- Preheat oven to 350°. Line 24 muffin cups with paper liners. In a large bowl, combine cake mix, sour cream and eggs. Beat on low speed 30 seconds. Beat on medium 2 minutes., Fill prepared cups half full. Drop 1/2 teaspoon preserves into center of each cupcake; cover with remaining batter., Bake until a toothpick inserted in the cake portion comes out clean, 22-27 minutes. Cool in pans 10 minutes before removing to wire racks to cool completely., Pipe frosting over cupcakes and top each with a strawberry half.

STRAWBERRY PRETZEL SURPRISE
Great to take for pot luck!! A light and tasty favorite.

Steps:
- 1. Heat oven to 350 degrees.
- 2. CRUST: Mix together pretzels, butter and sugar. Coat a 13X9X2 inch baking dish with nonstick cooking spray. Pat pretzel mixture into the bottom of the dish. Bake at 350 degrees for 10 minutes. Cool completely.
- 3. FILLING and TOPPING: In a large bowl, beat cream cheese and sugar until smooth. Fold in thawed whipped topping. Spread mixture over cooled crust.
- 4. In a large bowl, dissolve gelatin in boiling water. Stir in thawed strawberries. Place over larger bowl of ice water and refrigerate, stirring occasionally, until mixture starts to thicken slightly.
- 5. Spoon strawberry mixture over cream cheese mixture. Refrigerate for 4 hours.
- 6. To serve, cut into squares. Makes 16 servings.

- Stir in sherbet until melted. Pour into 1-1/2-qt. mold.

A light refreshing summertime cake. I invented it with some strawberries I grew in my garden. It tastes best with fresh strawberries.

- Melt the butter into a 3x8 pan.
- Add the icing suger, flour and co-coa and stir.
- Cover the bottom of the pan and 1/2 way up the sides.
- Bake in an 350°F oven for 10 minutes.
- Let it cool.
- Cut up the strawberries into slices.
- Use some of the strawberries to fill the 3x8 pan in two layers.
- Cover with a thick layer of some of the whipped cream.
- Use the rest of the strawberries to create one last layer of strawberries.
- Cover with the remaining whipped cream.
