MOM'S QUICK COCOA CAKE
A recipe my Mom use to make when i was a little girl. That was always my birthday cake!

Steps:
- 1. Mix sugar, eggs, oil, soda. Then add cocoa, flour and milk.
- 2. Bake at 350 about 30 minutes, or until a toothpick comes out clean from the center of the cake.
- 3. Makes 1 9x13 pan or 2 round pans, or 24 cupcakes.
COCOA CAKE
THIS CAKE is so moist it doesn't need frosting. I simply sprinkle powdered sugar over the top. It's my favorite dessert to bring for potlucks, and there's never a piece left to take home! -Beulah Sak, Fairport, New York

- Preheat oven to 350°. In a large bowl, whisk flour, sugar, cocoa, baking soda and salt. Using a spoon, make 3 wells in the dry ingredients. Pour oil into the first, vinegar into another and vanilla into the third. Slowly pour water over all. Beat on low speed until thoroughly combined (batter will be thin). , Pour into a greased 8-in. square baking dish. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool in pan on a wire rack. Dust with confectioners' sugar.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine inch round pans.
- In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.
- Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.

MOM'S COCOA CINNAMON POUND CAKE
I'm not sure where my mom got this recipe, but she made it for us a lot when we were kids. Not very figure friendly, yet so yummy.

Steps:
- 1. Preheat oven to 325 degrees.
- 2. Grease and flour a 10-inch tube pan, or 3 quart bundt pan.
- 3. Cream butter until light and fluffy; add sugar gradually, cream together until well combined.
- 4. Add eggs, one at a time, beating well after each addition.
- 5. In separate bowl, sift together flour, salt, baking powder, cocoa powder, and cinnamon.
- 6. Add dry ingredients and milk, alternating between them, until all are added; beat just until combined; add vanilla.
- 7. Pour batter into prepared pan. Bake at 325 degrees for 1 1/2 hours, or until toothpick inserted in center comes out clean.
- 8. Cool 15 minutes in pan; then remove from pan to cool completely.
- 9. Drizzle with glaze and serve. This cake is also good served warm.

- Preheat oven to 350°F. Butter a 9- by 2-inch round cake pan and dust with flour, knocking out excess.
- Whisk together flour, cocoa, baking soda, and salt.
- Beat together butter and brown sugar with an electric mixer until pale and fluffy. Add eggs 1 at a time, beating well after each addition, then beat in vanilla.
- Add flour mixture and water alternately in batches, beginning and ending with flour and mixing just until combined.
- Pour batter into cake pan and bake in middle of oven until springy to the touch and a tester inserted in center comes out clean, 55 minutes to 1 hour. Cool in pan 1 hour. Invert onto a rack, then turn right side up and dust with confectioners sugar.
MY MOM'S CHOCOLATE CAKE
A simple, old-fashioned chocolate cake. Great with a chocolate glaze.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
- In a large saucepan, melt together the shortening and cocoa. Remove from heat and stir in sugar and egg. Mix buttermilk with baking soda, salt and vanilla, then blend into chocolate mixture. Beat in flour. Stir in hot water. Pour into prepared pan.
- Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
