CHAMPAGNE PUNCH RECIPE

Steps:

• Pre-chill all ingredients the day before your party.
• In a large punch bowl, combine all ingredients except the champagne and stir.
• Slowly place large pieces of ice or an ice ring into the bowl. Ice cubes will work also, but tend to melt quicker and water down the punch.
• Slowly pour champagne into the bowl to fill.

SOUTHERN COMFORT CHAMPAGNE COCKTAIL

Steps:

• Pour the Southern Comfort into a champagne glass, add bitters and champagne and garnish with the lemon peel. Alternatively, you may use either brandy (omitting the Angostura bitters and substituting an orange peel), or cognac (adding an additional dash or two of Angostura bitters and omitting the lemon peel).

CHEESY CAJUN SHRIMP AND GRITS

Steps:

• In a large saucepan, bring water and salt to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, until thickened, about 5 minutes, stirring occasionally. Remove from heat. Stir in cheese and butter until melted; keep warm., Meanwhile, in a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Cook and stir shrimp in bacon drippings until shrimp turn pink, 3-4 minutes. Add garlic; cook 1 minute longer. Stir in Cajun seasoning and parsley., Divide grits among 8 serving bowls; top with shrimp mixture and the bacon.
