Fresh green beans combined with a tangy garlic-butter sauce and topped with crisp bacon makes this Arkansas Green Beans recipe an unforgettable side dish!

Provided by Chellie Schmitz

Categories     Side Dish

Time 35m

Number Of Ingredients 7

1 ½ pound fresh green beans (ends trimmed)
6-8 slices bacon (cooked (not crispy) and chopped.)
¼ cup butter (melted)
2 tablespoons brown sugar
1 teaspoon soy sauce
2 garlic cloves (pressed)
Salt and pepper to taste (this will vary as bacon and soy sauce are salty)

Steps:

  • Preheat oven to 350.
  • Lay strips of bacon on a rimmed baking sheet, bake in the oven for 15-20 minutes until cooked, but not crispy.
  • After cooking, transfer each piece to a plate lined with paper towel to absorb extra grease. Once cooled enough to handle, chop into pieces.
  • Bring a large pot of water to a boil.
  • Prepare an ice bath by placing 2 cups of ice cubes in a bowl, add very cold water, set aside.
  • Add the green beans to the boiling water and cook for 3 minutes.
  • Drain the beans and immediately put them in the ice bath to stop the cooking.
  • Place melted butter, sugar, soy sauce, and pressed garlic into a measuring cup or small bowl. Stir until combined.
  • Place the blanched green beans in a 9x13 baking dish.
  • Pour the sauce over and toss to coat the beans well.
  • Add the bacon over the top. Bake for 20-30 minutes. Serve immediately.

ARKANSAS GREEN BEANS RECIPE - (4.4/5)

Arkansas Green Beans Recipe - (4.4/5) image

Provided by msippigrl

Number Of Ingredients 7

5 (15 to 16-ounce) cans cut green beans, rinsed and drained well
10 to12 slices bacon, cooked until done but still chewy, then drained on paper towels and chopped
1/2 stick (1/4-cup) butter, melted
2/3 cup dark brown sugar, packed
7 teaspoons soy sauce
1 teaspoon garlic powder
Scant 1/2 teaspoon black pepper

Steps:

  • Preheat oven to 350°F. In a small microwave bowl, melt the butter; stir in the brown sugar, soy sauce, garlic powder, and black pepper. (I also added about 1/4 teaspoon salt since my soy sauce was Lite). Set aside. Place the well-drained green beans in a 13x9-inch baking pan. Scatter the cooked bacon pieces over the top of the beans. Drizzle the brown sugar mixture over the bacon and beans. Bake uncovered for 40 to 45 minutes. Serve hot. (There will be liquid in the bottom of the pan because of the butter, and moisture from the beans. I drained it out before serving).

Number Of Ingredients 6

◾5 (15-ounce) cans green beans, drained (note: you can substitute a similar amount of frozen green beans, about 4 (12-ounce) bags, thawed, or you can use fresh green beans, too)

◾1/4 cup butter, melted
◾7 teaspoons soy sauce
◾1 1/2 teaspoons garlic powder

Bake uncovered at 350 degrees for 40 minutes. Remove from oven and serve.
