Fresh summer fruit stars in this easy peach and strawberry cobbler. Just a hint of spice complements the sweet flavors, while tender biscuits on top soak up the sauce.

¼ cup cornstarch
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ cup granulated sugar, plus 3 tablespoons, divided
¾ teaspoon salt, divided
2 pounds fresh strawberries, hulled and halved
2 pounds fresh peaches, peeled and sliced
1 cup all-purpose flour
1 cup whole-wheat flour
1 tablespoon baking powder
1 cup buttermilk
¼ cup unsalted butter, melted

Steps:

  • 1. Preheat oven to 350°F. Lightly coat a 9-by-13-inch baking dish with cooking spray. Whisk cornstarch, cinnamon, nutmeg, 1/2 cup sugar and 1/4 teaspoon salt in a large bowl. Add strawberries and peaches; stir until thoroughly coated. Spread the mixture in the prepared dish. Bake for 15 minutes.
  • Meanwhile, whisk all-purpose flour, whole-wheat flour, baking powder and the remaining 3 tablespoons sugar and 1/2 teaspoon salt in a medium bowl. Add buttermilk and melted butter; stir until well combined.
  • Remove the fruit mixture from the oven. Drop 12 rounded spoonfuls (about 2 tablespoons each) of batter evenly over the top. Bake until the biscuits are golden brown and the fruit mixture is bubbly, about 40 minutes. Let cool for 20 minutes before serving.

Butter, for pan
2 tablespoons fresh lemon juice (about 1/2 large lemon)
1 1/2 tablespoons arrowroot flour
1 pound medium strawberries, halved
1 1/2 pounds yellow or white peaches, peeled, pitted and sliced* see Cook's Note
1/2 cup light brown sugar
2/3 cup all-purpose flour
2/3 cup old fashioned style oats
1/2 cup sliced almonds
1/4 cup light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
1 stick (1/2 cup) unsalted butter, chilled, cut into 1/2-inch cubes
Serving suggestion: whipped cream, vanilla ice cream or gelato

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter an 8 by 8-inch glass baking dish. Set aside.
  • For the filling: In a medium bowl, whisk together the lemon juice and arrowroot until smooth. Add the strawberries, peaches and brown sugar. Gently toss until the fruit is coated. Pour the fruit mixture into the prepared pan.
  • For the topping: In the bowl of a food processor, combine the flour, oats, almonds, brown sugar, cinnamon, and sea salt. Pulse until mixed. Add the butter. Pulse until the butter is the size of peas. Sprinkle the mixture over the filling and bake for 40 to 45 minutes until the filling is bubbling and the top is light golden. Cool the crumble for 5 minutes.
  • Spoon the warm crumble into bowls and serve with a dollop of whipped cream or ice cream.

EASY BATTER FRUIT COBBLER



Easy Batter Fruit Cobbler image

Short of serving store-bought ice cream, you won't find a simpler, more delicious dessert than this fruit cobbler. Use any juicy summer fruit: peaches, nectarines, blueberries, blackberries, strawberries, raspberries. And if you use frozen berries, this dessert can be assembled in less than 10 minutes.

4 tablespoons butter
¾ cup all-purpose flour
¾ cup sugar
1 teaspoon baking powder
¼ teaspoon salt
¾ cup milk
2 cups of sliced fresh peaches or nectarines, or whole blueberries, strawberries, raspberries, blackberries or a combination of fruits (or a 12-ounce package of frozen berries)
1 tablespoon sugar

Steps:

  • Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
  • Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
  • Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
  • Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.

This is a really easy and tasty cobbler recipe . I make it with strawberry on one end and peach on the other end. Great with a scoop or two of vanilla ice cream .

1 pkg frozen peaches
1 pkg frozen whole strawberries
3 c sugar
4 Tbsp flour
1 dash(es) salt
2 stick butter (melted and slightly cooled)
2 eggs (slightly beaten )
12 -18 slice bread(edge crust removed & each slice cut into 5 strips)

Steps:

  • 1. Preheat oven to 350 . Spray 9 x 13 pan with pam spray .
  • 2. Remove crust from bread , slice each slice into 5 pieces. Set aside .
  • 3. Put peaches on one end and strawberries on other end of pan . ( I let my fruit thaw a little ).
  • 4. Mix sugar, flour ,salt, melted butter and eggs .this mixture will be a little thick.
  • 5. Lay bread on top of fruit as close to each other as possible. Spread sugar mixture on top of this , slightly working it in between the bread pieces.
  • 6. Bake at 350 for about 45 minutes. I usually have to cook a little longer . So it will be a little shakey in the center. After resting for a few minutes it will thicken . Just make sure it is a nice golden brown on top.

For topping
1/2 cup all purpose flour
1/4 teaspoon baking powder
Pinch of salt
1/2 cup unsalted butter, room temperature
1/2 cup sugar
1 large egg yolk
1 teaspoon grated lemon peel
1/2 teaspoon vanilla extract
Vanilla ice cream

Steps:

  • Make fruit:
  • Preheat oven to 375°F.
  • Butter 8-inch square baking dish. Mix all ingredients in large bowl. Let stand until sugar dissolves, stirring occasionally, about 5 minutes. Transfer to prepared dish.
  • Make topping:
  • Mix flour, baking powder and salt in small bowl. Using electric mixer, beat butter and sugar in large bowl until smooth. Beat in egg yolk, lemon peel and vanilla. Add flour mixture; mix just until moist dough forms. Spoon dough atop fruit, spacing evenly. Bake until juices bubble thickly and topping is golden, about 55 minutes. Cool slightly and serve with ice cream.

1 can(s) sliced peaches (29.5 oz) drained, reserve liquid
1 3/4 c fresh strawberries, quartered
1 stick butter, melted
1 c cream of coconut
1 c self rising flour
1 c raw sugar (turbinado/demura)
1 tsp each cinnamon & nutmeg
1 Tbsp vanilla bean paste or vanilla extract
1 Tbsp white decorators sprinkles or reg. granulated sugar
1/2-3/4 c chopped nuts of your choice (optional)

Steps:

  • 1. Preheat oven to 350 degrees F. This is the size pan I used a 9X9 inch X 2" size.
  • 2. Melt Stick of butter in 9 X 9 size pan.
  • 3. Wash & quarter strawberries, and place in a large bowl.
  • 4. Drain juice from peaches into a large measuring cup. Should have about 1 cup. Then add the peaches to the same bowl as the strawberries.
  • 5. Arrange peaches and strawberries in square pan on top of melted butter, but do not stir.
  • 6. Add self rising flour to a large bowl.
  • 7. Then add the turbinado sugar,nutmeg & cinnamon.
  • 8. Stir with a spoon to blend.
  • 9. Add 1 cup of cream of coconut to reserved peach liquid.
  • 10. Stir in 1 tablespoon of Vanilla Bean Paste OR Vanilla Extract, then stir to blend in milk & peach syrup till blended together, then add to flour mixture & stir to blend.
  • 11. Now carefully pour mixture evenly on top of fruit mixture.
  • 12. Sprinkle top of batter with decorator sugar crystals or granulated sugar, then add nuts also if using.
  • 13. Bake in Preheated 350 degree F. oven for 45 to 50 minutes or until top is golden brown and filling is hot and bubbly.
  • 14. Serve while warm with your favorite ice Cream or whipped topping.
  • 15. VANILLA BEAN PASTE- Is made by infusing vanilla beans into a thick sweet syrup, which is made with sugar, water, and some type of thickner which is usually natural. The vanilla beans are scraped into a paste, so you get all of the vanilla bean specks in what ever you are baking. With this product you do not need to scrape the beans into your custard or ice cream if you are making a homemade version. I love the product and got it at a great buy from Amazon.

  • To prepare the biscuit topping, combine flour, 2 tablespoons sugar, baking powder and salt. Add butter, working with your fingers until mixture resembles coarse meal. Stir in buttermilk. Drop dough by tablespoons over strawberry mixture. Sprinkle with remaining sugar.
