CAKE BALLS
This recipe is very versatile and heavily addictive. You can mix and match cake and icing flavors as well as the chocolate coatings. The variations are unlimited, and they can be nicely packaged and given as gifts.

Steps:
- Prepare the cake mix according to package directions using any of the recommended pan sizes. When cake is done, crumble while warm into a large bowl, and stir in the frosting until well blended.
- Melt chocolate coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.
- Use a melon baller or small scoop to form balls of the chocolate cake mixture. Dip the balls in chocolate using a toothpick or fork to hold them. Place on waxed paper to set.

STRAWBERRY CAKE BALLS
The perfect pink sweet little treats for a girls birthday party, a baby shower, or a romantic celebration! Made easy with a prepared pink cake mix and a tub of cream cheese frosting (or you can make your own). Yum! Adapted from How Sweet It Is.

Steps:
- Prepare cake batter and bake as directed. I often use a 9 x 13 cake pan as I find this is easiest.
- Once cake has cooled, scoop it out of the cake pan and into the bowl of an electric mixer.
- Stir together the strawberries and kirsch or jam (if using).
- Add the frosting and the strawberries mixture to the crumbled cake; mix on low to medium speed until a pink dough forms. This can also be done by hand, but may not be mixed as well and will take longer.
- Cover with cling wrap and refrigerate for at least 2 hours, or overnight.
- Roll into @ 1 inch balls and place on parchment paper laying on a sheet pan. Freeze the balls for at least 1 hour.
- Right before removing cake balls from freezer, melt chocolate (if in the microwave, melt in 30 second increments until melted completely).
- Using a fork, dip balls in chocolate and gently flip it around, just until coated. Lift it out with the fork, allowing any excess chocolate to drip off. Decorate as desired, refrigerating immediately after for at least a few minutes.
- We like these best chilled, but they can also be kept at room temperature.

STRAWBERRY CAKE POPS
These melt in your mouth strawberry cake box are made with moist strawberry cake mix, cream cheese frosting and lots of melted white candy melts.

- Preheat the oven to 350 degrees F.
- In a bowl, combine the eggs, oil and water. Whisk together to combine.
- Pour the strawberry cake mix into the wet ingredients and mix together until fully combined.
- Transfer to a greased baking pan and bake at 350 degrees F for 28-31 minutes or until a toothpick inserted down the center comes out clean. Add an additional 3-5 minutes of baking time if using dark or coated pans. Follow the instructions on the cake mix box.
- Remove the cake from the oven and allow to cool completely.
- In a bowl, combine the cream cheese, powdered sugar, vanilla extract and heavy cream. Whisk together until fully combined.
- Combine the strawberry cake with the cream cheese frosting, breaking up the cake into smaller pieces as you mix.
- Use a cookie scoop with a measurement of 1 tbsp and scoop out pieces of cake.
- Roll the cake into a ball using your hands and transfer to a parchment paper lined baking sheet.
- Transfer the strawberry cake balls to the freezer for 30 minutes.
- Place the white candy melts in a microwave safe bowl and microwave in 30 second intervals until fully melted.
- Dip the lollipop stick into the melted candy melts first, then intert into a cake ball.
- Dip the cake ball into the melted candy melts to coat completely. Allow the excess chocolate to drip off.
- Immediately top with sprinkles.
- Poke small holes into a box (I'm using a cardboard diaper box but any box will work) and place the cake pops upright on the box to dry.
- Once the cake pops have completely dried, serve and enjoy.

- Follow instruction on the cake box to make the cake. Let cake completely cool down after baking. You can set it in the refrigerator to cool it down for 10-15 minutes.
- Break apart the freeze dried strawberries, so they're in small pieces. They will crumble easily. Set aside.
- Crumble the cake with your hands into a large bowl. Make sure not to leave any chunks. If some of the cake on the bottom and sides, are not soft then don't use this in the crumbs.
