Time 4h55m

Number Of Ingredients 20

2 slices soft white bread
1/4 cup water or milk
1 lb ground beef ((more fat, means juicier meatballs but higher calories))
1 lb ground pork ((more fat, means juicier meatballs but higher calories))
1/2 onion (grated or finely chopped)
2 large eggs
1 tablespoon minced garlic
1 teaspoon dried Italian seasoning
1 teaspoon salt
1/4 teaspoon pepper
1 1/4 cups low sodium beef broth
1/2 cup half and half
2 tablespoons corn starch
1 tablespoon Worcestershire sauce
1 teaspoon minced garlic
1 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon thyme
1/4 teaspoon pepper
1 pinch nutmeg

Steps:

  • Tear bread into small pieces and place in a food processor. Process until the bread is in fine crumbs and combine with water. Stir and let sit for a few minutes (*If you don't have a food processor, you can soak the bread chunks and then mash into fine crumbs)
  • Stir together soaked bread, beef, pork, onion, eggs, garlic, Italian seasoning, salt, and pepper in a large bowl just until combined -- don't overmix.
  • Preheat oven to 400 degrees F and line a baking sheet with parchment paper. (*I like to bake mine, but you can also add to the slow cooker raw and cook in the sauce)
  • Shape meat into 1-1.5" balls and place 1" apart on baking sheet. (I get about 35 1.5" meatballs)
  • Bake for 10 minutes, just until browned on the outside (see post above for other options).
  • Set aside to cool slightly. (*At this point, once cooled, you can freeze up to 3 months for a variety of uses).
  • Place one Reynolds Kitchens Slow Cooker Liner in a 2.5-4 quart slow cooker. Place meatballs in slow cooker.
  • Stir together broth, half and half, corn starch, Worcestershire sauce, garlic, parsley, salt, thyme, pepper and nutmeg. Pour over meatballs in slow cooker.
  • Cook on low until heated through and sauce has thickened -- about 4-5 hours on low or 2 hours on high.
  • Serve with sauce over mashed potatoes or egg noodles.

SWEDISH MEATBALLS (NO SOUR CREAM)

Swedish Meatballs (no sour cream) image

My own take on Swedish meatballs.. with minimal ingredients since I have empty cupboards at the moment :) Turned out really good, and the frozen meatballs really soak up the gravy while they simmer. Super easy to make.

SWEDISH MEATBALLS

Swedish Meatballs image

My family loves these Swedish meatballs. They are so tender and flavorful and much lighter than traditional recipes out there. And, let's not forget the sauce! The creamy sauce really makes the dish.

BEST SWEDISH MEATBALLS

Best Swedish Meatballs image

Our family has been using this recipe for more than 40 years. The tender meatballs are made with a combination of beef, veal and pork, then spiced with nutmeg and ginger. If your family likes their meatballs a little milder, reduce the nutmeg to 1/2 teaspoon. Coffee adds nice color to the gravy, which is delicious over noodles.-Rev. Jim Thyren, West Pittston, Pennsylvania
