Number Of Ingredients 8

2 pounds peeled shrimp, cold
4 large cloves garlic, peeled and minced (about 2 tablespoons minced)
1 1/2 teaspoons kosher salt
3 cilantro roots or 3 tablespoons finely-chopped cilantro stems (see note)
1 teaspoon ground white pepper
1 1/2 teaspoons baking powder
Approximately 2 cups of Japanese-style bread crumbs
2 quarts vegetable oil

Steps:

  • Add shrimp garlic, salt, cilantro, white pepper, and baking powder to bowl of food processor. Pulse until smooth paste is formed, scraping down sides of bowl as necessary. Run processor continuously until mixture becomes smooth and sticky, about 15 seconds. Transfer shrimp mixture to a large bowl and refrigerate it for at least 10 minutes.
  • Place bread crumbs in a shallow pie plate. Heat oil in a Dutch oven or wok to 325°F as registered on an instant read or deep-frying thermometer.
  • Roughly divide the shrimp mixture in the bowl into four equal portions. Divide each portion again into four portions to form 16 equal piles.
  • Form each portion of shrimp mixture into a patty about 3 1/2 inches in diameter. Roll each patty in the bread crumbs and gently lower it into the hot oil. The shrimp cakes puff up quite considerably in the oil, so make sure you don't overcrowd your frying vessel.
  • Flip the shrimp cakes over a few times while they're frying. Once they're golden brown, fish them out onto a paper towel-lined plate.

3 spring onions
2 small red chillies
finely grated zest of 1 lime and 1 tbsp fresh lime juice
pinch of sugar
3 tbsp chopped fresh coriander
225g shelled raw tiger prawn
1-2 tbsp plain flour , for dusting
3 tbsp sunflower oil
140g medium egg noodles (we used Blue Dragon)
1 garlic clove , crushed
1 rounded tsp grated fresh root ginger
50g mangetout , trimmed and thinly sliced lengthways
2 tbsp soy sauce
1 tsp sesame oil
1 tbsp toasted sesame seeds

Steps:

  • Chop 1 spring onion and tip into a food processor. Slice the remaining 2 spring onions diagonally and set aside. Halve both chillies lengthways and discard the seeds. Put 1 chilli into the food processor, finely chop the other and set aside.
  • Add the lime zest, sugar, 2 tbsp of the coriander and a generous pinch of sea salt to the spring onion and chilli in the processor and whizz to a coarse paste. Add the prawns and whizz until everything is chopped but still has some texture.
  • Tip the mixture on to a floured surface and with floured hands lightly shape into 4 rounds, each about 1cm thick. (You can make ahead up to this point. Cover and keep refrigerated for up to 24 hours.)
  • Heat 2 tbsp of the sunflower oil in a smallish frying pan and start frying the prawn cakes - cook over a medium heat for 3-4 minutes on each side, turning them over when they become golden. As soon as you have turned the prawn cakes, put the noodles into a saucepan of boiling water on a back burner. Stir to separate and cook for 4 minutes.
  • Meanwhile, heat the remaining 1 tbsp sunflower oil in a wok (or another frying pan) and stir-fry the garlic, ginger and reserved chilli for 1 minute. Tip in the mangetout and reserved spring onions and stir-fry for a further 2 minutes. Remove from the heat and stir in the soy sauce, sesame oil and lime juice.
  • Drain the noodles and toss them into the stir-fry. Pile on to plates, top with the prawn cakes and sprinkle with toasted sesame seeds and remaining coriander.

600 g green prawns (raw)
1 egg white
2 fresh lime leaves, shredded
3 tablespoons sweet chili sauce
2 cups fresh corn flakes, crushed finely
3 tablespoons rice flour
oil, for shallow frying
extra sweet chili sauce, to serve

Steps:

  • Place prawn meat, egg white, lime leaves, sweet chili sauce, corn flakes and rice flour in a food processor and process till the mixture is combined, BUT not smooth.
  • With wet hands, shape the mixture into small cakes.
  • Heat enough oil in a frying pan over medium heat to shallow fry.
  • Add prawn cakes a few at a time and cook for 3 minutes on each side, or till golden brown.
  • Place the cooked prawn cakes on kitchen towels to soak up the excess oil.
  • Serve with the extra sweet chili sauce.

500g sweet potatoes , peeled and cut into small chunks
½ cucumber , diced
1 small red onion , finely chopped
juice 2 limes
small bunch coriander , chopped
5 tsp reduced-salt soy sauce
3 spring onions , finely chopped
2 red chillies , deseeded and finely chopped
300g shelled cooked king prawns , roughly chopped
50g plain flour
3 tbsp vegetable or sunflower oil

Steps:

  • Bring a pan of salted water to the boil, add the sweet potatoes and simmer for 10-15 mins until cooked. Meanwhile, make the salsa by mixing the cucumber, red onion, lime juice, coriander and 2 tsp soy sauce. Drain the potatoes and return to the pan over a low heat for 3 mins while mashing with a fork, to steam off excess water.
  • Remove the potatoes from the heat and stir in the spring onions, chillies, prawns, flour and the remaining soy sauce. The mixture will be soft but not runny - chill for 20 mins to firm up if necessary. Heat the oil in a large frying pan over a medium heat. Drop tbsps of mixture into the pan and squash down with the back of the spoon. Fry for 3-4 mins each side until golden. Keep warm in a low oven while you fry the rest of the mixture. Serve with the chilli sauce and the salsa.

300 g raw prawns
2 spring onions, finely chopped
1/4 cup coriander, chopped
2 cups fresh breadcrumbs
2 eggs, lightly beaten
salt and pepper
vegetable oil
sweet chili sauce, to serve

Steps:

  • Place fish and prawns in processor. Chop to chunky paste. Remove to bowl.
  • Stir in onions, coriander and breadcrumbs.
  • Season.
  • Moisten your hands, and form mixture into small cakes.
  • Heat a little vegetable oil in pan or wok and cook cakes in batches until golden brown on both sides.
  • Drain on paper towels.
  • Serve with sweet chilli sauce for dipping.

2 slices white bread, crusts removed, about 100g
250 g peeled raw prawns
1 green chili, seeded and finely chopped
2 1/2 cm piece fresh gingerroot, peeled and finely chopped
4 garlic cloves, finely chopped
1 tablespoon chopped fresh coriander
1 teaspoon salt
1 egg

Steps:

  • Place the bread in a bowl, cover with water, soak for about 10 seconds, then squeeze out the excess water. Place the drained bread in a food processor with the prawns, chilli, garlic, coriander, salt and egg. Pulse until well blended.
  • Preheat the oven to 200 degrees celcius. Using lightly floured hands divide the mixture into 12 small cakes. Spray a baking sheet very lightly with oil and arrang the prawn cakes onto the baking sheet, evenly spaced apart. Spray with a little oil and bake for 15-20 minutes minutes, turning half way through, until golden brown and just begining to crisp. Aerve warm with baby lettuce, rocket or watercress leaves and a bowl of sweet chilli sauce.
