"I call this my 'I Won't Tell Them It's Squash if You Don't' Dessert," chuckles Teri Rasey of Cadillac, Michigan. Her holiday treat features a praline-like topping.

Number Of Ingredients 23

1-1/2 cups all-purpose flour
1/4 cup sugar
1/4 cup confectioners' sugar
1/2 cup cold butter
STREUSEL TOPPING:
1/4 cup packed brown sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
2 tablespoons cold butter
1 cup chopped pecans
FILLING:
1 medium butternut squash (4 pounds), peeled, seeded and cubed
1 cup sugar
1/3 cup packed brown sugar
1/4 cup cornstarch
3 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
2 cans (12 ounces each) evaporated milk
4 large eggs
Whipped cream and additional cinnnamon, optional

Steps:

  • In a bowl, combine flour and sugars; cut in butter until crumbly. Press into an ungreased 13x9-in. baking dish. Bake at 350° for 15-20 minutes or until edges begin to brown. , In a small bowl, combine brown sugar, flour and cinnamon; cut in butter until crumbly. Stir in pecans; set aside., Place squash in a large saucepan and cover with water; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender. Drain. Transfer to a blender or food processor; cover and process until smooth. , In a large bowl, combine the sugars, cornstarch and seasonings. Gradually beat in 4 cups squash, milk and eggs until smooth (save any remaining squash for another use). Pour over crust. Sprinkle with topping. , Bake at 350° for 55-65 minutes or until a knife inserted in the center comes out clean. Cool on a wire rack. Cover and refrigerate overnight. , Garnish with whipped cream and additional cinnamon if desired. ,

A sweet and crunchy topping of butter, brown sugar, pecans and pumpkin pie spice brings out the best of a squash side dish.

1 butternut squash (2 to 2 1/2 lb), peeled, seeded and cut into 1/2-inch cubes (about 4 1/2 cups)
1/4 cup water
1/2 teaspoon salt
1/3 cup Gold Medal™ all-purpose flour
1/4 cup packed brown sugar
1/4 cup chopped pecans
2 tablespoons butter or margarine, softened
1/2 teaspoon pumpkin pie spice

Steps:

  • Heat oven to 350°F. In 11x7-inch microwavable dish, spread squash cubes. Add water; sprinkle with salt. Cover with plastic wrap, folding back one edge or corner 1/4 inch to vent steam. Microwave on High about 5 minutes or until squash is crisp-tender.
  • Meanwhile, in medium bowl, mix remaining ingredients with spoon. Sprinkle evenly over squash.
  • Bake uncovered 40 to 45 minutes or until streusel is brown.

4 cups mashed, cooked butternut squash
¼ cup butter, softened
1 tablespoon brown sugar
¼ teaspoon salt
1 pinch ground black pepper
1 ½ tablespoons butter
6 cups peeled and sliced Red Delicious apples
¼ cup white sugar
⅓ cup all-purpose flour
⅓ cup rolled oats
⅓ cup firmly packed brown sugar
¼ teaspoon ground cinnamon
¼ cup butter
¼ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter or spray a 3-quart casserole dish with cooking spray.
  • Stir butternut squash, 1/4 cup softened butter, 1 tablespoon brown sugar, salt, and pepper together in a bowl.
  • Melt 1 1/2 tablespoons butter in a large skillet over medium heat; stir in apples and white sugar. Cover skillet and simmer over low heat until apples are barely tender, 5 to 10 minutes.
  • Whisk flour, oats, 1/3 cup brown sugar, and cinnamon together in a bowl. Cut 1/4 cup butter into flour mixture using a pastry blender until mixture resembles coarse crumbs; stir in pecans.
  • Spread apple mixture into the prepared casserole dish. Spoon butternut squash mixture over apples; sprinkle with topping.
  • Bake in the preheated oven until bubbling and lightly browned, about 25 minutes.

1/2 teaspoon(s) pimpkin pie spice
1 cup(s) dried cranberries (optional)

Steps:

  • In a 11 X 7 inch microwaveable dish, spread squash cubes.
  • Add water, sprinkle with salt. Cover with plastic wrap, folding back one edge or corner 1/4 inch to vent steam. Microwave on high 5 minutes.
  • Meanwhile, in medium bowl, mix remaining ingredients with spoon. Sprinkle over squash. Bake at 350 degrees, uncovered, for 40 to 45. minutes or until streusel is browned.
  • You can also cook squash cubes in batches in a round microwaveable dish.
  • If desired, just before topping the squash with streusel, sprinkle dried cranberries over the squash.
