EASY ORANGE GLAZE DUCK

Easy Orange Glaze Duck image

My husband told me his grandmother made something similar to this, so I made up a recipe and it turned out delicious! Now it is a favorite at holiday meals and whenever we can find ducks. Makes enough for 1 or 2 ducks. If you want, marinate the duck the night before in the mixture. It makes it a little more tender.

Time 2h40m

Yield 4

Number Of Ingredients 7

1 (12 fluid ounce) can or bottle orange soda
1 (6 ounce) can frozen orange juice concentrate, thawed
½ (18 ounce) bottle honey barbecue sauce
¼ cup brown sugar
⅓ cup bottled teriyaki sauce
1 (5 pound) whole frozen duckling, thawed
1 (4.5 ounce) can sliced mushrooms, drained

Steps:

  • Pour the orange soda, orange juice concentrate, barbecue sauce, brown sugar, and teriyaki sauce into a bowl, and stir to combine and dissolve the sugar.
  • Preheat oven to 350 degrees F (175 degrees C). Remove any excess pieces of fat from inside the duckling, place the duck into a roasting pan, and prick the skin all over with a fork to allow the fat to drain off while roasting.
  • Brush the duckling with the orange mixture. Place the mushrooms into the cavity of the duck, and spoon in some of the orange sauce.
  • Roast the duck in the preheated oven, brushing it every 20 to 30 minutes with the orange sauce, until a meat thermometer inserted into a thick part of a thigh reads 165 degrees F (75 degrees C), about 2 1/2 hours.

Time 1h9m

Yield 4 servings

Number Of Ingredients 37

One 5- to 6-pound duck, halved lengthwise, washed and dried
1 cup kosher salt
1 cup ground palm sugar
10 shallots, halved and sliced
5 cloves of garlic, minced
5 kaffir lime leaves, 1/16 inch ribbon
3 stalks lemongrass, white part only, minced
2 tablespoons, ginger, minced
6 Thai bird chiles, minced
2 tablespoons coarse ground black Indonesian peppercorns
2 tablespoons coarse ground coriander seeds
2 tablespoons coarse ground fennel seeds
2 tablespoons Thai or Vietnamese fish sauce
1 bunch cilantro
2 quarts coconut oil or peanut oil, or a mixture of both
Root Vegetable Mash, recipe follows
Warm Exotic Fruit Salsa, recipe follows
Sambal Oil, recipe follows
1 1/2 pounds total taro, potatoes, cassava, yams, and other root vegetables, peeled and cut into 2-inch cubes (the cassava should be cut into 3-inch cubes because it cooks more quickly)
12 cloves garlic, peeled
3 tablespoons butter
1 cup sliced scallions
1 cup cream
Salt and black pepper
1 medium onion, peeled and cut into 1/4-inch dice
1 tablespoon minced ginger
1 Thai bird chile, minced
1 tablespoon minced lemongrass, white part only
1 pineapple, peeled, seeded, and cut into 1/2-inch dice
1 mango, peeled, seeded, and cut into 1/2-inch dice
1 papaya, peeled, seeded, and cut into 1/2-inch dice
Grapeseed oil, to cook
Salt and black pepper
3 tablespoons sambal oelek
1/8 cup coconut or peanut oil
1 teaspoon naturally brewed soy sauce
1/4 cup sliced scallions

Steps:

  • In a rectangular dish, large enough to hold the 2 duck halves, mix the marinade ingredients together. Liberally rub the duck on all sides and inside the cavity with the mixture. Cover and place in the refrigerator for 4 hours to marinate.
  • Prepare a fryer filled with coconut or peanut oil, preheat to 225 degrees F. Wipe off all the mixture and 'braise' the duck in the oil. Duck should be completely submerged. Remove the duck after 1 hour, it should be fully cooked. Heat the fryer to 400 degrees F oven degrees and fry the duck again to color and crisp up.
  • On a large oval platter, place a large mound of the Root Vegetable Mash in the center. Place duck on top and garnish with Warm Exotic Fruit Salsa and Sambal Oil.
  • In a large stockpot, add the root vegetables and garlic. Top with cold water and bring to a boil. Slowly boil until the pieces are fully cooked and a knife can easily pierce the pieces.
  • Drain well, dry out the stock pot, and place vegetables back in. Meanwhile, in a saucepot, melt 1 tablespoon of the butter and sweat the scallions. Add the cream and reduce by 50 percent, about 5 minutes. Add the cream to the pot and mash by hand. Add the butter, season with salt and pepper, and check for flavor.
  • In a saute pan on high heat, coated lightly with oil, saute the onions, ginger, chile, and lemongrass until soft. Add the fruit and cook for 4 to 5 minutes. Season with salt and pepper and check for flavor.
  • Mix all together.

GLAZED FRUIT

Glazed Fruit image

Categories     Fruit     Dinner     Buffet     Pastry     Boil

Yield 50 pieces

Number Of Ingredients 6

50 pieces small, ripe fruit, such as strawberries, grapes, or cherries
1 large grapefruit
1 1/2 cups sugar
1/2 cup water
1/8 teaspoon cream of tartar
10 drops freshly squeezed lemon juice

Steps:

  • Insert a toothpick or wooden skewer into the base of each small fruit. Cut off one end of the grapefruit to make a flat base, then pierce 50 small holes in the grapefruit to hold the toothpicks for display. Line a baking sheet with a piece of waxed paper.
  • In a 2-quart heavy-bottomed saucepan over medium-high heat, bring the sugar, the water, and the cream of tartar to a boil. Brush down the sides of the pan two times with a pastry brush dipped in warm water to prevent the sugar from crystallizing. Cook the mixture without stirring until it registers 240°F on a sugar thermometer, then add the lemon juice. Brush down the sides of the pan two more times and continue cooking the mixture until it registers 310°F on the thermometer.
  • Remove the pan from the heat. Holding a small fruit by the toothpick, dip the fruit into the sugar syrup, coating it completely. Lift the fruit from the syrup, gently shake off the excess syrup, and place the fruit onto the waxed paper. Repeat with the remaining small fruit. If the sugar syrup begins to firm up while you are working, warm it over medium heat until it is liquid again. Let the glaze set up at room temperature (about 10 minutes).
  • Place the toothpicks into the holes in the grapefruit. Keep the fruit at room temperature until serving time. Serve the fruit within 12 hours of preparation.

Number Of Ingredients 9

1 (2 kg) duck
40 g maple syrup
60 g honey
20 g Dijon mustard
1/2 teaspoon dried thyme
100 ml orange juice
100 ml balsamic vinegar
10 g garlic

  • Pass any remaining reserved glaze to be spooned over carved duck.
