1-1/4 cups cold 2% milk
3/4 cup pineapple yogurt
1 package (3.4 ounces) instant coconut cream pudding mix
1 carton (8 ounces) frozen whipped topping, thawed
Optional: Toasted unsweetened coconut flakes and maraschino cherries
Fresh pineapple wedges
Vanilla wafers

Steps:

  • In a large bowl, whisk milk, yogurt and pudding mix 2 minutes (mixture will be thick). Fold in whipped topping. Refrigerate, covered, at least 2 hours., If desired, top with coconut and cherries before serving. Serve with pineapple and wafers.

1 can (8 ounces) crushed pineapple, drained
1/2 cup sweetened shredded coconut
Assorted fresh fruit or cubed pound cake

Steps:

  • In a small bowl, beat cream cheese and marshmallow creme until fluffy. Fold in pineapple and coconut. Cover and chill until serving. Serve with fruit, pound cake or both.

1/2 cup pineapple-orange juice
1/8 teaspoon almond extract
1/8 teaspoon coconut extract
1-1/2 cups green grapes
1-1/2 cups seedless red grapes
1-1/2 cups fresh blueberries
1-1/2 cups halved fresh strawberries
1 can (8 ounces) pineapple chunks, drained
1/2 cup fresh raspberries
Thinly sliced fresh mint, optional

Steps:

  • For dressing, mix first 5 ingredients until sugar is dissolved. Place fruit in a large bowl; toss gently with dressing., Refrigerate, covered, until serving. If desired, top with mint.

1 pkg vanilla instant pudding, large
3 c mrs t pina colada mix
assorted fruit and cake or cookies

Steps:

  • 1. Chill the Pina Colada mix for at least 3 hours, best over night, so it is very cold.
  • 2. Add pudding mix to large bowl and pour in the 3 cups of cold Pina Colada mix. Mix and chill according to package instructions.
  • 3. Serve this with assorted fruit or cake and cookies. We have tried: Strawberries, Banana, Pineapple, Apples, Cantaloupe, Pound cake, Angel-food cake, Shortbread cookies. Use your imagination to find new items to dip.

1 (16 ounce) can cream of coconut
1 quart vanilla ice cream
1 (28 ounce) bottle club soda (Well-chilled)

  • In a container you can easily refrigerate, combine pineapple juice & cream of coconut.
  • Mix well, cover & refrigerate.

1 (570 g) can pineapple in syrup (should yield 10 slices)
1 1/4 cups coconut cream (can use coconut milk)
3 -4 tablespoons sugar (to taste)
1 1/2 cups ice cubes

Steps:

  • Drain the pineapple slices and set the syrup aside.
  • Set aside 2 of the pineapple slices and freeze the remaining 8 slices until firm.
  • Blend together the frozen pineapple slices, pineapple syrup, sugar and coconut cream until smooth.
  • Add the ice and continue blending till you reach the desired consistency.
  • Pour into serving glasses and garnish each glass with toasted coconut and pineapple slices.
  • Serve chilled.
