CHIPOTLE CHICKEN CHEESESTEAKS

We substituted chicken breast strips for steak and added south-of-the-border heat for our Chipotle Chicken Cheesesteaks. They're ready to eat in 20 minutes.

2 teaspoons olive or vegetable oil
3/4 to 1 lb boneless skinless chicken breasts
1 cup sliced white onion
1 cup red or green bell pepper strips (or a mix)
2 teaspoons minced garlic
1/4 teaspoon dried thyme leaves
1 chipotle chile, minced
1 tablespoon adobo sauce (from can of chipotle chiles)
2 tablespoons Old El Paso™ fajita seasoning mix (from 1-oz package)
1 to 2 tablespoons water
1 cup shredded sharp Cheddar cheese (4 oz)
4 hoagie buns or bolillo rolls, split

Steps:

  • Heat 10- to 12-inch cast-iron skillet over medium heat. Add 1 teaspoon of the oil. Pound chicken between 2 sheets of plastic wrap or waxed paper until thin. Cut into small strips; place in skillet. Cook 5 minutes or until no longer pink; remove from skillet to plate.
  • Heat remaining teaspoon oil in same skillet. Add onion, bell pepper, garlic and thyme; cook 2 to 3 minutes or until onion and bell pepper are soft.
  • Stir in chile, adobo sauce, fajita seasoning mix and 1 tablespoon of the water; cook 1 to 2 minutes. Return chicken to skillet; cook 1 minute longer, adding remaining water if needed so fajita seasoning completely coats chicken. Remove from heat; stir in cheese until melted.
  • Divide mixture among buns.

1 1/2 pounds skinless, boneless chicken thighs
3 tablespoons extra-virgin olive oil
1/2 teaspoon paprika
Kosher salt and freshly ground pepper
Kosher salt and freshly ground pepper
1 large onion, thinly sliced
2 cloves garlic, finely chopped
1/2 cup pickled sweet or hot cherry peppers, sliced
4 soft hoagie rolls, split
6 slices American cheese (about 4 1/2 ounces), halved
Hot sauce and/or ketchup, for topping (optional)
Carrot and celery sticks, for serving (optional)

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil. Toss the chicken, 1 tablespoon olive oil, the paprika, 1/2 teaspoon salt and 1/4 teaspoon pepper in a bowl; spread in a single layer on the baking sheet. Roast until just cooked through, 15 minutes. Transfer the chicken to a cutting board; discard the foil and reserve the baking sheet. Heat 1 tablespoon olive oil in a skillet over medium-high heat; add the onion and cook, stirring occasionally, until golden, 6 to 8 minutes. Add the garlic, 1/4 teaspoon salt, and pepper to taste and cook, 1 minute. Remove from the heat and stir in the pickled peppers. Brush the insides of the rolls with the remaining 1 tablespoon olive oil; arrange cut-side up on the baking sheet and toast in the oven, about 2 minutes. Thinly slice the chicken and divide among the rolls. Top evenly with the onion mixture and the cheese. Return to the oven to melt the cheese, about 2 minutes. Top with hot sauce and/or ketchup and serve with carrot and celery sticks.

8 to 10 ounces beer
1 teaspoon Chicken Seasoning Blend, recipe follows
1 teaspoon chipotle steak seasoning
2 cups shredded melting cheese blend
2 tablespoons olive oil
1 white onion, chopped
1 1/2 pounds shaved chicken breast
1 to 2 teaspoons Chicken Seasoning Blend
1/4 cup chicken stock, beer or water
4 hoagie rolls, split
Mayonnaise
Cherry pepper relish
2 teaspoons chicken seasoning
1 teaspoon kosher salt
1/2 teaspoon garlic salt
Freshly ground black pepper

Steps:

  • For the cheese sauce: Combine 8 ounces of the beer, the Chicken Seasoning Blend and the chipotle steak seasoning in a saucepan over medium heat and bring to a simmer. Gradually whisk in the cheese; cook just until the cheese is melted, adding more beer if the sauce is too thick. Keep warm.
  • For the chicken: Heat a cast-iron griddle over medium-high heat. Add 1 tablespoon of the olive oil and the onions and cook for 3 to 5 minutes. Add the chicken, drizzle with the remaining tablespoon olive oil and sprinkle with the Chicken Seasoning Blend. Cook until the chicken is browned, 5 to 8 minutes. Pour the chicken stock over the chicken and cook for another minute.
  • To build sandwiches: Coat the bottom half of each hoagie roll with mayonnaise. Divide the chicken and onions among the rolls. Drizzle with cheese sauce and top with a bit of relish.
  • In a small bowl combine the chicken seasoning, kosher salt, garlic salt and a few grinds of black pepper.

1 lb boneless, skinless chicken thighs
kosher salt, to taste
freshly ground black pepper, to tate
6 oz chipotle pepper in adobo sauce, finely chopped
1 tablespoon vegetable oil

Steps:

  • On a cutting board, season the chicken all over with salt and pepper.
  • Transfer the chicken to a large zip-top bag with the chopped chipotles and mix until the chicken is fully coated.
  • Refrigerate for at least 2 hours, up to overnight.
  • Heat the oil in a large skillet over medium-high heat.
  • Add the chicken and cook until golden brown, 4 minutes per side.
  • Remove the chicken with tongs and place on a cutting board. Let cool for 5 minutes. Cut the chicken into bite-sized pieces.
  • Transfer the chicken back to the pan over medium-high heat and cook, stirring frequently, for 2-3 minutes, until all pieces are browned.
  • Enjoy!

1 onion , chopped
1 garlic clove , sliced
2 tbsp sunflower oil
1-2 tbsp chipotle paste (see tip, below)
400g can chopped tomatoes
1 tbsp cider vinegar
8 skinless chicken thigh fillets
small bunch coriander , chopped
soured cream and rice, to serve

Steps:

  • Fry the onion and garlic in the oil in a deep, wide frying pan until soft. Add the chipotle paste (use 1 tbsp for a mild flavour and 2 tbsp for a hotter, stronger one). Stir and cook for 1 min, then add the tomatoes and cider vinegar. Bring to a simmer and cook for 10 mins with the lid half on. Stir to make sure it doesn't get too dry.
  • Add the chicken and cook for 10 mins or until cooked through, turning once. Scatter with coriander and serve with rice and soured cream.

Found this recipe in Cooking Light magazine. Very easy to make and tasty! You can also use soft taco shells instead of hoagie rolls. And you can also control your own heat with how many chipotle peppers you use.

1 (7 ounce) can chipotle chiles in adobo
2 teaspoons olive oil, divided
1 lb chicken cutlet, thinly sliced into strips
1 cup sliced onion
1 cup red bell pepper, strips
2 garlic cloves, minced
1/4 teaspoon dried thyme
1 cup shredded reduced-fat sharp cheddar cheese
4 hoagie rolls or 4 soft taco-size flour tortillas

Steps:

  • Heat 1 teaspoon of olive oil in a large skillet over medium-high heat.
  • Add chicken saute 5 minutes or till done. Then remove chicken from pan.
  • Heat remaining 1 teaspoon of olive oil and add onion, peppers, garlic and thyme and saute' about 4 minutes.
  • Slice a chipotle pepper into small strips and add that and the all the adobo sauce to the pan and mix well and cook for 1 minute.
  • Add chicken back to the pan and cook for 1 minute stirring frequently.
  • Remove from heat add cheese, stirring until it melts.
  • Place in your favorite roll or taco shell and enjoy!
  • You can add as many chipotle peppers depending on how HOT you want to go!

1 ounce dried chipotle chile pepper
1 ounce dried ancho chile pepper
½ cup water
½ red onion, cut into small chunks
4 cloves garlic
2 teaspoons sea salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon freshly ground black pepper
2 tablespoons olive oil
2 ½ pounds skinless, boneless chicken thighs

Steps:

  • Place chipotle chile pepper and ancho chile pepper in a bowl; pour in water. Cover bowl and let sit until peppers are softened, at least 10 to 12 hours. Drain water and remove seeds from peppers.
  • Blend chile peppers, red onion, garlic, sea salt, cumin, oregano, and black pepper in a blender until a coarse paste forms; add olive oil and blend until marinade is smooth.
  • Pound chicken thighs flat with a meat mallet and trim excess skin. Place chicken in a resealable plastic bag and add marinade. Turn chicken several times to coat. Seal bag and marinate at least 8 hours.
  • Preheat an outdoor grill with top and bottom plates for medium-high heat. Remove chicken from bag and discard marinade.
  • Cook chicken on the preheated grill until no longer pink in the center and the juices run clear, 5 to 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Cut into strips.
