chicken; seal bag. Marinate in the refrigerator for 2 to 4 hours, turning bag occasionally. Drain chicken, reserving marinade. Cover and chill chicken until ready to grill.
  • For sauce: In a large saucepan, combine the reserved marinade, the broth, tomato paste, honey, molasses, salt, thyme, red pepper, and black pepper. Bring to boiling. Reduce heat and simmer, uncovered, about 30 minutes or until reduced to 2 cups. Remove from heat; remove bay leaves. Stir in vinegar.
  • For a charcoal grill, arrange medium-hot coals around a drip pan. Test for medium heat above the pan. Place chicken pieces, bone sides down, on grill rack over drip pan. Cover and grill for 50 to 60 minutes or until chicken is no longer pink (170° F for breasts, 180° F for thighs and drumsticks), brushing with some of the sauce during the last 15 minutes of grilling. (For a gas grill, preheat grill. Reduce heat to medium. Adjust for indirect cooking. Grill as above.) To serve, reheat the remaining sauce and pass with the chicken.

2 garlic cloves, minced
1/2 cup chili sauce
3 tablespoons brown sugar
2 teaspoons salt-free seasoning blend, divided
3/4 teaspoon cayenne pepper, divided
2 teaspoons ground mustard
2 teaspoons chili powder
8 boneless skinless chicken breast halves (4 ounces each)

Steps:

  • In a small saucepan, heat oil over medium heat. Add garlic; cook and stir 1 minute. Add chili sauce, brown sugar, 1 teaspoon seasoning blend and 1/4 teaspoon cayenne. Bring to a boil; cook and stir for 1 minute. Remove from heat., In a small bowl, mix mustard, chili powder and remaining seasoning blend and cayenne; rub over chicken. Lightly coat grill rack with cooking oil., Grill chicken, covered, over medium heat for 4 minutes. Turn; grill 4-6 minutes longer or until a thermometer reads 165°, brushing tops occasionally with chili sauce mixture.

8 chicken pieces (of your choice, i.e. Thighs,breast on the bone,drumsticks)
2 teaspoons poultry seasoning
1 clove crushed garlic
1 cup tomato sauce (ketchup)
1 cup Worcestershire sauce or 1 cup soya sauce
1 cup fruit chutney
1 cup olive oil or 1 cup sunflower oil
3 tablespoons lemon juice
2 tablespoons honey
salt and pepper

Steps:

  • Mix all ingredients together and pour over chicken and allow to stand for at least 1 hour.
  • If you can leave it over-night, even better!
  • Barbecue over coals slowly, turning often.
  • The trick is to not have your fire too hot so that the chicken cooks slowly allowing marinade to penetrate right through.
  • If the fire is too hot the marinade will burn and the chicken will be raw at the bone.

2 tablespoons lemon juice
2 tablespoons cider vinegar
1/4 cup packed brown sugar
2 teaspoons prepared mustard
1 teaspoon salt
1/2 to 1 teaspoon hot pepper sauce
1 bay leaf
1 garlic clove, minced
1/2 cup water
2 teaspoons Worcestershire sauce

Steps:

  • Combine all of the ingredients in a small saucepan; bring to a boil, stirring occasionally. Reduce heat; cover and simmer for 30 minutes., Discard bay leaf. Use as a basting sauce when grilling chicken, pork or beef.
