SWEET SALSA CHICKEN
Sweet Salsa Chicken is a simple yet delicious weeknight main meal that the whole family will adore. Salsa dip is combined with mustard, honey, brown sugar and capsicum, then used as a marinade for our chicken. Baked until golden, the chicken is served with rice, pasta, vegetables or any side dish of your choosing - give it a go!

Steps:
- In a large bowl, add Salsa (300 gram), Yellow Mustard (2 tablespoon), Honey (1 tablespoon), Brown Sugar (1/2 cup) and Water (1 cup). Mix together until fully combined and add Red Bell Pepper (1) and Boneless, Skinless Chicken Breast (4).
- Cover the bowl with cling wrap and place in the fridge for 15 - 20 minutes to marinate.
- Transfer to a baking dish and cook at 180 degrees C for 40-45 minutes or until the chicken is cooked all the way through.
- Serve with White Rice (to taste) and enjoy!

Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!

- Preheat oven to 375 degrees F (190 degrees C)
- Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
- Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
- Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

- In a small bowl, combine the first seven ingredients. Pour 1-1/2 cups into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 2 hours. Cover and refrigerate remaining marinade. , Drain and discard marinade from chicken. SWEET SALSA DUMP CHICKEN - OAMC
The theory is you dump this in a bag and freeze to pull out later. There are many variations which I will post separately but it's amazingly easy to make these up and have a different "dump" chicken every week!

- For immediate cooking: Pre-heat oven to 350°F Place all ingredients into a large baking dish, turn chicken to coat.
- Bake until chicken juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).
- For freezing: Place all ingredients into a 1 Gallon freezer bag.
- Lay flat in freezer.
- To thaw and cook: Take the bag out of the freezer the night before, make sure the baggie is completely closed.
- Place the Bag on a refrigerator shelf to thaw.
- Preheat the oven to 350°F Empty the contents of the bag into a large baking dish and bake until the juices run clear (45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts).
SEAN'S SWEET SALSA
Steps:
- In a medium bowl mix together the garlic, ginger and onion with the lime juice. Stir in remaining ingredients and season to taste. Serve with chips, seafood and vegetables

MILD SWEET SALSA
I always like blazing salsas. That's just me. But when it comes to my daughter, or my family and guests, I need to have something for those who don't like pure fire. This is one of the salsas I use then. One thing I like about this one, is that the flavoring is a bit fresher and not as typical of the mild salsas that taste like diced tomatoes. I think the basil is the secret weapon- it has a little bite, but it is cool to the taste. Whatever it is, everyone seems to like it!
