I can't let anything go to waste, which I how I came up with this fruit butter concoction of mangoes, apricots, and peaches - sunshine fruits!

Yield 4 (half-pint) jars

Number Of Ingredients 5

1 ½ large mangos, peeled and chopped
5 medium peaches, peeled and chopped
12 apricots, pitted and quartered
2 Tablespoons lime juice
2 cups sugar

Steps:

  • Place fruit in a large saucepan and cook over low heat until soft, adding small amounts of water if necessary to prevent scorching.
  • Puree fruit in a blender or food processor or using an immersion blender.
  • Measure puree.
  • Return puree to saucepan - you should have about 4 cups of puree. Add lime juice and sugar.
  • Cook over medium-low heat, stirring often until mixture has thickened. This could take as little as 15 minutes, or as long as an hour - depending on the size of your saucepan and today's humidity.
  • Ladle into hot, clean jars leaving about ¼ inch head space. Top with the two-piece lids and rings, and process in a water bath for 10 minutes.

These golden sunshine biscuits really bring smiles to my breakfast table, especially on cold winter mornings when they're served with butter and molasses.

Number Of Ingredients 9

2 cups all-purpose flour
1 cup cornmeal
2 tablespoons sugar
4-1/2 teaspoons baking powder
3/4 teaspoon cream of tartar
1/2 teaspoon salt
3/4 cup cold butter
1 egg, lightly beaten
1 cup milk

Steps:

  • In a bowl, combine flour cornmeal, sugar, baking powder, cream of tartar and salt. Cut in butter until mixture resembles coarse crumbs. Combine egg and milk; stir into flour mixture just until moistened. Let stand 5 minutes. , Turn onto a floured surface; knead for about 1 minute. Pat or roll out to 3/4-in, thickness; cut with a 3-in. biscuit cutter. Place on a greased baking sheet. Bake at 450° for 10-12 minutes.

500ml carrot juice, chilled
200g pineapple (fresh or canned)
2 bananas, broken into chunks
small piece ginger, peeled
20g cashew nuts
juice 1 lime

Steps:

  • Put the ingredients in a blender and whizz until smooth. Drink straight away or pour into a bottle to drink on the go. Will keep in the fridge for a day.

  • 1. In a large, heavy-bottomed saucepan or other wide, shallow pan over high heat, combine fruit, sugar, and lemon juice with enough water to just cover.
  • 2. Wrap the spices in a piece of cheesecloth and add to the fruit mixture. Bring to a boil and reduce to a lively simmer. Simmer until the fruit is very soft, about 30 minutes.
  • 3. Remove the spice sachet and pass the fruit through a food mill into a bowl. Return fruit pulp to the saucepan and cook over low heat, stirring occasionally to prevent scorching, until the mixture has reduced significantly and is very thick and glossy, about 2 hours.
  • 4. To test doneness, remove a spoonful of fruit butter and let it rest at room temperature, away from the steam, for 2 minutes. If the butter remains mounded on the spoon, it’s ready. Alternatively, spoon a little fruit butter onto a chilled plate. If the liquid runs off the fruit butter, it needs more time to cook. Place it back in your saucepan for another few minutes.

  • Combine fruit, water and sugar to taste in a Dutch oven; add citrus zest and juice if using. Bring to a boil over high heat. Reduce heat to maintain a lively simmer and cook, mashing the fruit and stirring occasionally at first and then often as it thickens, until the mixture is very thick, 20 minutes to 1 hour (depending on the type of fruit). To test doneness, put a spoonful of fruit butter on a plate. If no liquid seeps from the edges, it's done. Return to a simmer to thicken more if necessary. For very smooth fruit butter, puree in a food processor or blender, then strain and push the mixture through a sieve before storing.
  • If freezing or refrigerating, ladle the fruit butter into clean canning jars to within 1/2 inch of the rim. Wipe rims clean. Cover with lids. Let the jars stand at room temperature until cool before refrigerating or freezing. Or process in a water bath to store at room temperature (see Tip).
