BEST CHEESY POTATOES (FUNERAL POTATOES) RECIPE
Cheesy potatoes are a staple for holidays, potlucks, funerals, and parties in the Midwest. Found on every table, especially during Thanksgiving, Christmas, or Easter, this recipe is easy to make, delicious and comforting.

Steps:
- Preheat oven to 350F/180C.
- Butter a 9x13 inches baking pan.
- Defrost the potatoes if you use frozen ones.
- If you use raw potatoes, peel, wash, shred or dice the potatoes according to your taste. Place them in a large bowl.
- Melt the butter.
- Over the potatoes, pour the melted butter and sour cream.
- Separately, in a small bowl, mix flour and chicken stock and make sure there are no lumps. Bring the mixture to the consistency of thinner sour cream.
- Pour the flour and chicken stock over the potatoes, butter, and sour cream and stir to combine.
- Add the shredded cheese, stir again, then place the mixture on the 9x13 inches buttered pan.
- Optional, add the corn flakes on top.
- Bake for 1 hour at 350F/180C.
- Note: You can make the recipe in a crockpot which you can set up on "Low" for 4-6 hours.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large baking dish, mix together potatoes, soup and sour cream. Mix in cheese and butter. Salt and pepper to taste, if desired. Top the mixture with potato chips.
- Bake 60 minutes in the preheated oven, or until the mixture is bubbly and lightly brown.
- Remove from oven and let stand 15 minutes before serving.

- Combine all ingredients except the oil in a large bowl and mix well.
- Heat oil in a deep skillet to about 2 inches deep to 375 degrees.

- Serve immediately.
FAT RASCALS (POTATO CHEESE PUFFS)
This is an all-time favorite Saturday night snack at our house. I'd always made potato patties with any leftover mashed potatoes that I had, but when I came across Fat Rascals they sounded like a delicious variation. - Cut potatoes in half and place in a pot. Cover with water and bring to a boil. Work on other dishes while you are waiting for the water to boil.
- When water boils, add the potatoes and some salt, 2 big pinches, and boil for 10 minutes or until tender. Drain and return potatoes to the hot pot. Smash potatoes with masher and combine with sour cream and cheese. When cheese melts into potatoes, add chives and salt and pepper and re-smash. Taste the potatoes and adjust seasonings.

- 1. Peel and grate potatoes; rinse and drain. Blot potatoes with paper towels to remove as much moisture as possible; set aside.
- 2. Fry bacon crip; cool and crumble.
- 3. In a large mixing bowl combine all ingredients together except for oil; mix well. Drain any liquids that may accumulate.
- 4. Heat about 1/2 inch vegetable oil in frying pan to about 350 degrees. Drop potatoes, about 1/4 cup per serving, in hot oil. Fry on each side 2 to 3 minutes per side or until a golden brown. Remove from oil and drain on paper towels. If necessary, keep warm in 170 degree oven until ready to serve.

- Preheat oven to 350°. Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 8-12 minutes. Drain.
