APPLE & CARROT "SUPERHERO" MUFFINS
This apple carrot muffin recipe is naturally sweetened and gluten free! These hearty apple-carrot muffins make a great grab-and-go breakfast or snack. Recipe yields 12 muffins.

- Preheat the oven to 350 degrees Fahrenheit. Line a 12-cup standard muffin tin with paper muffin cups (I didn't because I have full faith in my muffin pan, but use them if you're uncertain).
- In a large bowl, combine the almond meal, oats, cinnamon, baking soda, salt, and optional mix-ins, if using.
- In a separate bowl, whisk together the honey, eggs and butter. Whisk in the grated apple and carrots. Pour the mixture into the dry ingredients, mixing until just combined.
- Spoon the batter into the muffin cups, filling each to the brim. Bake until the muffins are nicely browned on top and a knife inserted in the center of a muffin comes out clean, 25 to 30 minutes. Allow muffins to cool completely before storing.
- Store leftover muffins in an airtight container in the fridge or freezer. If you like them warm, reheat them on low power in the microwave.

- In a large bowl, beat the eggs, oil and sugars until smooth. Combine the flour, cinnamon, baking powder, baking soda and salt; gradually add to egg mixture just until combined. Stir in carrots and apple., Spoon into a greased 9-in. square baking pan. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., In a small bowl, combine the frosting ingredients; beat until smooth. Spread over cake. Store in the refrigerator.

- Preheat the oven to 350°F Lightly spray an 8 1/2-by 4 1/2-inch loaf pan with vegetable oil.
- Mix the oil, eggs, granulated sugar, cinnamon, nutmeg, vanilla and yogurt in a large bowl or food processor until well combined. Stir in the carrot, apple and raisins.
- Combine both flours with the baking powder and baking soda in a separate bowl, mixing well. Add to the egg mixture and stir just until combined. Pour the batter into the prepared loaf pan. Sprinkle with the brown sugar and bake in the center of the oven for 35 to 40 minutes, or until a tester inserted in the middle of the loaf comes out clean.
- Cool in the pan for 15 minutes, then turn out onto a rack. Serve warm or at room temperature.
