PAM'S COOKED CELERY-AMISH STYLE
If I remember correctly, I found this recipe in the book by Beth Wiseman, Plain Perfect (Daughters of the Promise, Book 1). It said that this dish is traditionally served at Amish wedding dinners with roast turkey. I thought it sounded good (I am into anything German sweet and sour) so I made a batch. Surprised the heck out of me...

Steps:
- 1. Wash and chop the celery into 1/2 inch pieces. Place celery, water, brown sugar, butter and salt into a large saucepan or Dutch oven and cook together until celery is soft, about 15 minutes on med high to high heat.
- 2. Mix together flour, vinegar, brown sugar and cream. pour into hot celery mixture and stir over low heat until thickened. (Do not boil)
- 3. Smaller batch with my tweaks: 1 1/2 c celery 3 Tbsp water 3 Tbsp br sugar 1 Tbsp butter 1/8 tsp salt 2 tsp flour ( I like a thicker sauce) 2 Tbsp cider vinegar 1 Tbsp Br sugar 1/4 c. cream
SWEET AND SOUR SLAW
This is a great recipe from my mother, who is German, for a vinegar based marinated slaw using no oil.

Steps:
- In a jar with lid, combine the sugar, vinegar, water, salt, mustard seed and celery seed. Cover tightly and shake vigorously until sugar is dissolved. Chill dressing for several hours or overnight.
- In a large bowl, toss together the cabbage, celery, green peppers, pimento and dressing until evenly coated. Cover and chill until serving.

SWEET AND SOUR PORK III
My husband's grandmother was Chinese. She taught me this one. This is the way Gramma made Sweet and Sour all her life (she died 6 years ago at age 94). The secret is apple cider vinegar.

Steps:
- Place cubed pork in a medium bowl, and season with 1 teaspoon salt, 1/4 teaspoon sugar, and 1 teaspoon soy sauce. Mix in the egg white and green onions. Cover, and place in the refrigerator at least 1 hour.
- Heat 1 quart oil to 365 degrees F (185 degrees C) in a large, heavy saucepan or deep fryer.
- Coat the pork with 1/2 cup cornstarch, and fry in the heated oil about 10 minutes, until evenly browned. Drain on paper towels.
- Heat 1 tablespoon oil in a wok over medium heat. Stir in the celery, green bell pepper, and onion, and cook until tender. Season with salt and sugar. Remove from heat, and set aside.
- In a large saucepan, mix 1 cup water, 1/4 teaspoon salt, 3/4 cup sugar, apple cider vinegar, ketchup, and 1/2 teaspoon soy sauce. Bring to a boil, and stir in the cooked pork, celery mixture, and the pineapple chunks with juice. Return to boil, and mix in 2 tablespoons cornstarch and 1/4 cup water to thicken. Cook until well blended.

SWEET-AND-SOUR CELERY

Steps:
- Cut a round of parchment paper to fit just inside a wide heavy 6-to 8-quarts pot, then set round aside.
- Simmer water, lemon juice, oil, honey, 3/4 teaspoon salt, and 1/2 teaspoon pepper in pot, stirring, until honey has dissolved. Stir in celery (but not leaves) and cover with parchment round. Simmer until tender and liquid is reduced to about 1/4 cup, 35 to 40 minutes.
- Meanwhile, coarsely chop reserved leaves.
- Serve celery sprinkled with celery leaves and parsley.

- Combine flour, garlic powder, salt, and black pepper in a shallow dish.
- Roll and coat chicken cubes in flour mixture.
- Heat 2 tablespoons vegetable oil in a skillet over medium-high heat.
