FENNEL AND SAUSAGE PIZZA
I made this fennel and sausage pizza one night and it was the best pizza we have had in a long time. You can adjust the amount of toppings and sauce and cheese to your preference. For the dough, I like Jay's Signature Crust from this site.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with foil.
- Toss fennel and onion slices with olive oil; spread out on the baking sheet.
- Roast in the preheated oven until golden, 10 to 15 minutes. Remove from the oven. Increase oven temperature to 450 degrees F (230 degrees C).
- Cook and stir sausage in a skillet over medium heat until no longer pink, about 5 minutes.
- Roll out pizza dough on a lightly floured surface. Transfer to a pizza pan or clean baking sheet. Spread sauce on top and cover with mozzarella cheese. Top with fennel, onion, sausage, and garlic slices.
- Bake in the preheated oven until cheese is melted, 15 to 17 minutes. Garnish with chopped fennel fronds.

CHICKEN AND BASIL CALZONES-COOKING LIGHT
The original recipe was a bit bland so I add italian seasoning to the pizza sauce. Keep the pizza dough cold until you use it or it is difficult to work with.

Steps:
- Preheat oven to 425 degrees.
- Heat a large nonstick skillet over medium-high heat. Spray with cooking spray. Add garlic and chicken to pan and saute for 5 minutes or until chicken is no longer pink.
- Stir in pizza sauce, italian seasoning, and red pepper. Reduce heat and simmer 5 minutes, stirring occasionally. Remove from heat and stir in basil. Let sit for 10 minute.
- Unroll pizza dough onto a baking sheet coated with cooking spray. Cut into quarters and pat each into an 8x6" rectangle. Divide chicken mixture evenly onto the rectangles and sprinkle with 2 tbsp of cheese on each.
- Fold each rectangle in half over the chicken and pinch the edges to seal.
- Bake for 12 minutes or until golden brown.

- Preheat oven to 400°.
- Place chicken legs breasts onto a full half size baking pan and coat with the salt, pepper and seasoning blend. And let it stand for 30 minutes.
- Place into the oven for 40 minutes. Remove and let the chicken rest for 15 minutes before serving.
- In a wok add in the chicken dipping, water and chicken base and bring to a boil. Add in the Chinese sausages and simmer for 3 minutes. Add in the onion, garlic and mushrooms bring to a rolling boil. Thicken with some cornstarch roux and whisking at all time until the mixture turn into a light sauce. Top with minced green onions.

Steps:
- Toast the nuts in a skillet over medium heat until golden, about 5 minutes. Remove them and reserve.
- Pierce the sausages with a fork and arrange in the skillet. Add 1/4 inch water and 2 tablespoons of the EVOO. Place the pan back on the heat and raise the temperature to medium-high.
- Allow the water to boil away completely, about 7 minutes. The EVOO left will coat and crisp the casings. Brown the sausages on all sides, 3-5 minutes.
- While the sausages work, heat another medium skillet over medium-high heat and add the remaining EVOO, the fennel, and the onions. Season with a little salt and pepper.
- Cook the vegetables, stirring and tossing frequently, for 5 minutes, or until just tender.
- Add the white vermouth and deglaze the pan. Add the toasted nuts and the parsley and cook for another minute, then turn off the heat.
- Slice the sausages thick, on an angle. Pile one quarter of the fennel and onions on each dinner plate and top with sliced sausages.

- Cook the gnocchi according to package directions, omitting salt and fat. Drain the gnocchi in a colander over a bowl, reserving 1/4 cup cooking liquid. Keep gnocchi warm.
- Heat 1 teaspoon olive oil in large nonstick skillet over medium-high heat. Add sausage to pan; sauté 3 minutes or until lightly browned, stirring frequently. Remove sausage from skillet using a slotted spoon.

I usually make it without the chives because the flavor is still so zesty without it. This recipe is also very very easy...great for a weekday night dinner.

- Preheat oven to 450 degrees.
- Heat a non-stick skillet over medium-high heat. Add sausage to pan; saute 4 minutes or until browned, stirring occasionally. Remove from pan.
- Add oil to pan. Add fennel, onion, and salt; cover and cook 10 minutes or until tender and lightly browned, stirring occasionally.
- Place pizza crust on baking sheet. Top evenly with onion mixture; sprinkle with cheese, and top evenly with sausage. Bake at 450 degrees for 12 minutes or until cheese melts. Sprinkle evenly with chives. Cut pizza into 8 wedges.
